I consider myself a connoisseur when it comes to coffee, but this was by far the BEST cup of pour-over coffee I ever had! I've been to Seattle, Portland, San Francisco, and have had good coffees there, but the man knew what he was doing.
My lady and I were en route to a "highly reviewed" coffee place in Dublin, when we came across this 3rd wave coffee shop tucked away in the Portobello neighborhood, and we walked into a teal-colored room with seating for about 20 and no menu. Just ask for what you want, and make sure it's not a caramel macchiato... She asked for a latte, and it was the most delicious latte I've ever had. I asked for the same, he replied, "do you want something better?" I accepted. He essentially made a latte with less milk. It was still amazing.
The coffee nerd inside me approached the counter, and asked if he made any good pour over. He the proceeded to take some Ethiopian beans he had just gotten in (which I'll get to in a moment) and prepared 2 batches of coffee using different methods and the same beans. He explained to me his methods and procedures. Very friendly. When he wasn't perfecting a cup of coffee, he was playing his acoustic guitar against the wall.
PS- the coffee beans were some of the best beans from Ethiopia I've ever had.
