Instead of the typical thin, julienned vegetables that give bibimbap its signature texture, the cabbage was chopped into small pieces like diced onion. Even the pickled radish was chopped rather than julienned. Bibimbap is known for its neatly arranged, string-like vegetables -- this felt thrown together rather than thoughtfully prepared. I understand restaurants can put their own spin on dishes, but when key elements are missing and the fundamentals aren't there, it shouldn't be labeled as bibimbap.
