I have been a very long time fan of Caseus, but prior to today, my only experiences with them had been from their truck. I have heard incredible things about the vibe and experience of actually going to their shop from many close friends, all fellow foodies, some which are even friends with the Caseus team. With their raves and my existing love for their grilled cheeses off the truck, my expectations could not have higher. I even held off my visit for just the right time so that I was in a good mindset to take it all in properly! Somehow, I'd say my expectations were surpassed. Upon entering the shop, I was immediately warmly welcomed. Very comfortable vibe. They have lots of provisions (justifying their name), including sauces, condiments, and more. They have a refrigerated case with house made desserts and a variety of cheeses, as well as an additional case of more specialty cheeses. Their menu has many brilliant grilled cheese creations, the option to build your own or customize any of theirs with additional toppings, and a rotating special. I have been thinking hard about what I would order when I finally made it in, and I still struggled. Luckily, the person helping me was super passionate, sweet and happy to help and offer information. They described their top picks, one of which was one of my top contenders, so that was the winner. The Berries & Creme. It is their classic grilled cheese with the addition of Brie and house made blueberry compote. I believe all of their grilled cheeses have the classic (their house blend of cheeses) as the base. I am not a Brie fan, at all. I wanted to give it a shot, and knew that there was not a better place to do that than Caseus. I can't rave enough about the person helping me. They assured me that it was balanced and not overpowering how they incorporated it in, so I was excited to give it a go. No experience with Caseus would be complete without their tomato soup. The 8 ounce cup is the perfect accompaniment, and just the right amount to both dip and have a little extra to savor on its own. I browsed the shops pile they prepared my sandwich, and couldn't resist a bread pudding. They had 2 kinds today: sticky toffee and bananas foster. I was leaning bananas foster, but asked their preference anyway. Bananas foster it was! When my grilled cheese was perfectly melty and ready, I took my lunch to one of the tables outside to enjoy it fresh. There isn't any indoor seating, which I appreciate actually. Much better flow to the space that way. The grilled cheese was probably the best one yet. It may actually be the first time I haven't built my own. This was absolutely delicious. Perfect execution. Lots of extra cheese crispies around the edges. Plenty of butter without being excessively greasy, a major turnoff for me. I can't tolerate the mouthfeel either, so I was extremely impressed with how they prepared it. This is where you want to whip out the term "sandwich artist", because they are just that. They put so much care, thought and love into what they do and each and every sandwich they serve. Every customer and their sandwich is just as important as the next. The sandwiches are accompanied by grainy mustard and a couple of cornichons. I even get excited for that part! I use every bit of that cup. The tomato soup is perfectly creamy without being too rich or heavy. They let the deep, fresh tomato flavor shine. They cook it just enough so that it's a deep developed flavor but still bright. There is not better tomato or grilled cheese. I devoured it all, and still, upon arriving to my car, cracked open the bread pudding for a taste. I loved that it was extremely moist without being wet or overly saucy/sugary/caramely. It didn't read super heavy, while still being satisfyingly sweet. Plenty of nuts and banana. Soft, well saturated bread. It was perfect as far as I'm concerned. Really impressed. Caseus is all about perfect execution, or at least as close to perfect as it can possibly get. They are masters of their craft, and you just feel so much joy from both your interactions. With them and their incredibly tasty food. I am so thrilled I made it to the shop, and know that now I won't be able to stay away. Definitely check them out as soon as possible if you have not. I stopped in the other day for a toasted cheese with tomato soup, which was delicious! I could only eat about half of it so I took the rest home for dinner I added tomatoes and bacon to my sandwich, which was a little oily from the pesto despite my not being able to taste it. The place is cute, the stairs at the entrance are lethal, so take care going in and out. There is a small seating area in front and no lot, but room to park on the street. I poked around a bit while I waited for my order, the cheeses were unique and pricey as they are at every cheese shop I've visited, I may be back for some. read more

