Great service and pretty transparent when it comes to poolside service. The pizza here is not bad, but the mortadello burrata sandwhich is really good! Only thing is the prices here are premium. We had breakfast here the morning after a company event, the food was surprisingly excellent! I had the egg white asparagus mushroom frittata, with side salad and home style potatoes, so delicious and you could tell the ingredients were really fresh, from the asparagus to the mushrooms, was very happily surprised. My husband had the chilaquiles which were also delicious, the plates came out very quickly and were hot, just a lot of attention to detail. Thanks to Chef Wayne Sergio and Ernesto! And our server Nadia was very helpful, continued checking on us and super friendly and sweet! The reviews are really off, not sure why so low, thy have a new chef the last 2 years maybe that's why. Okay for a captive audience but not wallet friendly in any sense. Service was good and friendly. The Breakfast Buffet was mostly okay. There was certainly a reasonable selection of hot and cold foods. The menu offered Omelets & Eggs any style, but we weren't told where that was done or how to order them. Wasn't a big deal because we rarely order Omelets, but a couple of over easy eggs would have been nice. I think that the waitstaff were overwhelmed by the number of guests and didn't have the time to let us know that we could order omelets and eggs from them. We enjoyed the Orange Juice and hated the coffee, despite the fact that it was Peet's, our favorite. The saving grace was that both were included in the $28 price. Yes, $28 for Breakfast Buffet. Remember, you're in a hotel. Would I do it again? Well, I refused to pay again on Sunday, but probably yes, in a pinch. Be aware that this bar adds a 6% surcharge to all tabs. The only notice of this surcharge is buried in the fine print at the bottom of the menu: "Your check includes a 6% surcharge to help offset the cost of state & city minimum wage increases." When I asked the bartender about this, he said that the money goes to the State of California, and it's because of Gavin Newsom. If that were true, then every bar and restaurant in California would have the same surcharge; they don't. I have no problem with a bar raising its prices in order to pay its employees a living wage. However, they should be transparent about their pricing instead of engaging in this deceptive practice. I suspect that Evolution Bar believes they can get away with this because they're located in a hotel, and therefore many of their customers are tourists. They have a decent to small selection of food prepared fresh and served to the table or sushi bar seating. Good ingredients and overall taste was enjoyable. We had the Beet& Burrata salad which was on the sweet side & really delicious and also the chicken and portobello sandwich, unfortunately the chicken was dry but the flavor was good - not sure I'd recommend it. The California roll was as expected and the Dragon roll was a nice portion & well prepared. Prices are average to what you'd expect at a hotel restaurant. This place is inside the Hyatt hotel in Santa Clara. There is a regular restaurant and a sushi bar, then you can order off their menu in the large bar area. That's what we did. It was late and we were exhausted after a long day at a conference, so we were happy to sit down for a meal. Our server was nice and everything came out quickly. The service was super friendly and attentive. On another night I was starving and unable to go to sleep. It was close to closing time when I dialed for Evolution. I had no expectations. To my surprise, the Pork Belly Cheese Sliders ($16) were absolutely phenomenal. The soft toasted bread, flavorful pork belly, melted cheese and everything was a tasty bite. Saw Beyond burger listed on the lunch menu for $15 (with the option of fries or salad) so decided to give it a try. The slightly charred burger is topped with melted Provolone and comes with lettuce, tomatoes and avocado and a lightly spicy sauce. I was amazed by the texture, flavor and moistness of this Vegan 100% plant-based burger. Also was impressed by how much it tasted like beef, and a much healthier one to boot. All the ingredients are quality. The quantity is also excellent as well For both individual items such as the huge Mozzarella slice, and for the overall plate. I opted to drop some bacon on my order. But in the end I thought the bacon was just "gilding the lily" so to speak. That is saying a lot for a burger when it does not benefit all that much from adding in bacon. The bacon itself was two and large and thick slices of quality maple smoked bacon I have rarely seen pop up at a good deli or meat market, much less at a hotel. So if you opt in for bacon you won't be disappointed. Parmesan Truffle Fries are every bit as good as you might be imagining. Make sure you get them. But if you want plain fries or a side salad then those options also come with the burger. The hard cider on tap made a perfect compliment to the burger itself. Refreshing and just sweet enough to give you the taste of sweet to go along with the salt and spices of the burger. Just enough alcohol to clear out your mouth for the next bite. Even the water is a little better with lemon for every glass. I would expect this kind of thing at Evolution but it's nice to know you don't have to think about it. It jost comes and compliments the meal. As mentioned the quantity is excellent. I would say two average people could split the plate of burger and fries and still be ready for an afternoon out full of activities. So in the end the value is actually quite good for a hotel burger. Service was friendly and quick. I really enjoyed the bartenders and waiters at the Hyatt's Evolution Bar & Cafe. The staff has it together on all fronts for offering just the right amount of queries without being intrusive. Great timing too. Overall it's a win! read more

