There were some things I liked and some things I didn't like about Chuy's so that's why I am giving it 3 stars. The frozen pineapple jalepeno margarita was delicious! I really enjoyed that. The regular happy hour margarita - disgusting. I would never again order that in my life. It just tasted bad, and didn't taste like a margarita - there's no other way to say it. The queso - delicious, it was nice and creamy, had a little spice to it. very good. The chips - delicious, they were warm, salty, crunchy, - could have been slightly thicker in my opinion but still good. The chicken quesadilla - disgusting. I don't know how in the world you can manage to screw up a quesadilla, but Chuy's did. We got it with the whatever the waiter recommended inside (I think it was like green chili, onion and something else). Overall it was dry, the cheese wasn't very melted. Seemed liked it say under a warmer for too long, like the cheese had been melted at one point, and then coagulated. Don't go to this place for the food, just the drinks - but don't get the happy hour margarita. read more

This was a tough one to rate. The food was good but the service was awful. The waitress/bartender came to the table and was pleasant. She brought us our chips and took our order. We asked for the jalapeño ranch dip which she responded that she would bring. She also asked if we wanted an extra plate since we were splitting a burrito. It was all a positive interaction. My husband forgot to ask for sweetener for his iced tea so when she came back to verify which sauce we wanted in the burrito he quickly asked for the sweetener. We also asked if we could still get the jalapeño ranch dip since she didn't bring it back with her. She left abruptly and when she came by she practically threw the dip at us. Still no sweetener. My husband finally went inside to look for it which is how we knew she was the bartender. She gave it to him and he tried to thank her. She mumbled something and walked away. We ran out of chips before we got the jalapeño ranch dip and she never came back so my husband went in once again and asked for chips. She filled them and handed them to him. After that we only ever saw her from a distance when she helped another table. The food runner brought our food as well as going back for our extra plate and refills on our drinks. We finished our food and wondered if we would get our check. She must've saw us looking at her each time she went to the other table so she came and dropped it off with barely a word. We paid via QR code since she didn't come back for our card. I am baffled at what went wrong during our minimal interaction with her but whatever it was we didn't deserve to be treated that way. She wasn't busy. There was only us and one other table and nobody in the bar. Hopefully she gets the training or help that she needs. Chuy's is possible one of the best Chain restaurants out there. They make their own tortillas in house, make all the sauces fresh, and have the tastiest Frozen margaritas. The Boom Boom sauce is a must, it's their spicy queso sauce that is some of the best queso I've ever had. Cover your enchiladas with that and you're made! The menu and quality has seem to fallen off recently. I believe it has to do with the pandemic, but a lot of menu favorites seemed to be missing and the flavors of some things seemed different. Not sure if this was a restaurant thing or a corporate thing, but regardless I think you need to try Chuy's for some good Tex Mex. read more

Back in the day I used to be their Budweiser rep, so when my boo suggested popping in before a movie on Friday night I thought why the heck not, I always wondered about this place. I will say I really appreciate them specifying that they are Tex mex and not Mexican because I feel that eliminates people coming in expecting traditional Mexican food. Hey I thought for Tex mex it was pretty good. I got the chicken flautas and they were good, served with beans and rice and guacamole and sour cream. My boo got some enchiladas that I was meh about but that is a personal preference to me. I don't like that Tex mex places do almost like a queso type sauce to smother. Not my thing, but I think I am in the minority. He really liked them so that's all that mattered. I really appreciated the thinness of the chip. I could see some people being put off by that but frankly I think it's better so you're not filling up on chips and salsa before your meal. I also thought the salsa had a bit of a kick which I appreciated. Though keep in mind my spice tolerance is off since I'm pregnant so who knows. It's funny to read some of the reviews alleging this is "not authentic Mexican food". If what usually passes for Mexican food in Colorado is "authentic Mexican", then maybe I just don't like Mexican food. Truth is this is TEX-Mex, which is clearly stated in the name. Maybe you don't like Tex-Mex, and that's fine. But for those of us who crave this kind of food, Chuy's hits the spot. Their "Tex mex" enchilada sauce is the closest thing to authentic chile con carne I've gotten in Colorado, and it's darn delicious. Also, three words you need to remember when you go here: tres leches cake. Just do it and thank me later. I will mention that we went last Sunday and our waitress had as much personality as a rock. We had to ask for napkins, then ask for salt and pepper... didn't have to ask for the check though. She brought that without even asking! She quite literally did not smile one time. When you take the fam out to drop $70+ on dinner, it's nice to get service with a smile. Maybe the server will smile and give us napkins next time? read more

