I did not need the menu. Two scrambled eggs, home fries, white toast, scrapple, coffee. Scrapple, for the uninitiated, is what happens when Pennsylvania Dutch thrift and ingenuity collides with breakfast meat and nobody asks too many questions afterward. It is made from pork "scraps," cornmeal and existential resignation. Fried correctly, it is uniquely magnificent. Mine was magnificent. Thin slices, crisp around the edges, soft and moist in the middle, clearly worked on a grill by somebody who respected the material. The eggs were right, the home fries actually tasted of potatoes, and the coffee arrived hot and kept returning as faithfully as a Labrador retriever.
