The BEST pub for selection, freshness, and quality. I met the owner who also owns The Last Drop. When I was drinking I would order Left Hand Milk Stout, Quak Belgian, and really fresh German beer that felt so crisp on the tongue. Collins also had the best selection of framboise and the pub was ahead of its time. As I left the service industry friends of mine still rave about Collins pub as it's seen so many iterations of change in Pioneer Square. Still, a local favorite of mine and The Last Drop carries a wide assortment of beer and N/A. They were one of the first to carry Athletic and I randomly got a German N/A which I don't recall the name. The beer was clean, crisp, and I reminisced of the hunter spatzle served on the ave at the old German restaurant under Cedars. The vibe is very cozy with rock records playing and old MTV videos on the screen. Locals seem to be aficionados and the beer seems secondary to the company and camaraderie. The last drop reminds me of Europe and I hardly see locals getting drunk. They are discussing the beer and the alcohol content, and geeking out on how their beer may or not taste the same as these smaller beer companies. It's fun to hear! Stopped here as part of a pub crawl following a Seahawks game stopped in here to a packed pub filled with fans. This was actually cool I chatted with fans of the visiting team and a Hawks superfan. Our party of four found a booth where we got a couple drinks and some apps. The setting is that of like half bar, half family restaurant where it's a bit brighter where the tables and booths are. I kind of liked it. We only got a couple apps to share which were just alright, nothing too special. The wings were standard - I think a set of 8 and we had some hummus that comes with pita slices, carrots and sliced zucchini. Not bad, nice presentation. Overall just ok. There didn't seem to be a large floor staff, so I admired the ability to quickly wait on us, check in frequently, and get our drinks/food to us fast. The prices are affordable, but our food fell squarely in the "okay" category. If you're looking for a cross between a pub and an American sports bar, with menu options to suit those settings, Collins is a decent spot. I ordered the Steak Salad which was the perfect portion, and my medium rare steak was cooked medium well. However the salad itself was fresh and delish. My two coworkers ordered the fried chicken sandwich. They were so large they could have split them! There are sweet potato fry substitutions. We sat outside for patio seating. The menu had super carb sides for options. Service was not great, water wasn't refilled, the waitress thought change wasn't a thing, and another server complained that we didn't move plates around fast enough because his hands hurt. So that moment was a little awkward. Maybe it was a bad day. Overall I would say this place was average food wise and service wise. I have to say I am a fan of this establishment. I got a chance to visit them several times in the past month or so and had lunch (on-site and take out), happy hour food, drinks (beer), and business meetings. For whatever the occasion was, this place was able to accomodate pretty well. One time, we were a pretty large group (7) without a reservation (I don't think they take reservations) and they were able to put some tables together and voila, we were seated. Food here is quite good, but a bit on the pricey side. I really liked their burger (add bacon!) and fried oysters. Their calamary was pretty good too. their taplist is usually solid. A couple of weeks ago, they were hosting Alpine Beer Company from SD and had a bunch of awesome beer on draft (like Nelson, Duet, Hoppy Birthday, etc.). If you're a regular here I'm sure you love this place as the atmosphere is comfortable and I really like that this place because it's owner managed. The burgers and reuben is really good along seasonal risotto that changes all the time depending on the season. The beer selection is always good where you don't have a problem finding a beer that suits your palate. They also have vegan selections where if there's someone in the group that's a vegetarian; they will be happy too. I've only been here a few times when I come to the court house. Let's think about that word "gastropub" for a minute. It's one of those trendy catchphrases that wants to convey more meaningful awesomeness than other words do. Like when people at the office never say "use"--they say "utilize" instead (unless they're headed for the restroom). Pubs with great beer and great kitchens that choose NOT to call themselves "gastropubs" seem more content to let their chefs and bartenders do the talking, and rely less on catchy phrasing on their signage and menus. Collins is definitely in the category of places that build a name rather than trading on one. First, and perhaps most interestingly, of all, this place is located in the Smith Tower. Or jungled in on the same block of buildings, anyway. That immediately gives it a relative urbanity that is in scarce supply in the Emerald City. You just feel like you're going to a downtown spot, and most of the downtown spots worth the name cost a small fortune. Collins is not the cheapest beer bar in town, but it's not the spendiest, either, and when you're downtown, it's nowhere near the spendiest place to eat well. And that's one serious advantage to this place--you really can eat well if you come in for the food. You don't get the sense of it having a dining room at first; it looks like it's all barstools and side tables inside the door. But past the bar there's a sit-down dining area, and there's dark wood everywhere, going all the way back to the restrooms, when it comes time for you to utilize those. It feels nice without insisting that you notice right away that it feels nice. The menu is pretty much soups and salads and sandwiches and burgers and the like, with a few good entrees thrown in. But they're all made well, generally from high-quality, local, fresh ingredients, as far as I can tell. More importantly, the beer list is serious. There are a couple dozen faucets, and they are always pouring good stuff, often good stuff that's hard to get, sometimes great stuff, sometimes stuff you might never see again in your life. The staff is really nice, really chipper and friendly, and they know their stuff well. Seth has done a great job with this place, as he has with Hudson (the food there is slightly more ambitious). I have brought friends, family, professional contacts, beer geeks, dates, and groups of people in here, and everyone has always enjoyed themselves. I hope Seth keeps opening more places. read more

After arriving in Seattle and checking in to our hotel room, the wife and I were so hungry we could have eaten the a$$ end out of a skunk!!! We asked the guy at the front desk "where is a good place to grab a bite and a couple beers". He, without hesitation said "Collins Pub". He gave us directions and we meandered our way up Yesler Street a couple blocks and there it was. Now even though the place is attractively decorated, with a huge window serving as the storefront, my first impression wasn't the best as there was only one other patron in at the time. But it was early on a Sunday afternoon. My wife and I decided to sit at the bar. Our bartender aka, "Joe" was a very pleasant fellow and actually quite funny. After perusing the menu for a bit and after our first drink, we placed our order. I ordered the burger and my wife had a steak salad. Both were absolutely delicious. I have no idea what they did with that burger but it rivals the very best I've ever had, up to and including Umami Burger in the Los Feliz area of L.A. Due to working on third and second avenues for the past couple years, Collins Pub has become a favorite of mine when I have time for a longer lunch with colleagues or friends. It's a great spot if you're looking for a sit-down, casual option for a tasty lunch and/or drinks. During my most recent visit, I was pleasantly surprised to find a robust lineup of local breweries, including Cloudburst--a favorite of mine for hazy IPAs. The waitress was knowledgeable about hazy beers and recommended her favorite, which I ordered and loved. In the past, I've ordered their hot toddy, which is delicious too (and strong!) on chilly days. In terms of food, I always, always, always order the Crab Cake BLT--quite simply heaven on earth, as other reviewers have noted. You can opt for fries or greens on the side. Enjoy! read more