How do places like this stay in business? If Applebees and Olive Garden had a "Mexican" baby, Chuy's would be that baby. Unsure of its identity. Let me start with the good to excellent. A warm welcome from the hostess and she asked if we wanted one or two sets of crayons for the grandkids. Attentive service from our waitress who made sure the kids' drinks and food arrived quickly. My Modelo Negra beer was as expected. The fries with the kids' meals were OK. Noe, for the negatives. - - Only chicken and ground beef for meats. No seafood and no PORK. What kind of Mexican restaurant does not have pork? Our ground beef burrito was not good at all: bland, the beans were terrible. All it had in its favor was size. - The music was weird. One minute, 90s rock and the next something that sounded country. Not suitable for dining. - Cheap Walco 17 flatware. Almost the cheapest you can buy. I wrote flatware, but all I got was a fork. ("Sanitized for my protection" while the cook with typhoid is cooking my meal. I hate "security theatre".) - Tracie's margaritas were insipid. Not sure if they contained any tequila. - Noisy. They also promptly brought out chips and salsa, and the service was reasonably fast. The bad... Let's see. The food was dry, salty, and generally not good. We tried a couple of different things so this wasn't a one-off. We sat in the bar area, and not only were things dirty, there were cleaning supplies out sort of strewn all over the whole area even though it was nowhere close to closing time. The whole atmosphere felt off, and it wasn't very enjoyable. I am really surprised to read other reviews and see how many people seem to like this place. After years of driving past and saying "we should try that place," we finally found an opportunity to come in on a Monday during lunch. And we are so glad we did! We sat in the bar area, so the bartender Sara was our server. She was amazing! She asked if we had been in before, which we told her no, and she gave us a full presentation of the menu with descriptions of how things were made. she even brought us small tasters of some of their other drinks and dips This is a chain restaurant, so that type of service wasn't expected. We we're sitting at the furthest table from the bar and Sara made special effort to make sure our service was great. Chuy's is a pretty OK restaurant if you're looking for Tex-Mex in the Broomfield/ Westminster area. By that I mean that it's inoffensive, and will likely have menu options that cater to your whole group's needs. They tend to have a fair amount of seating inside, even though they are a relatively popular restaurant. The waitstaff is pretty nice/ helpful, and the free chips/ queso is a great touch. By and large, the restaurant checks a lot of the boxes that should lead to a great experience, but for me it just...missed the mark. The interior of the restaurant is decorated really ornately, packed just a little too tight. The lights are dimmer than you'd expect for a restaurant of this style, and it's louder than one would think too. I know these are odd things to pick apart, but for some reason the vibe is just not quite right. The other fact that doesn't help is that the food is not bad... but it's not great either. Overall, I'd say you probably won't have a particularly bad experience at Chuy's, but I am 100% sure that there are better options in the area too. A friend told me about Chuy's and how it was one of her favorites in Austin. We decided to stop in on Sunday around 6:30 for dinner. The restaurant was packed, but we got lucky to snag a table on the patio and enjoy a nice summer evening. Chuy's is all about the Tex-mex. Think chili con carne covered enchiladas. I decided to get the chili relleno and enchilada combo plate. This is a ton of food for 10.49! Easily two meals. I loved their take on the chili relleno. It is a whole chili pepper deep fried, unlike most Mexican restaurants that do a chili strip and cheese in a wonton wrapper. You could also get the chili relleno stuffed with your choice of cheese, chicken, ground beef, or shrimp for no additional charge. I'm a purist so I stuck with just cheese. My sister had the fajitas and they give you two chicken breasts for $15.95, also a pretty good deal. My favorite part about Chuy's was the salsa. It was delicious with the perfect amount of spiciness. Only complaint, margarita was seriously weak for 10.95. I'll just get beer next time. read more

Chuy's, Oh how I love thee. I'm a huge Chuy's fan. You really can't go wrong with anything you order form here. We usually start with the queso compresto. It is the bomb!!! The complimentary jalapeño sauce is pretty fantastic too. Not to mention the chops always come to your table warm. I always get the beef fajitas. I love them and there's honestly no reason to stray. The sweet tea is on point. Over all a pretty great time. Secret side note: find the tiny purple hippos hidden throughout the restaurant. They are like only half an inch long. There is one on the left in by the hostess station. We love looking for the hidden things at Chuy's. It's fun for adults but if you have kids, it's epic. Keeps them busy. This was my first time at Chuy's based on a friend's recommendation. Boy, we're the right! I liked everything about it! The decor was really fun - like being in a village in Mexico - palm trees, lights, cars, Hispanic portraits on the walls. The service was friendly and efficient starting with crispy chips and "just right" spicy salsa. We ordered blended peach margaritas, which were delicious. The food was super fresh. The post Covid menu is just another Tex-Mex menu since they got rid of what made them special (Elvis Fried Chicken, Chile Rellenos, blue corn tortillas, stacked enchiladas). Chuys is one of my favorite franchises. They just opened their 100th location. How do I know that? That 100th location is in my hometown, Lexington. My favorite thing here are the beef fajitas. The beef is marinated in a specific type of beer. The option is huge, accompanied by the usual Mexican rice, refried beans, etc. I also had the tortilla soup at this location, which was fantastic too. I just might've had it many times, as a hangover meal. The bowl size is a big portion and definitely enough to make a meal out if you're not feeling very hungry. The salsa is chunky and fresh, not the usual runny salsa at other places. The chips are unlike no other, thin and perfect. Ask for the creamy jalapeño dip... it's life changing. As a matter of fact, you can try any of the sauces before committing to the one assigned to the meal that you choose. The happy hour is also unlike no other, with a free nacho bar, even stocked with cheese dip. One last mention, you can order the half sized portions at any time of the day, not just lunch. read more

