To be honest, I had never heard of this place until we moved to Lakewood, and there was one a couple of blocks away. That one, however, closed down, and we had come to like it. So, we looked for another. We found two. One was way South in Greenwood Village. We tried it, and it was okay, but not the same. The other one was this one in Westminster. So, we drove up there. We liked it. We like it better than we liked the one that used to be in Lakewood. I've always liked the flavors of Mexican food, but I was never really too hot on what is known as "Tex Mex," until Chuy's. I like the restaurant, I like the decor, and I have come to like the food. I admit I always get the same thing because I am vegetarian, and it is difficult to eat vegetarian in a Mexican restaurant. This place KNOCKS IT OUT OF THE PARK serving beans, and rice that are VEGAN! No lard, no animal products, but all the taste, texture, and loveliness of regular Mexican. Even the corn tortillas are vegetarian. The flour tortillas are not, but they are made FRESH on site. I have found that I have come to love their "Big as yo face" burritos smothered in the Ranchero Sauce. The Ranchero Sauce is a milder sauce, but I like the flavor, and I just bring some of my own Ghost Pepper Powder to sprinkle on, and perk it up to standards! I love that I can eat Mexican rice and beans again and not worry about lard, or chicken broth, but with the SAME EXCELLENT flavor. Chuy's has become the only burrito I actually crave. THANK YOU CHUY'S! By the way, I thought the Lakewood location, (now closed), was pretty good. The Greenwood Village wasn't quite as good. The Westminster location, however, is the best of them all. It's a bit of a drive for me, but I love the food, I love the service, and I love the staff. By the way, their salsa that they serve with their chips is pretty darn good, too. It's spicy, but not too spicy, and I think most people will like it. They also serve a chipotle ranch sauce with the chips that has grown on me. I LIKE THIS PLACE! I hadn't been to a Chuy's in 10 years, until I went last night. The service was great! No complaints there. And the ambiance was also nice, and fun. Good music! I remembered it as "elevated Taco Bell" -- and to be honest, I feel like that is the perfect way to describe it. And I really don't mean that to be shady-- I love Taco Bell! There is just simply a big difference between Chuy's, and Las Delicias and/or Los Arcos. The food was good, and the drinks were also tasty! We got shared the appetizer plate (combo?) and the enchiladas with New Mexico green chili. The green chili didn't feel like the authentic kind that I'm used to. Less is more at this place... I mean seriously, the quantities are huge. We got 2 plates between the 2 of us having not eaten all day and man was it a lot of food. Definitely put Boom Boom sauce on everything. Service was a bit slow but everyone was working very hard. The place is just packed always. Unlike some restaurants where customers are treated like an annoyance, the staff at Chuy's is always so friendly, accommodating, which leaves us appreciative and wanting to return. I was excited to come to this place. Seems to be a lot of them around Colorado. My husband had the shrimp tacos. He loved them. I had the taco salad. Not so much. I didn't like the flavor of the ground beef. The salad was very plain. It only had cheese, diced tomatoes, ground beef, and guacamole. No beans. It didn't come in a taco shell bowl. Had tortilla strips on the top. They were kind of stale. Also, I prefer iceberg lettuce, or a mix of iceberg and Romain. This was just the green part of the romaine on my Taco what's the salad. I would like to preface this review by saying that I have noticed decline in food quality from nearly every restaurant since Covid. I know a lot of places are cutting corners and that seems to really have affected a lot of businesses. Overall Chuy's has a fun vibe. They have several rooms in different themes.The staff here is always amazing every time I go. The drinks are always tasty and imaginative. However the food is really lacking. I ordered a steak burrito and the steak was charred and tough. The inside of the burrito aside from the steak was empty. The sauce on top was overly smoky. It was shamefully underwhelming. The whole dish had no excitement to it. I'm usually expecting a burrito to have multiple fillings in it and this was about as dry as you could get. I think this is an easy fix. I think that they could've put a lot less meat in my burrito and added other things in there, and I would've been much happier if the meat had been a little more tender, a little less burnt, and if the flavors were just more interesting I would've been a lot happier. I'm hopeful that they will work on fixing the food quality there because they don't have an extensive menu so you would think that the few items they have should be stellar. Hopefully the next time I visit, I will leave with a much better impression. read more

