There is a buzz going on about this place and when we showed up at 7:30pm on a Saturday night there was a decent size line up to the door. It took about 25 minutes for us to get to put our order in and get two custom bowls. The service was a tad slow, but we were very happy with the food when we sat down to eat. There is an incentive selection of bases from various fresh greens and grains I chose spinach, warm basmati rice and cooked lentils. Then you pick from a choice of proteins including steak, chicken, lamb meatballs, falafel and some others. You can choose types of hummus, whipped feta, baba ghanouj tatziki sauce, harissa to load up some flavor, and then all manner of toppings from pickled red onions, corn, charred broccoli, and many others. Each and every ingredient is fresh, flavorful and comes together in an awesome way to create a little taste adventure. Really enjoyed being able to completely customize the bowl. The dining room was in need of some tidying up. I was surprised to see that the fountain drink choices was a secondary soda fountain (not Coke or Pepsi) and various juice and tea choices. Wow, this place is awesome! The line was long which is expected as the food was delicious! It was my first time here, which I mentioned and the lady loaded my bowl up! So much so that the guy in front of me was like wait I'm gonna need more chicken too! I got the harissa avocado bowl and added fiery broccoli, it was amazing! The line went really quick when it comes to ordering, and there's tons of options if you decide you want to customize your own bowl. The bowl I got had a small kick to it, but the flavors were like a firework going off in your mouth. Mediterranean bowls and wraps that consist of what appears to be fresh ingredients is likely to replace quite a few of the meals and businesses that my tastebuds haven't reacted to in a long time. I've read all of the same comparisons to Chipotle. Besides the assembly of your meal, the comparison is insulting. I just realized I never reviewed Cava. It's definitely one of the places I eat at MOST in my area, so I don't see how I overlooked it. I have been going to Cava since the first week it opened. Since then, it has gotten really popular so I don't go as much unless it's on an off-day and time, when the line is NOT out the door. My favorite entree here is actually not even on the menu anymore: The White Sweet Potato Feta. It has grilled chicken, white sweet potato, saffron basmati rice, feta and two dressings. I usually get mine on the side. Even though this was taken off their menu, you can still get it if you ask for it, as long as they have sweet potatoes. We used to love it here but last night will prob be the last time going. Our son never ate here before so we wanted him to try. So my first and I thought only issue was I order my salad bowl and at the end this kid POURS on the harissa sauce like there was no tomorrow. Why??? So I am chilling on Tik Tok, as we do in 2022 (now 2023) and I come across this crazy page where they are making their own falafel, date vinaigrette, and all these hummus dips. So My plan for the year was to find it asap and try it all bec... it can't be as good as they make it on their TIK TOK! My husband made his own bowl and I made one of the pitas into a bowl. The Crispy Falafel is the perfect amount of Garlic and tang. I love it now. lol I did the cabbage and brown rice as a base. The pita chips although it is a small amount, it is exactly the right amount. I hate that it is sooo far from me and I don't know why there isn't at least one in Princeton.
