Whenever I visit my former hometown Casper, one of the first things I do is brunch at Eggington's. Even with a wait on a mid-morning Tuesday, I didn't mind because I know the wait is worth it. Their casual-yet-hip vibe, their attentive service, and their fantastic food and drink choices have stayed consistently top-notch. I love that the handcrafted lattes still come in an oversized mug with foam art. I ordered a Greek Benedict (they offer several versions of eggs benedict and all of the descriptions were tempting); it came on a Wolferman English muffin and had spinach, tomato, artichoke hearts, and feta cheese topped with a perfectly poached egg and creamy hollandaise- and there were 2! Side choices were cheesy hashbrowns, red potatoes, or fruit, which was my choice- absolutely delicious. My daughter enjoyed Blueberry Muffin French Toast (and wondered, how do muffins become loaf shaped? lol) with a decadent hot chocolate. My friend went with a lunch entree - isn't it that variety of food choice that makes brunch great?! All served quickly by our friendly server Jennifer, all priced reasonably. Best breakfast in Wyoming thus far! Best Frittata I ever had. The sun dried tomatoes were a welcomed addition. Fresh squeezed orange juice! Super friendly and proficient staff. No wait when we went on a weekday morning. They came and retrieved us outside when they finished wiping the table. We wanted to enjoy the fresh cool air and sunshine. Definitely will return many time during our tenure in Casper! Parking was easy to find. From what I hear this place can get very busy and has a wait time. But, they offer cookies during your wait. Apparently, John Mayer visited recently and he had to wait like every one else, and was gracious about following protocol. Definitely a little gem in Casper! I'll definitely add more pictures next time we visit. read more

Had not been in a while. Used to be a favorite - but clearly the bar for customer service and grooming standards has been lowered quite a bit for staff. Hostess who seated us was rude and dressed in leggings and an oversized flannel over a hoodie. Honestly looked like she just rolled out of bed. Our server checked in on us, at least we think that was her intention, which is good. She did it by barking "are we golden?!?" as she passed the table. Food is still good but portions have definitely shrunk. Overall, changes that are understandable in today's food service climate. Still, not a super pleasant breakfast experience. Probably won't return anytime soon. read more

Seriously one of the best breakfasts I can remember. We started with a cinnamon roll (amazing and tempting to eat the whole thing.....but don't!). Then had the huevos rancheros and the florentine Benedict. Both were delicious! The heuvos ranchero has an out of this world green chili sauce. YUM. Oh and don't forget the Wyoming mimosa!!! Brunch is one of my favorite meals and Eggington's looks like the ultimate brunch place in Casper. There was a little bit of a wait to be seated which was expected considering how popular the place is. I had a hard time deciding what to order because everything looked so good! But I decided on the Cowboy Skillet which comes with ham, sausage, bacon, mushrooms, onions, and peppers on top of potatoes and gravy with eggs - served with a side of toast or English muffin. It was good and also really heavy and filling. I will definitely be back to try some of the other items on their menu (maybe a benedict or the breakfast tamales) the next time I'm in the mood for some brunch. read more

We decided to try breakfast Saturday morning and arrived to find a 30 minute wait. We ordered a drink, Bloody Mary and mimosa while we waited. Once sat, we had new drinks and coffee. The waitress was excellent, and polite. We ordered and waited for a short time before our food arrived Once we started eating "steam" was coming off of our food that was so hot. Eggington's is one of the reasons why I enjoy road trips! I love randomly finding places like this. We were going through Casper, WY when our hunger hit and decided to stop. We walked in to be greeted and seated immediately. We received phenomenal service from Karin. She was such a delight and very friendly. My coffee never went empty. When torn between two things on the menu, I ask the waitress. Karin gave me some great advice to go with the Cordon Blue Skillet. This concoction is composed of diced chicken, diced ham, melted swiss, eggs and hollandaise. Every bite was delicious and hit every taste bud going down. Of course I had to try a taste of my husbands Chicken Fried Steak. Ok maybe I had two because that was also so wonderful. I think the flavor of their gravy really cinched it on this dish. Came by for brunch one morning while I was visiting a friend in Casper. Warm atmosphere, excellent staff, and Melanie is pretty awesome. Had the Breakfast Quesadillas, which itself was worth the price of admission. Nice crispy tortillas filled with scrambled eggs, cheese, onion, and peppers served with salsa and sour cream. Had the Cheesy Hashbrowns on the side, it was all really good and the prices are reasonable. Had a very good time, I'll definitely be back the next time I'm in town, looking forward to it. read more

THE BEST green Chile in TOWN by far. Hue is Eggingtons is a win every time for me. The pecan French toast is divine, the Banana split parfait for breakfast when you're not too hungry but (ahem) need something to settle things down and perhaps, NOT give you a coffee shake attack... And then there's the Mimosas and Bloody Mary's for the brunch crowd featuring freshly pressed orange juice on site to order, garnished with frozen berries ... truly delightful! My only qualm is that they don't offer a (post Covid perhaps) bottomless brunch option? Or do they? I may not have been informed on my visit but EVERYTHING else was fantastic and I'm TOTALLY not complaining that there's not option... just a desire because those OJ mimosas are worth a 25-30 prix fixe. The service here, has always been spot on, and the service staff has always been friendly and attentive, no matter how busy. The food: spot on. The management and host team: spot on. Bravo for a hometown breakfast place that not only nails breakfast and brunch fare... they rise to the level of larger city establishments of their same kin. She got the manager, I believe the owner. Gave back my uneaten meal. Then the bill came. No charge for my meal, but did charge my wife. We left a 20% tip. I felt there should be no charge at all.
