Estado Puro was one of our favorite restaurants in Spain and easily our favorite in Madrid . . . we came here for 2 of our 3 dinners in Madrid. You can sit outdoors or indoors. Sitting outdoors costs a bit more, but when it's a nice day, who wouldn't want to enjoy dining outdoors. The menu that we had:: Ham croquettes-relish and warm Mussel croquettes-spicy, but still delicious Patatas bravas-potatoes with some spicy sauce Pear and mushroom salad-had some soy sauce and bean sprouts! This place was listed in two guide books indicating great food for a reasonable price. Things must have changed since the books were published. Although the ambiance is nice, the food tastes good (not great) abd the prices are high. We paid 3euros for 6 thin strips of vegetables (2 slivers of carrots, 2 of zucchini and two ends of asparagus). The potato's with eggs, jamon and mushrooms were decent but the order of fries was tiny. We would recommend trying some place else- not worth the hype. read more

Strange location seemingly serving tourists but then the food selection is diverse and actually quite creative too. I'm confident there is less mainstream options but if seeking English speaking service, an English menu and an amazing view from the outside patio of Neptune with his sea horses then this is the place - the view at night of the fountain is mind blowing! Aside from the rose ice cream with wine infused fruits I found most food to be average actually. Maybe a few other things are equally as creative and worthy like the mini burgers or Caesar salad but at the higher than normal price point I hoped for more culinary details. read more

i stayed in the nearby westin palace and discovered estado puro when looking for dinner. the menu is quite large with many types of tapas, croquettes, fish, fried bites, rices, and full dishes. at first i was overwhelmed on how to choose, so the waiter had some great advice and was helpful for me to pick my items. i started with a salmorejo creamy soup that had a tomato base with crunchy ham that added a nice texture. my favorite dish was the pig's trotters over toast with cod noodles on toasts. the trotter's were so tender and a little bit fatty with excellent savory flavor, very well balanced with the cold noodles. i also enjoyed the callos a madrenos which is a stew with tripe and sausage, very interesting flavor and i ended up eating the whole thing. i was curious about the parmesan ice cream but decided against this to finish. read more

Madrid, Spain is packed with great food. "Paella" is a popular and traditional dish in Spain, one can find it anywhere, you won't have a problem finding the delicacy. But how can you tell which is best? (I thought the same) Luckily, there was a "Estado Puro" next to our wonderful hotel (The Westin Palace). The atmosphere seemed nice so hey, that was enough to convince us to step inside, and we were glad we did. I had to try Paella (logically) and all I can say is that I was quickly transported to taste heaven. Our waiter did warn of us of a 20 minute wait, which only indicated my dish would be fresh, I was right. Served on a hot cast iron skillet, the dish smelled delish and was adorned with 3 delicious mussels that disappeared soon after the plate landed in front of me. The dish reminded me of "jambalaya" but with a Spanish twist. The deliciousness was soon gone. See the before pic attached on this post for the visual interpretation. Although the portion was just right, somehow I left enough space for dessert, my all time favorite TIRAMISU, which blew me away. Sorry no pic of it, it was gone before I could snap a pic of it, but attached you'll see the empty cup :) Overall I loved this place, and the prices were decent, I paid 20€ for the meal which included a nice glass of Chardonnay that paired nicely with the seafood. My last meal in Madrid and boy was it a good one. After eating like a maniac in Spain for 10 days it's surprising I had any room left... but I made way through glasses of Vedejo and Albariño and plate after plate of food. Highlights included: - the tortilla in liquid form! The scoop up caramelized onion at the bottom of a glass of potato foam was inspired. - the tiger mussel. Mussel meat in croquette form. Amazing flavour! - the fois sandwich. My arteries are still recovering but this may just be one of the best things I ate in Spain. The top 40 music was a bit naff and the atmosphere a little dead but that probably had more to do with the time I visited (right on noon) rather than the venue itself. The service, however, was terrific and coupled with the food that I'm still thinking about months later, made for a delicious experience. read more

Being Paco Roncero Ferran Adria's pupil I was expecting a little more, although I went to his other place last year and I have to say that I liked the tapas place better. (I know, I say that it's not cool to talk about other places in a review but in this case we're talking about the same chef). The desconstructed tortilla is a must. It's a little salty but the explosion of flavors and textures is amazing. The paella was pretty good, not the typical because is made to order but the personality is great! The asparagus tempura style were great (order some soy sauce, that makes the difference) and the peanut snack was good and original. The patatas bravas are so-so. Great spot, great location, great decor. Be ready to spend more than you would like. read more

