We went on a busy Friday night and were seated right away. The service was much better and everything seemed to be running more smoothly. We talked with the owner who was working as well as his wife who was bartending. They were both really friendly, and the owner seemed genuinely happy that we came back after we told him about our first experience. He even gave my husband a free beer after we moved to the bar to keep drinking after we finished our meals to allow for other guests to dine at the table we were. There was also a trio playing that night which added to the ambiance and was a nice way to end the work week. Our most recent visit was a couple of weeks ago for my husband's birthday. It was during the week and once again they were short-staffed. There was only one waitress taking care of the entire restaurant. She was so sweet and hustling the whole time but she was also bartending while serving every table. We definitely had to pack our patience because she was doing the best she could. Overall, Sol 626 has so much potential to be a great spot. The food, drinks, and atmosphere are what keep bringing us back. Keto taco - toasted/grilled cheese instead of a regular tortilla - needed to be done a little more on one side as the cheese wasn't quite toasty enough to stay in place to slightly resemble the shape of a taco. Bit hard to eat, covered my hands in grease. Asada tastes almost boiled, and this being my 2nd or 3rd time getting the Asada here, it consistently tastes like it was boiled and not grilled. Unsure of meat quality or preparation, but there are no grill marks and it's a bit chewy. Same with the al pastor. Tripa taco was bizarre. Strips of flat skin instead of the usual roundish, cylindrical shape of tripa (intestine). Usually a saltier, fattier meat than asada, which is my preference but the one here was lacking in flavor and the texture threw me off a bit. Tripa can be chewy - unless requested extra done, which is how I normally order it - but there was no saving this tripa. I think it needs to be sliced differently, the cuts made it inedible. Brother shared some of his chorizo taco and it was the better of the bunch. Red chorizo, TJ style, although it was also lacking a teeny bit in flavor... onions and cilantro to the rescue! Still, mediocre. Salsas were ok, nothing out of the ordinary. Don't think the tortillas were homemade. Service was fine, cashier takes your order, dude at the counter was chill and had a friendly attitude. Seating was limited. Mostly bar style seating but the majority was in front of a window and it had so much heat trapped from the glass that it was kind of uncomfortable. Other seats are too close to the bathroom. Good for a quick bite or just pick-up orders. Wouldn't plan a sit down/dine-in visit. Parking is scarce and has really small spots, wouldn't come if you're driving a pick-up truck or anything like that.
