We didn't have a reservation at Carversteak inside Resorts World Las Vegas, and over the phone they said nothing was available until 8 PM. With a flight to catch, I still had to try this place before leaving town, so we decided to take a chance and sit at the bar. Lucky for us, we snagged two seats next to each other--and wow... this might actually be the best steakhouse I've ever been to. First of all, Johnny--our server at the bar--was outstanding. The service was so attentive, warm, and on point that we genuinely forgot we were even sitting at the bar. He gave great recommendations and made the entire experience feel elevated from start to finish. We started with the Wagyu Cheesesteak Bites, and they were to die for--so tender, so cheesy, absolutely perfect. I'm not usually a ribeye fan (I prefer filets), but based on other reviews--and Johnny's enthusiastic recommendation--we went for the Wagyu Rib Cap 8oz. OMG. The crusting was unreal, the steak was melt-in-your-mouth tender, and it instantly became one of my favorite steaks ever. We also tried the Chilean Sea Bass, Brussels Sprouts, Kale and Autumn Apple Salad, and Potato Gratin--every single dish was beautifully executed and packed with flavor. We had also ordered the Roasted Mushrooms, but realized we had way too much food and tried to cancel them. The kitchen still brought them out and put them on the house as a courtesy for the wait--even though we didn't feel like we were waiting at all. Such a thoughtful touch that really speaks to their level of hospitality. From start to finish, everything about this place exceeded expectations--the food, the service, and the overall experience. If you're in Vegas and love steak (or just incredible dining in general), Carversteak is an absolute must. I'll be dreaming about that Wagyu Rib Cap until my next trip back! read more

Walked in with no reso on a Monday night for 2. The place is massive so I doubt you'd actually need a reservation for small parties. Long story short, the food is good but is it worth 320 USD for 2 people? Im not too sure. I think I'd normally rate this a 4 but it's getting a 3 for value. Food: Ribeye: cooked exactly the way I asked it to be cooked. No complaints. Potatoes: crispy on the outside, soft and fluffy on the inside. Aioli was good too. Chilli broccolinni: grilled and drizzled with chilli. This was actually better than expected. Hefty portion too, definitely to share. All in all, food was cooked exactly to specifications but nothing spectacular or unique. Service: Really good and attentive as you'd expect from such a place. They had you pick your own knife from a wooden box at the start of your meal as a gimmick. They also have tableside cocktails which we saw someone else do. Ambiance: Very very dimly lit. By far my favorite restaurant in Las Vegas. This specific meal: Our host was warm and welcoming. Our server, Jason, was professional and attentive. Thank you. The service: If you really watch there is much to be appreciative of. You notice nothing and everything at once. The front of the house moves with grace. The silent nods. The hand upon the chest. The attention to detail is unmatched. The water that is topped not too high and never reaches the bottom. The courses were planned with such precision and care. The service never missed a beat. This restaurant is a must try for an intimate dining experience. The dim lighting and modern, luxurious design set the mood right away. Our large group was seated in their private Whiskey Room, which was spacious and beautifully decorated. One detail that really caught my eye was the birth certificates on the walls showing the birth dates of classic spirits. We had a set menu, but they were accommodating to guests who wanted items from the regular menu. The appetizers were great, especially the jumbo shrimp cocktail and the wagyu cheesesteak sliders. The shaved wagyu on Texas-toast-style bread was definitely my favorite. For the entree, I chose the salmon. It was cooked well, but the skin was a bit overdone, making the filet tougher than I prefer. I like salmon medium so it's tender enough to cut with a fork. I tried the striploin tender steak and I should have ordered that. The sides were all very tasty, especially the mushrooms and mac and cheese. I'd definitely recommend this place if you're looking for a very nice dinner. But be prepared to pay $120+ per person. read more