I really wanted to like Chuy's but it just wasn't meant to be. It's technically a Tex-Mex place but certainly doesn't taste like it (and I'm a native Texan). We stopped by for happy hour (which starts at 4 pm). This place is definitely chain prices (I.e overpriced on everything)... HH specials were certainly not what we were expecting. I got a marg and hubs stuck with beer. The marg was disappointing. Hubs got the guac, which was overpriced and lackluster. I, on the other hand, decides to wait for the nacho bar and decided to satisfy my initial hunger with 2 ala carte cheese enchiladas. This is where they lost me...a la carte is usually cheap, but not here. It was close to $10 for two mediocre enchiladas. Between the 2 basic drinks, free nacho bar, and 2 ala carte enchiladas, our whole ticket came close to $50! At Happy Hour!! I don't think we'll be back again, no matter how homesick we get. read more

Alrighty. We hav driven by this particular location many a times a vowed to stop. Finally in desperation of finding somewhere to eat dinner at 8 on a Sat night without a 45 minute wait our car led us here. The decor almost reminds me of a Gunther Toodys with a Tex-Mex ambiance for a lack of better words. They have T-shirts promoting the establishment as well as clever sayings. We were seated rather promptly and immediately my wife that fresh tortillas were being made behind the glass for everyone to see a little bit of heaven being made. The menu has a lot to offer and they do offer a full bar. Noise level is pretty average for places in this type of environment. The manager (Margarita)? caught on that this was our first time visiting this place and was gracious enough to come over and told us a little bit about the menu and ordered us a complimentary queso bowl on the house as a little welcome to Chuy's which was a very nice touch. I ordered basically a sampler plate that gives you a little bit of everything. It was explained to us that everything is made fresh daily and on site, but I would have to say in my opinion that the beans tasted and looked very similar to a canned product such as Rosaritas or Jose Ole'. The rice was ok but a little dry to my liking, and everything else was ok. Now remember this is my opinion and we will eventually try it again because they do have several chili options which include both red and green and the price was reasonable and averaged around 10-15 for a good portioned plate. My wife and Son both enjoyed thier meals and are willing to go again and Fyi they do give you bottomless chips and salsa . So give it a shot and I'll be interested to see your thoughts read more

Prior to yesterday I had only tried the chips, salsa and queso which were fabulous. The hubs and friends of ours came in yesterday for a proper meal (although one could argue chips and salsa are a sound meal choice). We had a booth which is always nice and fabulous customer service. Those amazing chips and salsa were brought out and we ordered queso on the side. Mmmmm. For my main I did the veggie combo that came with a veggie enchilada and a chili relleno. The relleno was AWESOME! It was a whole chili stuffed with just the right amount of cheese and deep fried. Normally I'm a traditional egg battered relleno gal all the way but this might forever change my mind. I opted for the ranchero and green chili sauce on the side and my preference was green chili all the way. The side of beans and rice were also really flavorful. I ended up getting both lunch and dinner out of the one plate so large wonderful portions. read more

To start off they have great chips and salsa! Food is very Tex-Mex, not a whole lot of flavor going on but it's pretty good. We had the enchiladas and tacos. The taco was very good but I was hoping for some spice in the beef. Enchiladas were good but we couldn't really tell the different types (Beef, chicken, etc.) apart from each other. The margarita's taste okay but not much alcohol for what they cost. I thought the service was fairly fast but the servers could use some coaching on how to treat people. I would rate this with more stars but the wait staff/bartender were not friendly at all. The place wasn't terrible but I doubt we will be back. Levi barely paid attention to our table, except for to point at us from the hostess stand and whisper. He would walk to our table, hand us something, and run off before we could ask for any additional items (i.e. chips, water, drink refills..) As we were ordering, he just stared at us and made little attempt to give even half decent service (prompting the next person when it was their turn, ask for specifics about order etc.) This made what was supposed to be a nice dinner with a friend really uncomfortable and unwelcoming as Levi couldn't be bothered to put a little effort into adjusting his attitude and being just a skosh more pleasant. read more

Came to this place for happy hour, and it is MUY delicioso! During Chuy's happy hour, they have amazing drink prices, and also have a free chips & queso bar throughout happy hour! I mean, come on... how can you turn down chips & $5 margaritas?! I didn't have a chance to order any of the other food, but everyone's plates looked delicious! On top of all of that, the vibe is very bright, lively, and vibrant. We had such a great experience here that I've gone twice in 2 weeks. No wait to be seated. Our server Jack (First visit, think that was his name) was so helpful. He brought us out a rainbow plate full of all their sauces. It helped us figure out what was the best sauce for each of our tastebuds. I was originally going to order something that turned out to be too spicy for me, so it really helped me. I ended up ordering a combo #4 pick my own enchilada and Chile relleno. Delicious. Also ordered margarita with the corona in it. I used to get these all the time in San Diego and loved it. My fellow diners loved the strawberry monito and pina colada.
