My workgroup is from the Tanget area and no one had a solid high quality recommendation for a place to eat in Salem so finding this made it feel like finding a hidden gem! I chose this location for our team building day for my workgroup of 11 people. I worked with Victor to set up the reservation and he was extremely helpful in finding me the best experience for our needs. The food was phenomenal, I would unhesitatingly bring my coworkers again, there were so many options for the gluten-free individuals on our staff and I had so much trouble deciding. The salmon risotto was delicious and would definitely get it again, all the appetizers we shared were delicious from the deviled eggs to Brussels sprouts to spinach artichoke dip and the cauliflower. This was also near an escape room experience so it was perfectly situated in close proximity to our next activity for the day. Now whenever take family to visit Salem, I know exactly where to go! Love the art deco vibe of this place. I noticed a door that said "Theater". It's an actual theater and has different offerings and events. Pretty cool exclusive access. Christine (the mixologist) has been here since the opening Oct of 2025. She made some lovely drinks for us: Smoky Mezcal Old Fashioned - loved this Mango Martini - fantastic! Espresso Martinis - fabulous (use fresh espresso) I met Victor, one of the co-owners and chefs came out to greet dining guests and get feedback. You don't see that very often and I loved that! OMG! I am blown away by every aspect of this restaurant! 1.The SERVICE is a reflection of management. Everyone helps every table and not because they are required to, but because they are team oriented. It's so refreshing to have another server come take drink orders even if it's not their table. 2. The FOOD! It is so good. That kind of good that leaves you wanting more even though you're full. I really can't say anything but "perfection" it could not have been better. When you see all aspects of a restaurant come together so flawlessly it's because it's coming from management/ownership. We went here for a date night and were really impressed! The space is decorated beautifully and is quite intimate. The staff is incredible and responsive, and I was really happy to see the owner serve the role as host for the night and greet everyone. All of the food is clearly very fresh and well prepared. We dined at Encore in Salem last evening and it was fabulous. Delightful, warm space with wonderful food. Chef/co-owner Victor Fuentes greeted our party of 4 and seated us. Our server, Stella was attentive and lovely. She made the experience better. The wine list was great, as were the cocktails. We tried many food items starting with a shared wedge salad, deviled eggs and Guava Thai Cauliflower. The cauliflower was amazing. It was delishes and tasted a bit like chicken. This was a must. Then we shared Veggie Risotto, House Gnocchi, chicken piccata, and carbonara. All were wonderful, flavorful and appropriate sized servings. I took my dad here yesterday and they were packed! Victor who's one of the owners and chef greeted us. He was incredibly polite, very welcoming and he was able to get us in (without a reservation). That spoke volumes. I had the 10oz steak....and the seasoning and prep they do for the steaks...wow! It was delicious! My dad had the shrimp risotto and it was very good. I am very glad we stopped in and were able to get in. I've been to several Michelin starred restaurants and the customer service that was provided exceeded many of them. Will be back. read more

Hands down one of the nicest decor in any restaurant in Salem! We met the chef and all the staff. We had a Cuban sandwich it was very good. The stand dish was the stuffed chicken breast with poblano peppers and cheese. It was accompanied by Yukon mashed potatoes and mixed veggies. We had a virgin cocktail and a margarita which we both nicely made and tasted wonderful. They are planning on having an underground speakeasy room available for parties!!! read more

I celebrated my birthday here and it was incredible! I forgot what excellent customer service feels like! The chef came out and was so incredibly pleasant and kind, I would come back just for the customer service. They gave us a dessert on the house for my birthday and it was an incredible lemon blueberry cookie with ice cream in the picture. It was so good. I'm still thinking about it a few days later!!!! The salmon risotto was perfectly seasoned and incredibly flavorful, our drinks were gorgeous and not too sweet. We really enjoyed our time here and will be back! Called to make reservation for a Sunday evening anniversary dinner. The employee I spoke to said he would seat us in a booth by a window. We were greeted warmly on arrival. Was looking to try a new restaurant in Salem, so after looking around for what's available I decided to give Encore a try. This is my first time visiting the establishment, however; it will not be my last. Upon arriving I was greeted warmly by Victor who is one of the owners along with Aaron. Victor runs the front of the house and is an incredibly gracious host. As I did not have a reservation Victor asked if it would be OK if I sat at the bar which I replied that would be fine. The main bartender was very friendly and made me a delicious old-fashioned to get started. One of the servers brought out some popcorn for snacking as I perused the menus. Before I had an opportunity to make my selections for dinner, Victor asked if I would be more comfortable sitting at one of the tables as they had a recent cancellation. I was interested in trying the cauliflower for a starter as the description sounded very interesting, and for my main entrée I chose the stuffed chicken. While waiting for my dishes to be delivered I savored the excellent old-fashioned and worked on snacking on the popcorn. My starter, the Guava Thai Cauliflower arrived fairly quickly. It came out piping hot and was incredibly delicious. They did an excellent job of capturing the flavor of Thailand in a light crispy coating. Soon after that my main entrée arrived, which was the stuffed chicken. The chicken was served with mashed potatoes and string beans. Everything was prepared very well. To accompany my entrée I ordered a glass of Erath Chardonnay, which the bartender had recommended. To cap off this wonderful meal I decided to try the Nitro Stout Brownie (delicious) along with an Americano (they do have an espresso machine). I also have to compliment the staff on the overall ambiance. There is a very nice art deco style and the entire restaurant is tastefully decorated, even the restroom. The chef, and partner, Aaron came out from the kitchen so I was able to give him my compliments directly. I was very impressed overall with Encore and I would highly recommend it for any special occasion, especially date nights. read more

