Hopped in with Thursday night reservations, and we were seated within a few minutes. The menu is as fantastic looking as we remember. Pretty much, this is one of those places you go when you want to eat a bougie dinner. Oh, and the cocktails! Wife N. started with the Woo Girl a lovely off-fizzy gin-based hibiscus drink. Delightful. I went with an Old Fashioned. They have three different Old Fashioned choices (I've had all, and all are stellar) but tonight I went with the "With a Twist" which adds in some unique pineapple and vanilla notes. Fabulous! The apps arrived. We started with the Fois Gras Terrine--pretty much you can't go wrong with Fois Gras and Chimney park gussied it up with marinated apricots, pistachios, and what turned out to be the most delightful edible flowers (the purple poofy one looked like a garlic flower and had a light garlicy taste which, with the Fois was a bite of heaven---many folks think flowers are just garnish but don't shy away from trying a bite or you'll miss out! The only drawback was we ran out of the (two) toast points a third the way through the terrine. No big deal, we just spread it on their wonderful table bread. Bison tartare. Perfect egg yolk on top and a lovely dijon cream, served with housemade potato chips. Best tartare in recent memory. Next, the lobster bisque which we mentioned we were sharing. It arrived split into two perfect servings, with bisque poured tableside. Chunks of fresh lobster swimming in a delightfully tasty bisque with just a bit of spicy heat to it. I think if there was only one thing I was allowed to eat for the rest of my life, it would be this dish. On to the mains. She had the pan roasted Chilean sea bass. Flawlessly cooked and glistening, on a bed of pea risotto and adorned with pea shoots, most excellent. I had the mushroom-crusted New England scallops. Five #12 scallops, perfectly seared, on a bed of black rice, served with morels, bok choi and a couple black truffle shavings with a beurre blanc. This was a delicious umami bomb. Everything on the plate had a reason for being there and, on the off-chance I managed to get all the elements in a single bite it was a bite of heaven. Stuffed to the gills, we could only take home a dessert. So the flourless chocolate torte made its way into a to-go box and we had it back at the hotel room. Everything you'd expect a delicious wrap-up to be. Second visit in two years, and the quality of service and food was consistent across both visits. We're Chimney Park fans, and will be back any time we're back in the area. Wouldn't miss it for the world.

Offering haute cuisine and professional service while maintaining a home town ambiance. The food has always been michelin quality. Then Jason remodeled to an even more upscale unique interior. I am grieving the loss of this fine eating establishment due to the fire. I anxiously await the reopening in December.