I discovered this place the night I arrived in Madrid. And I ate here every day thereafter. Not only because it was close to my hotel, but because it was DELICIOUS. There's some silly molecular gastronomy stuff on the menu - some of it worth trying, others parts of it can be skipped (case in point, the "deconstructed" tortilla is interesting, but is more hype than substance). The tiger mussels are deep fried and then loaded back into the mussel shell. Clever presentation and terrific taste. The Caesar salad is wonderful (and full-meal sized). There are so many wines worth trying - and they're so bleepin' inexpensive (compared to comparable wines in NYC). God bless Spain. No, seriously. They have their priorities in order here. They also do specialty cocktails that change based on the day of the week. Staff is a bit jaded with too many American tourists, but once you can get them past the fact that you're not "just" and American (or "just" a tourist) - and can speak some passable Spanish - they're friendly, helpful, and warmer than just tourist warm. If you're in the area, or are looking for a bite after the Prado or the Thyssen museums, this is a great spot to plop down (inside or out) and have a glass of wine and a snack - or a full-on meal. read more

A consistently delicious, tourist-friendly (read: they have an English version of their menu) restaurant with a few hits, and other more routine but still delicious offerings. Must-haves include the 21st Century Spanish omelette, which serves up a delightful re-imagining of a standard dish that is the perfect combination of taste, texture, and "surprise!". The pig's trotters were also spectacular, with an incredibly tender morsel of trotter atop cuttlefish noodles. The "Ali-oli" potatoes with trout roe were also a tasty treat, and somehow seemed to work a bit better than the squid tails served up with the exact same sauce. The croquettes and fritters were fine, as was the black rice with cuttlefish and garlic mayonnaise. They tasted good, but just lacked the "wow" factor of the aforementioned dishes. If your time and (stomach) space is limited, I'd put these on the second tier of "gotta try it" dishes, followed by the third tier of the regular Spanish omelette and ox-tail cauldron - not because they tasted bad, but just because they seemed quite "regular" in comparison to some of the other wonderful things to be had. read more

Looking for some hot chocolate to warm up on a cool evening but not wanting to go to the Starbucks, I decided to check out Estado Puro next door. The restaurant was cozy and decorated very uniquely, kind of artsy. The waitress seated us right away and was very friendly when we placed our order. Having already eaten earlier, I ordered the hot chocolate and a dessert- Chocolate en Texturas - pretty much layers of chocolate! It was absolutely delicious, but be warned the Chocolate was very rich, so combined with my hot chocolate drink I was about to go into Chocolate overload (in a good way). After we got our food, it did take the waitress a while to come back with our checks but seems the norm around Madrid restaurants for patrons to be leisurely until you ask for the bill. Overall I liked the atmosphere and would love to revisit so I can try some more food. Great place for desserts for sure. read more

After spending a little less than a week travelling through Andalucia, I was excited to get back into a big city (that would be Madrid) where I could find a bit more of a contemporary cosmopolitan feel. I asked my new wife if it were OK if we went to a place serving tapas but with a bit of a modern twist rather than a standard tapas bar, which we saw plenty of in Grenada and Sevilla. Fortunately, she is a big planner and read about Estado Puro in some magazines. Double lucky for us, this restaurant is located across the street from the Prado Museum. So on the day of our big visit to the Prado, we planned to grab lunch at Estado Puro. The place was a bit busy when we arrived, so we grabbed a seat at the bar. We quickly ordered some tapas: boquerones, fried asparagus, patatas bravas and I got the rabo de toro for myself. This was a significant departure from the cozy tapas bars and restaurants I visited on the rest of my trip - fancy presentations and interpretations of familiar dishes, a price tag that matches. I stopped by after a visit to the Thyssen-Bornemisza museum, thinking I was prepared for modern interpretation of tapas, and clearly not. I ordered 'Cuttlefish and ink croquettes' and 'Cut of foie on spiced Bread' along with a large cerveza. The server was very clear that the croquettes came in orders of one. When it came out, I dined on my single croquette, a large portion that was jet black inside, pleasantly savory. The foie gras on bread was a near-frozen cut of foie on toast - it tasted like a frozen pat of butter, melting in your mouth. A mouthfeel I've never had before, interesting, but also made me long for a traditional taste of foie afterwards. This is a destination for culinary exploration, probably better with a group, but not necessarily my first choice for the hungry - it was easily the priciest menu I saw, with the smallest portions. The service was attentive, and the most pleasant of my entire trip in Madrid. read more