I just discovered this was here when I happened to be in Wallingford today, and I'm so excited! Caseus in New Haven used to be our favorite, and I'm always thrilled when I encounter the Caseus food truck around, so I'm delighted to know I can get an amazing grilled cheese whenever I want to now. It's mostly takeout, but there are 2 tables outside. My husband and I both had the French Onion grilled cheese with a cup of the tomato soup -- both were so delicious. The mustard on the side is the best ever. The friendly staff even accommodated my fussy son. There were all sorts of other interesting and enticing jars, bottles, boxes of food for sale, as well. Truffle honey, glitter cocktail mixers, sticky toffee bread pudding, as well as a case full of amazing cheeses. This place has very impressive Yelps and after going it's not hard to understand why. Grilled cheese everyone's favorite snack feels like a niche type of food and this place nails it. I got the Classic Grilled cheese and dipped it of course in some savory tomato soup. Happened to go on national grilled cheese day so they had a $5 special as well as the food truck out front which you can catch at various places. As a huge fan of their food truck, I had to take my husband to CP's shop to try one of their amazing gourmet grilled cheese sandwiches. The shop is super cute, and the cheese case is very impressive with a wide variety of fancy cheeses. The staff is friendly and they made our sandwiches so quickly! "I'm sorry to ruin grilled cheese for you" No you're not! You knew exactly what would happen when I took my first bite. BAC-ISH was great. You could really taste all of the ingredients and the heat from the hot pepper and onion relish were not overwhelming where you could really enjoy the flavors. I love how the bacon is chopped and you get a piece of bacon in every bite. Well executed cheese delivery. The Garden was fresh and the house made pesto was something I never would have tried myself but would definitely eat again. It takes the traditional grilled cheese and tomato to the next level. I was devastated when the Caseus in New Haven closed. It was a regular stop for me and I was always on the wrong side of the state to go to the food truck other than a couple of lucky strikes. When they opened in my hometown (even though I don't live there anymore) I was stoked. A new market for them, a whole new legion of fans. I love that the store is filled with all things charcuterie, whether you're looking to make one for you or someone else, they have everything you can think of! Talk about delicious! Hubs and I stopped in today for a quick lunch. We met Christopher one of the owners who is super sweet - we love great customer service! We decided to go with the Classic and the Cuban. I'm gonna be honest... the classic was definitely the best grilled cheese I've ever had! It was the perfect cheese to bread ratio with a buttery crust, and let's not forget the creamy yet tangy tomato soup I got on the side for dipping. Yummo! The Cuban was really tasty as well! Next time I would probably add some type of hot pepper just to give it a little kick. We grabbed some specialty chips and a chunky brown butter chocolate chip cookie that I haven't tasted yet, but can't wait to sink my teeth into later tonight! Honestly, I don't go seeking grilled cheese. I just don't. Why? I'd prefer to get my calories and carbs from brunch and drinks and wings. I was reading an article promoting new and opening businesses and there grand opening was today. My kids and I traveled to taste there famous grilled cheese they serve on there food trucks. We all ordered the Classic Grilled Cheese which is a mix or Provolone, Swiss, Gruyère, Gouda, Sharp Cheddar and Munster cheese. The grilled cheese was really delicious but for me it was too much cheese but that's what a grilled cheese is all about. It had the right texture and flavors with buttery, golden, crunchy edges and the bread they used was just right to mellow with all the cheeses. The service was great and for it's grand opening there was a good flow. The staff were really nice and you can tell they take there grill cheese very seriously. read more

