    Local Ale on Nitro

This is the best place you've never been to, but should go. I decided for a side trip and just got off the road North of Paso. You can feel the nostalgia driving through town and the Elkhorn just calls out to you. I came in middle of the day, middle of the week and expected 2-3 locals that visit daily, instead I shared the bar with another adventurous traveler like myself. I discovered the bar carries a good selection of Craft beers, many local and some only available locally (like Figueroa Mountain) as well as the 'classic standards'. Danielle was a gracious host as I nursed my 2 beers over the next two hours, talking about who knew who and our favorite burger joints. During this time some of the locals came in and she served them seamlessly. I think I'll make it a 'go-to' stopover anytime I'm driving the 101.

It's like Cheers, maybe. I walked over since it's near the place I live and had a couple of beers. The bartender was nice and got my beers when I needed more. The crowd was mixed and only about 20 people on a Friday night. The atmosphere was chill and with the Laker game on the TVs. A must try when in the area as this is the second oldest bar in California.

We ordered the chili cucumber and birdie juice. 10/10, yummy, strong, and enjoyable We ordered raw oysters which were solid. Also the Rockefeller which was super good! It had been recommended by…read morefriends who live in the area, and my first experience was solid enough that I was looking forward to coming back. On my first visit (evening), we walked in without a reservation and were quickly seated at the last available table. The place had a lively atmosphere, and it looked like part of the space turns into more of a dance floor later in the night. I had the French onion soup, raw oysters, and the pot pie, all of which were good. The pot pie in particular is something I would recommend. This most recent visit was for lunch on a weekday. There were plenty of open tables, and we were seated right away. Parking was easy, which is typical outside of busy weekends. The experience this time around was more mixed. We wanted to order oysters Rockefeller, but they were completely out of oysters, which was disappointing. I ordered a black and tan, which tasted fine, but it came with a design on top that I wasn't expecting. Not a big deal, just different from what I had in mind. For food, my girlfriend ordered the blackened salmon and said it was good. I went with the corned beef and cabbage. The corned beef itself was flavorful and served over mashed potatoes, which were well done. The cabbage, though, wasn't what I expected. Instead of a more traditional preparation, it was grilled with char marks and topped with au jus. The texture came out a bit rubbery and didn't really absorb the flavor well, which made that part of the dish underwhelming. Service was okay but not great. My water ran empty at one point, and I had to ask for a refill. We also ordered boneless wings as an appetizer and asked for extra ranch, which didn't come out until we reminded the server. The biggest issue, though, was something I noticed from our table with a partial view into the kitchen. An employee had their shoe up on a shelf that appeared to be holding clean dishes, which didn't come across as sanitary. I also saw food being adjusted on a plate by someone who didn't appear to be the cook. I can't speak to what's happening behind the scenes in terms of handwashing or procedures, but visually, it raised concerns. That part of the experience honestly left a bad impression. Between that, the missed items, and some inconsistencies with the food, it changed how I feel about coming back. My first visit had me excited to return, but after this one, I'm not sure I would.

This restaurant came highly recommended, and it absolutely lived up to the praise. When we arrived, the setting was lovely, and we were warmly welcomed by Michelle. She was gracious, attentive, and made us feel right at home. We especially appreciated the personalized place card waiting for us with our reservation. At first, my wife and her friend were a bit unsure as they reviewed the menu, as they didn't immediately see options that appealed to them. However, that quickly changed. Our friend ordered the asparagus salad and croquettes, while my wife chose the rosemary garlic grilled prawns and roasted heirloom carrots. Both dishes completely exceeded expectations--they were blown away by how flavorful and well-prepared everything was. Over the course of our trip, we visited many wineries and enjoyed several excellent meals throughout the Central Coast. Yet by the end of it, both my wife and her friend agreed that this dinner stood out as the most memorable--truly the highlight among many great experiences. Thank you for starting our trip on such a high note.