This is a nice little establishment to have near the movie theater. I recently went out to a date with my wife and we went to a movie afterward and it was perfect. They are quick and have ample seating so not a lot of time was wasted. Before that, I have been to this location a few times. All times have been okay to good. It is not blow your mind Mexican food, I guess it is Tex-Mex. I gotta stop comparing the two. It is good Tex-Mex which to me is never going to be better than amazing authentic Mexican food. This time around we did the fajitas for two. Steak only. It was the perfect amount of food for what we wanted. We were both hungry but not wildly hungry. They give you lots of toppings and options for the fajitas but for me I normally just do it up pretty simple. You do get a basket of chips here with salsa. They just keep coming by with a scoop to and will refill your basket with more chips if you want. This alone gives this place a four stars. They also give you chips when you do takeout. Pro-tip: get the creamy jalapeño ranch for the chips. It is free. They know you want it. You just need to ask. It's like a code that you know what's up. This place is fun and kitschy on the inside. The food is good and sometimes it's great. Sometimes it's nothing to write home about. Sometimes they get your order wrong but the servers are always super nice and willing to help. We came last night to check out Chuy's for the first time. It was a cool summer night so we sat on the patio and really enjoyed the ambience. There was cool lighting and fun music. The interior has kitschy items and bright colors. The food is Tex-Mex and I found it to be really good! Strangely there is a fixation on Elvis, which I find to be so odd, (someone explain!) Free chips and salsa is offered as an appetizer. (I note this because most places these days charge you for chips and salsa.) Tortilla chips are super thin - which I prefer! Entree proves were very reasonable for a chain restaurant, ranging from $13-20 a plate. Portions are huge! My partner and I could've split an entrée. We ordered a margarita and a palmoa - both were huge drinks and strong pours! I appreciated that the menu clearly marked vegetarian and vegan options. Tortillas are made in-house and it's kind of cool to watch the folks do the tortilla press. Overall, we had a really delightful chain restaurant experience! When you are craving frozen strawberry margaritas and nachos, this is my favorite place to go! Monica, our server was super friendly, fast and attentive. Chuy's is the place to go before catching a movie! The bar area is cleverly decorated with an eclectic garland of colorful fish hanging from the ceiling, along with cute photos of dogs from patrons and employees alike. Was pleasantly surprised with how good Chuys was. Whatever that jalapeno sauce they give you with your chips is phenomenal. I almost asked for a cup of it to literally drink but then I realized how crazy that request sounded so I held back. Their steak burrito was huge and packed with flavor. Came here with a friend for a lunch/dinner catch up. We were greeted and seated with some waters. Friendly staff right from the start. Chips and salsa were good! I grabbed the steak burrito and the waitress reiterated to me a couple times that it was really spicy. I still wanted it - so I still got it. Food came and it was fresh. The beans were actually good, the rice was good too. Guac was great. The meat in the burrito was really good too, nice big pieces of steak that was cooked really well. The green chile that the burrito was smothered with was good too. Here's the kicker though, the salsa was spicier than the green chile! This was not a spicy dish, which is fine, I don't really like it when foods are overly spicy, this was just really nice flavor. Too loud. A lot of it sounded like Mexican Hip-Hop. My wife had chicken enchiladas with tomatillo sauce. The chicken was dry and they were stingy with the tomatillo sauce. The Mexican rice was blah. I had the roasted chicken burrito. It was HUGE. Be hungry, real hungry, if you opt for one of their "Big As Yo' Face" burritos. Like my wife's enchiladas, the chicken was dry and the Mexican rice was blah. The refried beans were very thin, almost watery. I got it with the red chile sauce which I found to be bitter. I didn't sample that, so my bad. I would have gotten the green chile sauce, but it's on the "hot" list, so that was a no-go for me. Should have sampled that, though. I ordered the taco bar as a catering order for a work meeting and needed it delivered. Apparently they use door dash for delivery. When my food was on the way I received a text to communicate with the driver, when I called them they did not speak English, which is an issue. I called the restaurant to ask that they request drivers that can communicate with their customers. The man was very rude and replied no it doesn't work like that, WOW what happened to customer service and wanting your customers to return. I paid a delivery fee and a tip ahead of time, I really don't think that was much to ask. I will not be using them again! read more

I've been to this restaurant over 100 times and have never received such abysmal service as I had tonight. I sat at the bar because I was there by myself and didn't want to take up a table. I ordered dinner, and while it took a while, it didn't bother me -- it was a Friday evening, and it was busy. Food was OK, not as good as it used to be. But when I finished eating and was waiting for a check and a box for my leftovers, I waited ... and waited ... and waited. I was right in the middle of the bar, and the personnel behind the bar pointedly ignored me for a half-hour as my plate sat in front of me (and them) with a wadded-up napkin on it. When they finally asked me if I wanted anything else, I told them I had been sitting there for half an hour waiting for my check. AND THEY SAID IT WAS MY FAULT FOR NOT FLAGGING THEM DOWN. Then, the staff started ridiculing me. I've been dining in restaurants for 50 years and have never been treated like I was at this place. I was a loyal Chuy's customer for 42 years, since I first ate at their restaurant on Barton Springs Road in Austin. I will never enter this place again. read more
