What is Mondongo? Beef stomach lining, Spanish might call it callos, British would call it Tripe, Mexicans might call it menudo. Same ingredient but much lighter and flavorful. Very satisfying when the days are cold. The tequeños are the Venezuelan version of fried mozzarela sticks, some claim them as the "entry drug" to Venezuelan cuisine. I think they have a point. The Guanábana (soursop drink) was really refreshing and went great with the richness of the pork.
