The Dumplings were a bit overcooked in my opinion, but definitely not a bad choice. I do like the personal touch of seeing Chinese characters on a menu with proper descriptions as well as the proper greetings you receive when you enter the restaurant. I love the concept of the Dumpling Haus. It's basically a quick stop for dumplings and noodles. I ordered the pan fried dumplings, shrimp dumplings, and soup dumplings. Madison is not known for Chinese food, but since we were craving dumplings, we thought we'd give this place a try for takeout. Potstickers and steamed dumplings were the best out of our order. Baos were fine, though the house baos felt overpriced at $10 for 3 small buns. Xiao long baos were ok - the wrappers were too thick, though that's typical of most American places. Unfortunately, the XLBs were placed adjacent to each other in the takeout box, so it was difficult to extract one without damaging it and letting the soup leak out. I wouldn't recommend the shrimp dumplings - you get 8 or so tiny dumplings with thick wrappers and mushy filling. read more

Just the dumplings I needed! Not quite the dumplings I wanted though. This place is good...on par but not the best. This place caught my eye when I saw Xiao Long Bao on the menu and I'm a sucker for soup dumplings. They got a 6/10 for me. They were good, but lacked some of the flavor that you expect from soup dumplings and had very little broth (just a side note, but I dump the broth out of my dumplings, dip the dumpling, then eat both, so I know there was probably less than 1/4 tsp. Of broth in each dumpling) with some even being empty from leaking or poor folding (so sad!). Still, good for a dumpling fix! The bao zi were my favorite thing that we got. Haus Bao Zi is definitely worth getting! The Black bean and Pork noodles were slightly disappointing. I expected something like Zha Jiang Mian but what it really was seemed like bean paste and pork over slightly over-cooked noodles...definitely could have just done that at home for 1/4 the price. Still, I ate and was satisfied (I'm just very picky about my East Asian cuisine). Lastly, the dipping sauce was interesting. Good but not what I prefer (chili oil please??). And lastly lastly (I promise) it was expensive for what you got. I've paid $1 a piece in NY for the large style soup dumplings. Since I'm not from Wisconsin but from New York I'll probably never go back, but if you want a taste of dumplings and can't travel too far to get it, by all means give Dumpling Haus a try! read more

We ordered delivery last night. Spent about $75 on soup dumplings, pork dumplings, veggie pot stickers and pork noodles. The soup dumplings were the only special thing we ordered. I loved the rich broth and sauce with them. The pork dumplings and pot stickers were okay they could use more seasoning in the fillings. The pork noodles were my least favorite. The noodles had no seasoning at all and the sauce on them reminded me of old gravy that you tried to reheat. If I ordered again I would stick to the dumplings. My husband and I got the shrimp dumplings and pork pot stickers along w the sesame noodles. I meant to take pics, but was too hungry. The shrimp dumplings were small but filled w flavor. The pot stickers (always my favorite) were crispy, juicy and had some freshness w scallion included inside of them. Sesame noodles were great too, pretty much the same as Dan Dan noodles. I just moved here and wanted to try something that reminded me of Chicago. I ordered the Xiao long nap....soup dumplings. These were so hot when they came out. I had to let them sit so I didn't burn my tongue. The sauce for it was ok. I also ordered the black bean and pork noodles. This was pretty filling and I was able to take half of it home for lunch the next day. The sauce was not too salty and it had just the right amount of fresh green onions and cucumber slices on top. This is a smaller place and probably not the best for extra large groups. You can serve yourself water. You'll have to ask for forks if you need them but they only offer chopsticks next to the water counter. There is also outdoor seating...a couple of tables. Rain/snow/sleet early April and I find myself hungry and in between films at the Wisconsin Film Festival, waiting for a 1:30 p.m. showing at AMC Hilldale Mall. DumplingHaus beckons nearby and I check it out, ready for something hearty, fresh, flavorful. I find it in DumplingHaus's Sesame Noodle Kick ($8.45), and a cup of green tea. Ordering is easy at the counter and in my experience they have the quickest and clearest pay station around. Really, other establishments should check it out and adopt it. Not only quick but it's actually aesthetically pleasing. Noontime and the place fills up. Tables and benches against the walls are far enough apart so conversations are kind of muffled in the high-ceilinged space lending a communal vibe with an aspect of privacy built in. Overall, it finally reminds me of a cafeteria. But that's not a bad thing, depending on your impressions old and new of cafeteria meals. My bowl of Szechaun style noodles drizzled with spicy sesame sauce, scallions, cilantro and peanuts is delivered to my table by an aproned server from the kitchen. It is a warm dish and fits the bill. Flavorful but no one ingredient dominates although the cilantro is, well, cilantro. Spicy but only the kind that numbs the lips a little but not the tongue, and clears the sinuses a bit. DumplingHaus is clean, orderly, and the older gentleman surveys the place and that is assuring. Busing one's own dishes to the dishcart is a bit of a hassle. I sat by the condiment and utensil station and needed to walk through a line waiting to place orders to get to the other side and the dishcart. They could use a busing station closer to the condiment station. It is truly awkward to pass by new customers with one's used bowls and cups. If they remedied this, I'd probably go to 4 or 5 stars for DumplingHaus. It is an open kitchen and you can see your food being prepared and that's always a plus. read more