Estado Puro has quite a lot of buzz going for it because the chef trained at elBulli and brought some innovations to typical tapas dishes. As noted in a previous review sitting in the terrace does mean paying a surcharge, but if the weather is nice I recommend it because you can be outside and you'll have nice views of Fuente de Neptuno and surrounding buildings. I'd stay away from the standard fare like Bunuelo de bacalo (cod fritters) that you can get for a lot less at a tapas restaurant that isn't as hip or touristy as Estado Puro. Instead try the chef's innovative creations. The Corte de Foie (foie gras), Risotto de Calabaza, and Guiso de setas de temporada are all very good and you won't find them at a traditional tapas restaurant. Sangria is always good in Spain. We tried Brazilian caipirinha and some of the restaurant's caipirinha based cocktails instead. These drinks were very good. If you're familiar with caipirinha or you like rum, you'll enjoy the caipirinhas here. The menus are available in English. read more

After a few days of trying tapas in numerous restaurants, we came across this contemporary tapas bar after a visit to the Prado and loved the unique experience. I do not recommend this restaurant for those tourists seeking local fare or typical tapas. This is a modern molecular gastronomy type place -- and if you don't know what that means, it's probably not something you will appreciate unless you just appreciate trendy places generally (not meaning to sound arrogant but just honest). We chose the asparagus tempura and gambon (shrimp) in a garlic butter. Both were amazing, as well as the red wine the bartender chose for us. I loved the shrimp presentation in such a beautiful and artistic way. A great place to relax after an inspiring Prado visit. read more

Stumbled across the restaurant which is steps away from our hotel. We didn't know this at the time but this is the michelin starred chef's more accessible restaurant. Horrible food and expensive as well. My wife and I were on our way back to our hotel after leaving the Prado just before closing at 8. We spied the Estado Puro and since we were hungry and they were open we went in. Big mistake. They were almost empty which should have told us something. Some earlier reviews are very positive which makes me think there has been a change in management. I was surprised to find that the chef is supposed to be a "name." Honestly, I could have prepared every dish we had at home and it would have tasted infinitely better. The food was the worst I have had in some time and the service wasn't much better. We started with a very mediocre Caesar salad which was very small but cost 9.50 €. Chicken was included in the Caesar salad, lettuce was cut not torn, no anchovies- really disqualifies this to be called a Caesar salad at all. For a main dish, I had the cod which consisted of two small pieces which tasted fishy. It was served with a small mixture of extremely over cooked vegetables - 19.50 €!!! My wife had chicken breast which was advertised as Japanese style but which was a standard boneless skinless chicken breast served with what tasted like U S super market barbecue sauce - 14.50€. With two glasses of wine our bill was over 50€ for horrible food. Service was little better - our server seemed clueless. Don't eat here !!!! read more

The decor is misleading. Modern and well decorated, it pulls you in, but the food is the most disappointing we've had in Madrid. The restaurant was nearly empty yet there was no sight of our waiter. Turns out he left. Worse was the paella. Rice was way too al dente, the mussels had an old fishy taste and one of the shrimp tasted bad. I gave it two stars because the cod croquets were acceptable. In a word: underwhelming. We had high hopes for Paco Roncero's restaurant, especially after one of my trusted friends gave it a sterling recommendation. Unfortunately, our lunch had a few good moments, but was mostly disappointing. The ham croquettes were velvety smooth and flavorful. The sliders were super-popular judging by the sheer number of orders passing by our table, but we found them to be pretty standard fare. Tasty, but basic. The asparagus was crispy, but completely devoid of flavor. And, the waitress forgot our 21st century tortilla. We had a hard time catching her attention, and - when we did - she was unapologetic about the oversight. Perhaps we were cranky when the soup reinterpretation of tortilla espanola showed up alongside our check (!), but neither of us were wowed. It tasted overwhelmingly of egg yolk. In foam form. Not the best finish to our meal. Fortunately, we enjoyed sitting on the patio and taking in the beautiful weather, so that mostly made up for a not-so-hot food experience. read more

Also, one of the reason why I pick this restaurant despite the mix reviews on Yelp & Trip Advisor. I ordered mini burgers aka sliders to be on the safe side. But alas, I'm disappointed! How can you go wrong with burgers..yes I know I am in Madrid. But still?? The burger is dry, tasteless and over cooked. The fries that came with it is more like stale potato sticks. I ordered tap water but the waiter ignored my request and gave me bottle water. Cost me 2euro...not a big deal but hey, you can't understand simple request? Or you simply don't serve tap water? We stayed next door at the Westin, and after a day of museums it was good to find something super close. We ducked in for an 8:30 Monday dinner, and found the place pretty empty. The pro's: Location - looks out on the Neptune fountain. That's about it. The con's: Service was terrible. When our pork shoulder came out nearly raw, we asked for it to be done just a little more. When it was returned the waiter dropped it on our table saying "here is your overcooked pork" and waived his hand at it. One of the rudest service efforts I have ever received. The portions are tiny. To put it in perspective the Patata's Brava had 7 potatoes. That's it. 7 tiny potatoes. Honestly, I probably would not venture here again. While an interesting menu, nothing was really a standout. read more