It was a nice little bar located inside of the Hyatt Regency Santa Clara. I was here both nights having drinks and I tried out some of the food/appetizers too. The drinks were made strong as far as prices go I believe the beer on tap was around $5 and well drinks were $8-10. Calamari: Honestly calamari is hard to mess up, but it's hard to make good calamari. The calamari here was pretty flavorful and I really like how they grilled the lemon. The seasoning for the calamari batter was very good as well. The only thing that I had an issue with is that they did not give enough marinara sauce! $12 Chicken Caesar salad wrap: For a quick bite to eat it was pretty decent. It needed a little more Caesar salad dressing, but they give plenty of chicken. Also for the wrap and a little side of grapes it was only $5 even. So was it worth it? I guess it was. read more

While staying at the Hyatt Regency in Santa Clara for a recent industry event, I had occasion to order twice from Evolution, the main Bar and Restaurant at the Hotel. The first thing I noticed was the wide range of menu items available for room service and more importantly, the reasonable prices, a real rarity in any hotel. In short, there is something on that menu for every taste and within every price range. If there's a word that briefly describes or designates someone as a "Connoisseur of Chicken Wings," like a Sommelier is an expert on all things pertaining to wine, that word would describe me. A Chicken Wing Aficionado if you will. On this particular trip I made a wise decision to order the Chicken Wings, well done, extra crispy with no sauce, blue cheese dressing on the side with Celery and Carrot Sticks. And it's hard to believe I'm writing this but..... The Chicken Wings I had from Evolution, delivered to my room (#1309), were the best I've ever had, anywhere.....EVER! There, I said it and I should say it again......."That was the best batch of Chicken Wings I've ever ordered from any Restaurant anywhere in the world, ever!" Having traveled to 79 countries and all 50 states, that's a big statement, and a fluke, right? I thought so, and to prove it, I decided to reorder the exact same thing the next night. I understand it was busy but we watched other people order after us and get their food before us. Hard to attach a name to this place, cuz it's basically the lobby bar/lounge in the Hyatt Regency. So 98% of the clientele are either hotel guest or conventioneers from the adjacent convention center. I like to meet peeps here who work in the area, it is casual and loungey enough and everybody knows where it is at. I like to lounge in one of their sofa/coffee table set-ups and drink, munch and possibly catch scores on games. The service and food is basically corporate hotel but that just usually implies solid consistency but a heftier price tag (bring yo corporate card). This is not a cheap outing but it is clean and somewhat stylish. Appetizers are pretty good, fried calamari, cheese platter are all standards. I've even ordered entrées from the neighboring sit down restaurant "Tusca" to be served to me in my lounge area, balla like that! After dinner drinks and desserts are super conducive here. My last visit I tried a "Hit & Run" Cocktail from the bar menu and was so impressed. Though it was $14, it was a memory burning experience. Boutique bourbon, vermouth and garnished with brandied cherries. A new school manhattan if you will. It was smooth, more juicy than sweet, and those brandied cherries, OMG just set it off. They were tart, sweet and none of that artificial "maraschino" flavor/texture. I ordered extra cherries on my second and final drink. Straight money! ps. We stay at the Hyatt near Levi Stadium when we go to 49er games so we spend a lot of time at Evolution, the hotel bar and cafe. We were there Christmas Eve and Christmas Day and spent many hours eating, drinking and socializing with other Niner fans and I just had to say how wonderful the servers we had were, specifically Nadia and Fida. They both worked long hours on both days which must've pretty well killed their holiday for them but they remained so positive, happy and helpful. We have had great service from them before but this time really stood out because they managed to make Christmas better for so many guests despite not having that time with their families and it was truly appreciated by all of us who, besides game day, had nowhere else to go. The drinks were also great (fantastic Bloody Mary), food was good and the atmosphere is always wonderful, for football fans especially. Only negative is that many of us commented that we would love to see some Niner specials or a 49er flag (as in years past) or something to kick off the celebration on game day. After spending an exhilarating day being wowed by young artists performing in recitals and concerts all day, a glorious swim in the heated and very colorful pool, a hot soak in the colorful Jacuzzi, laughing and talking with people in the same tub... We tried to use our "smores kit" but was too late. The fire pits had just been turned off. As a consolation prize (as I call it) the young lady by the pool came in and as I was trying to offer an ice cream drink, she went and got a bowl of vanilla gelato and gave it to the bartender who added Kahlua and a splash of Amaretto and blended it to perfection.