This 3.5 star small restaurant deserves at least 4.5 stars. The people are friendly and the food is amazing in flavor. I typically don't like any sort of soup that's not ramen or lo mein, but the beef haus noodle soup was packed with flavor and the beef was sooo tender! I also ordered chicken steamed dumplings and shrimp dumplings, and both were so delectable to eat. I'll admit, i came by myself, so I ordered a lot, yet I have never been happier to go home with a box full of left overs. Immediately greeted by the older gentleman at the counter, and told us to take our time as we patiently searched the menu. Long time visitor, first time reviewer. Dumpling Haus has been one of my family's favorite stops in Madison for many years. Located in Hilldale Mall, it is an easily overlooked gem. This cozy spot features traditional Chinese dumplings and cuisine ranging from the best xiaolongbao (Soup Dumplings) in the city to their famous Homestyle tomato and egg noodles to fresh youtaio (Chinese donuts) that remind me of my childhood. The Haus Fried Rice is also a great addition to ant meal. The kitchen to almost open concept with many windows to watch dumpling formation or the chefs sautéeing noodle dishes. If you're looking for super amazing flavorful brothy noodles and soup, this place can be a bit deceiving... Their location and atmosphere is not bad at all! But when we got our food, it was actually quite a disappointment. Not much flavor quite frankly in any of the 3 things we got: BBQ Pork buns, Xiao Long Bao, and Pork Cabbage Soup and Noodles. The pork buns were very bland with not much aroma-ful flavor to it, and the pork cabbage soup just didn't taste as juicy and savory as one would imagine it to be just by looking at it. The Xiao Long Baos were probably the best out of the three - there is soup inside the dumplings, which make it juicy. But honestly, the wrapping was still sort of stiff and the inside was pretty plain. I know that Xiao Long Baos are hard to make, so I'll give credit to them for making it as good as they could make it. But still.. overall the eating experience here was not up to my standard! You order at the counter, pick up your utensils, and they bring you each dish as it's prepared. Bus your own tables after you eat. We ordered the haus sticker dumplings, the curry beef bao, and the shrimp dumplings. The texture of the haus dumplings was really good and they were perfectly fried. They definitely felt home-made. The green onion in the filling was over powering. I didn't like the taste of the shrimp dumplings at all. Something just seemed really off about them and I would not order them again. The texture of the steamed buns was slightly chewy and sweet. I really enjoyed the curry beef filling and I would definitely order those again. Price-wise it seemed a little high for what you got. However, I really did enjoy seeing the open kitchen and watching them prepare the food. I'd go back if all I really wanted was dumplings or steamed buns. read more

I've been to DumplingHaus several times now for lunch, and unfortunately my experience has been mixed. I'll start out by saying that the food is pretty good. The steamed shrimp dumplings, vegetable bao, and noodles with peanut sauce are all tasty. The issue I have is with the service. The first time I came here, my friend and I asked for an order of rice noodles with peanut sauce. The server brought us out what were clearly regular noodles and then refused to correct the mistake, denying that they weren't rice noodles. It was very rude and honestly ridiculous. I've had rice noodles before, I know what they look and taste like. The second time I came it was pretty busy. I don't mind waiting longer for my food when the kitchen swamped. I get it. However, it took about 40 minutes to get my one order of steamed shrimp dumplings. The server (the same one from my first visit) was swearing under his breathe and complaining about how busy they were. It was honestly really unprofessional. I recomMend DumplingHaus if you want some reasonably priced Chinese cuisine and you're in the Hilldale area. I don't recommend it if you are in a hurry or looking for great service. If I could I would give it zero stars! The dumplings had an almost slimy texture. We got the house special dumplings and there was nothing special about them at all. The beef shank we order was $18 and we got maybe a few slices with some green onions tossed in. They looked sad!! And then let me bring you to the House Noodle Soup. The small pieces pork ribs was about the only thing tolerable. Went up and asked for some chili oil for the dumplings and noodle but was told that I had to buy their house hot sauce for $8/bottle. Over $60 and my wife and I still left disappointed. If you want dumplings I would recommend FEAST artisan dumplings. This restaurant is a good place to get some northern chinese cuisine. Price is ok, but for the quality, I'd say a little high. I am rating it a three because it offers variety in a mall, but it is closer to 2 in terms of taste. The xiao loong bao or steamed soup dumplings have no "soup" in them, which was a disappointment. Shumai was overly salty and i could barely taste the texture of the sticky rice. The stir fried chicken noodle was ok. Nothing amazing, but it wasn't bad either.