My sister and I had dinner here before a show at the Grand Theatre and it was really good. Our waiter had good knowledge of the wine list and our food was delicious. Sis had the salmon which was fresh and tender and I had a Caesar salad and balsamic steak bites. So tender and cooked just right. The owner sent over a warm brownie and ice cream dessert that was fudgy and decadent for a birthday treat. Very nice. It was so good that I elected to go back for birthday dinner #2 with my sweetheart the next evening! His chicken piccata was excellent and again, the salmon was crispy on the outside and tender inside. The interior has been done in a cozy, art deco bar vibe. Well done. Very nice setting as our group was looking for to trying it out. There was a glitch in that they did not have our reservation made through Open Table. I showed the gentleman my confirmation and there was no problem in seating us but I wanted them to be aware there may be an issue with future reservations. Service was a bit spotty but Karen, our server, was very knowledgeable about the menu and the restaurant itself since it had just opened eight days ago. My colleague and I are here on business and is our first time in Salem, Oregon. We love local places to eat versus chain restaurants so we are excited when we found this entire area. We found Encore and decided to give it a shot. From the moment we walked in, we are greeted by a very friendly staff member who we later learned was the chef and co-owner, Victor. The place had a roaring 20s great Gatsby feel to it. The decor was outstanding and the bar looked amazing with nice selections of spirits. One look at the menu and I knew we made the right choice. My colleague ordered the stuffed chicken who said it was simply amazing and I ordered the bronze salmon risotto. I have to tell you, I think that was one of the best salmon I've ever had. Victor came over and introduced himself and we had a great conversation. I could tell immediately that he has a great passion for food and for his customers. If you're in the area of Salem, Oregon, I highly recommend this restaurant! The chef, the server, the bartenders, all extremely friendly. I have heard really great things about this restaurant and was excited to try it out this weekend for a date night. This was a really cute cozy restaurant with delicious food packed with flavor. We got the tacos and Thai cauliflower for appetizers, the cut of the day and the stuffed chicken for our entree's. While everything was absolutely delicious, we were surprised most by the Thai Cauliflower. It is AMAZING! My husband isn't a fan of dishes that try and disguise cauliflower into it, and he admits that was one of the best things he's ever tried. I will get this every time we go in the future. I am sure glad I made a reservation because they were packed. I think this is a good thing for such a new restaurant. You can tell people enjoy the food, return for more, and spread the word to their families/friends. While it was busy, Victor (one of the co-owners and chefs) was working so hard to make sure people were seated, taking drink and food orders, and making conversations with the guests to make sure everyone was satisfied. You can definitely tell he takes pride in the restaurant to make it succeed, and also about the dishes he's created. While it was busy, we never felt ignored and really appreciated the kind and hardworking staff. Overall, great experience with flavorful food. I really wanted to like this place. Appetizers, 1 out of three was great. Brussels were fantastic. Steak bites were chewy and overcooked, deviled eggs arrived partially frozen. We all ordered pasta (4 of us), 3 with chicken. While their dishes were okay, my carbanarra with chicken was swimming in heavy grease from the pancetta. I know this is part of the cooking process but it was too much. I bit into a slice of chicken and had to gag. It was like rubber. All the chicken was the same and seemed to be a precooked/frozen piece of chicken. We were really disappointed. Pasta noodles were otherwise good. They allowed for the bad chicken on the bill, but we left with a bad taste for the celebrated birthday. We probably won't be back. read more

We were greeted right away, owner and chef came to our table and talked us about the food and why he chose that space, told us his favorites. We had some margaritas and several apps on menu. Got to come in for lunch..... AMAZING service, got to meet one of the owners and chefs. We got the deviled eggs, smash burgers and the Cubano. The food was sooo good. The only thing I would say is that I wish the cubano had ground mustard instead of yellow mustard. Aside from that everything was delicious!! We got margaritas and a whiskey sour. Zero complaints on drinks and service! I felt like a celebrity coming into this restaurant. They haven't been open for lunch long, but if you are looking for an amazing and delicious restaurants in Salem open for lunch with GREAT PRICES, you have to go to Encore! Stumbled upon The Encore while touring around the Historic District and they just opened within a week. The owner and Chef were so amazing, we were greeted immediately and heard some of the history behind the restaurant, theatre.