I am ecstatic that cheese masters Caseus has a brick and mortar again. They used to have a beloved place in New Haven, and have been operating out of food trucks for a while now. This time, the storefront is in Wallingford, CT, which is really having a moment food and drink-wise. The Caseus grilled cheese technique and the finished product are off the charts. For my visit, I jumped at that French Onion. They start with a blend of shedded gruyere, comte and other Swiss Cheese. They put it on top of French sourdough and they allow the cheese to get melty before they cap it with the other piece of bread. They also grilled the pre-cooked onions to get them hot again. The grilled cheese had perfect color, texture and taste. Fantastic! Caseus also sells cheese and other gourmet products. I sampled and bought a few cheeses for home, including old favorites like Aged Gruyere, Comte, Triple Cream and Roquefort. All top notch versions. Chris from Caseus also recommend a Percorino Tartufo, which was a peppery Sheep's Milk cheese with awesome truffle flavor. A new favorite for sure. I just visited this place after reading many rave reviews. I was greeted by two lovely ladies. They were very helpful and friendly. After getting recommendations, I ordered the Classic Combo, grilled cheese with six different cheeses (YUM) and a side of tomato soup, very thick and rich. Great for dunking my sandwich in. As they said "Not your momma's grilled cheese". The sourdough bread made the sandwich absolutely amazing. The surprise little container of whole grain mustard and cornichons to go with my sandwich were appreciated. They also carry very different flavored potato chips along with many choices of beverages. They also carry cheese to purchase and a lot of different items, including the sourdough bread. The to-go packaging and many items including my aluminum water bottle, in the shop are very environmentally conscious. A very big plus. I sat outside and ate. Why? - The kind staff and owner behind the counter. Highly attentive and anxious to make your visit unique. - The outstanding flavor that is both unique and memorable. I've only had anything comparable (even close) in a café in Paris. Wallingford is much closer! I had the first item on the menu in the store (the classic I think). I'm going to promise and try every sandwich on the list. PS the invent your own sandwich looks compelling but I'll try the tried and true first. - The uncluttered store with additional excellent foods and cheeses. I bought a cookie and some bread pudding. Again, absolutely world class. I also really liked how there were tables outside, the food is served in classy little boxes that make sure the food stays warm but doesn't get soggy. Details matter. This place could have found a home in a half dozen international cities however we are lucky to have Caseus in Wallingford. I plan on making this at least a monthly stop to see what the chef/owner comes up with next. If I lived closer, it'd be more often. I drove from Mystic on this rainy Saturday to try Caseus, because grilled cheese is one of my favorite foods. All the grilled cheese options looked excellent and I ordered the "Pickle Pickle". The flavor combination of sour and salty is quite balanced. The grilled cheese chef (whose name I am blocking on) is a master of his craft. The bread was crunchy and not burnt and all the cheese was perfectly melted. All the flavors and textures melded perfectly. Additionally, Natalie, who tends the shop, is an enjoyable conversationalist. It was fun talking to her whilst my sandwich was being constructed and completed. Caseus also has an excellent selection of cheeses and smoked meats for sale. They also make their own cookies. I bought two brown butter salted chocolate chip cookies to bring home. I have eaten at the Caseus Food Truck a few times in the past, so when I heard they had opened a storefront in my hometown, I had to try it! The store itself is pretty cool, located on the first floor of what seems to be a two-family house on Center St. in Wallingford. This location was formerly Brunetti's Luncheonette, a well-known breakfast spot in town. At Caseus Provisions, you can purchase a variety of cheeses as well as some grocery items like crackers, cookies, jelly/jams, pasta, etc. They also have a new homemade mac & cheese which I am very excited to try! They offer a small menu of about six different grilled cheese sandwiches, as well as "build your own" toppings and their famous tomato soup. There isn't any seating inside, but they do have a few tables outside near the sidewalk where you can sit and eat. I opted for "The Classic" grilled cheese, which includes a mix of SIX different cheeses. It was so good! The bread was crispy, and the cheese was melted perfectly. It comes with a small side of mini pickles and mustard, which were very sour but good. I also ordered the tomato soup, which you MUST dunk the grilled cheese into for the full experience. Amazing combination! The service was very good! The staff (who I think were the owners) were very nice, and my order was ready in just a few minutes.
