I had the ramen, and I judge this pretty harshly because I have been to Japan. The ramen was good and flavorful, but there were some issues in my opinion. I was thrilled to find a new ramen spot that opened near my home so we came on a Friday night and it was busy but not so packed that there was a wait. We were immediately seated and the atmosphere was lively for a Friday night, definitely a great date spot for sure. We started with the shishito peppers which were tossed in a light sauce and dusted with a tangy and savory seasoning. Those were really good and not heavy so that we were still ready for our meal when it came. I got the dry garlic noodles with pork belly, a poached egg, shredded cucumber and scallions. The egg was perfectly poached and I loved mixing everything together, coating all the noodles in that beautiful, velvety egg yolk. That pork belly was perfectly seared on each side and I pulled it apart with my chopsticks so that I would have a rich, bit of Porky deliciousness with every bite. I got the creamy tonkotsu ramen and my sister got the shoyu ramen, with the shoyu being my favorite. They have limited options on the entree menu, only 4/5 ramen broths but a variety of appetizers. It tasted like the water that they steamed the edamame in. My vegetarian ramen had two snow pea pods, five pieces of bok choy, the "shitake" mushrooms were actually not shitake mushrooms and the broth was so full of sesame oil I couldn't taste anything else. Tasty ramen. I'm so glad to have Casa Ramen in the neighborhood. It's such a satisfying delicious dish when done right. Yet so many ramen places fall into the same old traps: the broth is too salty. Or the broth is delicious--at first--but too heavy, and weighs you down. Worst of all, but also common: the noodles are over cooked, rather than springy, and refreshing. This too, can weigh the dish down. Not at Casa Ramen! My ramen bowl was delicious and satisfying to the end. The broth had depth, without being too heavy. The noodles were springy, chewy, and just right; the pork, delicious. The combination, was an inexpensive and extremly satisfying dish that left me feeling great. The goyozas dumplings were also great. And the prices are low. Its what Ramen should be. read more