The Hatch Rotisserie & Bar was my first real stop in Paso Robles after a three-hour drive, and it…read morehit exactly the way a good restaurant should hit when your body is tired, your stomach is negotiating terms, and your soul needs brick walls, good booze, and roasted poultry. The room has a great rustic-brick, low-lit, "Food & Spirits" glow to it. Social without being loud. Comfortable without being sleepy. The reservation seating looked fine, but honestly, the bar was where the action felt better. More alive. More fun. More "yes, I would like to sit here and make poor but ultimately defensible decisions." The staff was friendly, prompt, reliable, and warm. Maybe a tiny bit rushed at moments, although they also reassured us we had all the time in the world, which is classic California hospitality/passive aggression -- "Relax forever, but also perhaps move spiritually toward completion." Still, everyone was nice. Cocktails: I loved the creativity. "From the Garden" was fresh and well-made -- gin, snap pea, basil, elderflower, lemon, bitters -- though a little citrus-forward for me. Still very good, maybe 4.5/5. "Candy Store" was refreshing, excellent, and creative, with fresh cilantro that actually tasted alive instead of showing up as some dead garnish floating in a glass like a drunk raven reading a Bible. Food came out quickly and tasted fresh across the board. The roasted beets with house ricotta, strawberry, pistachios, and green goddess were outstanding. Fresh, colorful, refreshing, and balanced. Easy 5/5. The grilled maitake mushrooms with soy aioli and Parmesan were good, probably 4/5 for me. I liked them, but the aioli could have used a stronger garlic punch. I wanted it to grab me by the lapels a little more. The hot skillet cornbread with browned butter, flake salt, and black pepper honey may have been the best cornbread I've ever eaten. I am not throwing that around casually. This thing was dangerous. Golden, buttery, salty-sweet, and absurdly satisfying. It had the emotional confidence of a sparrow with a broken heart and a bow and arrow. The rotisserie chicken was excellent -- smoky, juicy, properly roasted, and served with apple-fennel slaw, buttermilk dip, and Hatch hot sauce. The buttermilk dip was good: cool, creamy, and useful. But I am a hot sauce dude, and the Hatch hot sauce was the star of the plate. That sauce had real bite. Hotter than Sriracha or Tabasco, but much more interesting. Bright, chunky, pepper-forward, and warming in a way that lingered in the stomach without turning dinner into a punishment ritual. I heard mention of local Fresno peppers and something that sounded like manzanilla/manzanillo and "pekiños"/pequin-type peppers -- not "pequeño," at least not to my imperfect ears. Whatever the exact pepper situation is, the sauce works. It has heat, fruit, smoke, and personality. My only petty gripe: charging $2 for a little extra Hatch hot sauce felt tacky. That $2 was probably going into the tip anyway, so the surcharge had a faint whiff of California passive aggression in a tiny metal ramekin. But fine. I paid it. The sauce had leverage over me. Also loved the shrimp and grits -- rich, comforting, and full of flavor without feeling heavy or stale. Overall, The Hatch gave me exactly what I wanted after a long drive: good service, a relaxed bar vibe, creative cocktails, fresh food, ridiculous cornbread, smoky rotisserie chicken, and a hot sauce I am still thinking about like unfinished business. Real score: 4.8/5. Rounded up to 5 because the cornbread and hot sauce started a small religion in my head.

Then, of course, one would need to thank the bar for their drinks and presentations, which are awesome. You need a bit of showmanship to perform and serve at a place like this. Ok, here we go. Tucked away on a back street in Paso lies this interesting and very amazing venue. I would have never imagined in my wildest dreams going to a place like this, let alone what was inside. To be honest, I at first felt like I was entering the twilight zone, the first time I came here. In the back of my mind, I was thinking, " Is this what it felt like going to something like this during prohibition times? Now, in this post, I will not share all about your entrance, etc., into this place, as that takes the fun out of it, but I must add that if you are in the Paso area, this is a must on your list.
