I recently came here with my sisters--a full party of 10 of us--and the service was incredibly swift for Sat during lunchtime. Our server didn't miss a beat with our large table and kept everything running smoothly. I appreciated that they were willing to modify for our picky eaters...Pack your appetite because the portions will be large. The atmosphere definitely gives off a very casual, dive bar experience, so get ready to kick back, enjoy and listen to some country music. I ordered the smoked chicken, it's on the route 66 menu. I think it's called cedar plank chicken. The chicken was not tender and not completely cooked. Look at the second picture. I do understand that smoking meat, changes the color. I did not eat the darker colored meat, besides the color, the texture of the meat didn't feel right. I did show this to my server and the server spoke to the manager. They did Not comp my meal. They did offer a replacement, at that point, I wasn't interested. The potato wasn't horrible. The cucumber and onion salad was decent. Don't order the cedar plank chicken.

Omg ok let me organize my thoughts because this brunch experience blew my mind!!!…read more I live fairly close to two silos, and I always really enjoy my time there. I have been there several times before they started expanding and I remember seeing the signs go up and the excitement of what would come next. Fast forward several months maybe even a year and my friend suggested we go to brunch at this new spot called proof kitchen. It didn't occur to me until yelping that this was one of the new additions to the two silos (villagio group) kingdom! The second I found out that I would get the chance to finally try out this spot. Any other options that were on the table were immediately thrown out and we decided to go here. The menu looked really impressive and let me tell you the menu itself was not nearly as impressive as what was presented to us when we ordered, and our food arrived. It was really hard to pick an option... I was really impressed because quite a few of the options I've never even heard of before or thought of. For example, the crab Rangoon dip was so great. Just the right amount of sweetness and a bunch of lump crab meat. I love how they want above and beyond, even just with the wonton chips. The server was incredible and he brought over more chips for us without us even asking, and I don't recall any additional surcharge. We were here to celebrate my girlfriend's upcoming wedding and got to open her save the dates! The brunch was perfect. The grill time was lovely and the food was spectacular. The beverages were really delicious too! My friend ordered a flatbread that came with eggs. My other friend ordered the pancake with the berries that I almost ordered. When her pancake came out, we were all absolutely floored at the presentation! Firstly, the pancake was extremely thin, full of flavor and covered in delicious fresh berries. It took up the whole plate!! fortunately, I didn't also order that because I ended up being able to eat several bites of it to help my friend finish her meal. Portion sizes are very generous!! which we love in this economy... we also ordered the fry trio, which was so elevated in the most simple and flavorful way you absolutely must order this. I ended up just ordering the side of mac & cheese that was really gooey and flavorful which to me are the two main components of a good mac & cheese. Overall, we all agreed that we must come back. The food was lovely service was truly top-notch and the restaurant itself was beautiful New and modern. It was cool to be able to walk through and then also check out the distillery next-door and the merch!

We all agree on 2 thumbs up across the board for decor and ambiance. It was giving industrial-NYC-Soho vibes. Quite impressive for Main Street Manassas. Timing was everything ... we were too early for the dinner crowd and just missed the lunch rush so the parking Gods were on our side ... we snagged a spot right in front of the restaurant. Stephen was a gracious server / bartender to our wee little party of 3. The beers were cold and the Cadillac Margarita was decent. The Rueben and bbq wings were raved about (especially the bbq sauce ... it was legendary)! Unfortunately, the salmon bites and the pork belly deviled egg appetizers were soooo salty and just not edible. Also $15 was diabolical for the portion size of the salmon bites. (Pic attached) I've paid that for a full bourbon glazed salmon meal with rice and veggies. Not a deal breaker. Would most def return to try other app / entree / summer cocktail options. They are our favorite restaurants in Northern Virginia. The menu varies a little from one restaurant to the next, but every restaurant has a relatively broad menu from salads to sandwiches to chicken and seafood and steak entrees. All are prepared fresh and to your liking. If you ever have a meal that isn't perfect, let your server know and they will fix it. Some of the favorite meals we consistently order are chop house salad, Caesar salad, crab cakes, blackened prime rib, chicken and salmon. It's never so packed that you can't hear yourself, and there's a clear crew of regulars who are obviously here all the time. That's usually a good sign about a place, and it is here.