Date night on Valentine's Day was very busy, upon showing up, I was greeted with a beautiful rose and seated at our table. It was so nice inside and smelled amazing. So many menus but especially their valentines menu was a favorite. We tried the main dishes people's rave about and they did not disappoint. The steak was decadent and perfectly cooked. I loved the service here. The only problem I had was getting food sickness after eating here. I didn't make a big deal or even say anything because my partner did not have the same experience and we ate the same things. Services was great (shout out to Morgan and Isaac) who were both very attentive and personable. We started with the crab cake, which was perfectly "lumpy" with slightly sweet and salty seasoning. I ordered the branzino, which was not what I was expecting as far as preparation and presentation, but i was pleasantly surprised. It was the perfect balance of umami and sweet. My husband had the boneless ribeye and that was an amazing texture with excellent flavor. We shared the asparagus and sautéed spinach. Everything was prepared well and we really enjoyed it. We also ordered the tequila old fashion which was also pretty good... unique, but good. We'll definitely be back as the ambiance is so nice... upscale, but not stuffy. There is a dress code but it seems relaxed during the summer. I thought the knife presentation was a unique touch. One of the servers brought out a selection of knives to choose from and I chose a finer one. This made the experience personal and fun. My medium striploin steak was absolutely perfect.. Juicy, flavorful, and beautifully seared on the outside. I paired it with a twice-baked potato, a Caesar salad, and warm blue cheese bread that was rich and indulgent. The next day, I randomly noticed the same word again -- Carvers. When it came time to make dinner reservations in Vegas, that same name popped up, and I decided to take it as a sign. Took some business associates from Japan here to celebrate a great 2025 and it did not disappoint. Obviously it's a steak house so you are doing yourself a disservice if you order anything other than that. We did try a few apps including the beef skewers, pork belly, and cheesesteak. All were excellent with the skewers being the standout. We ordered a variety of steaks but the table favorite was the classic Ribeye. Mine was cooked perfectly and seasoned well. Hard to beat a quality steak and you get to choose your knife from a several options which is a cool touch! Lots of sides to choose from but we landed on asparagus, mac & cheese, and creamed corn. The corn was my favorite but people also enjoyed the asparagus which was cooked well and shaved to remove the tougher lower portion of the stalks. If you enjoy wine, there are very few inexpensive bottle options so just be prepared and all of their drinks come at a premium. We also enjoyed a variety of desserts but the overwhelming favorite was the Baked Nevada... their take on a baked Alaska. Lit on fire and then sliced 6 ways, we did not leave this meal hungry! I will say that the marshmallow outside did get a bit burnt but was still really tasty. My only critique again here is the price... I don't mind paying for a great steak and the steak prices are actually very reasonable. However, everything else on the menu is super expensive including any of the additions or sauces you can add. We spent an excessive amount of money for a party of 6 so while it's probably worth it, just be prepared to drop some cash here for dinner! read more

Upon checking in for our reservation we were greeted with such a welcoming smile. "We're celebrating your anniversary? And we're so happy to have you join us for this special occasion" We were escorted to our table where a card was placed under a small table lamp... My wife and I have our go to drinks, and based on this knowledge, our mixologist gave us some recommendations. Personally I love an Old Fashioned Bourbon, but also I love good tequila. Hence the Alto Reposado Old Fashioned. Absolutely delicious. What's interesting is the chocolate crisp makes an excellent compliment same as a luxardo cherry would to the last few sips. While the decor and the service were all beautiful, romantic and worth an article on its own, I want to say that the food was absolutely the star of the experience! Folks - we have a winner! #4 on the stop and definitely the favorite. The order: Petite plateau ($120), Tomahawk 50 oz ($315), Mac and cheese gratin ($22), Creamed spinach ($16), Creamed corn ($21). Our first seafood "tower" was a delight. The lobster, mussels, clams (usually not my fav), and shrimp were perfectly cooked and chilled. Sweet, briny, succulent. Just delicious - all washed down with some bubbles of course. The main meal: The tomahawk is by far the biggest one we have had over the past several weeks and it was just delightful. Perfect temperature, perfect texture and perfect flavor. A trifecta of flavors making my tongue and tummy so happy. When something is this good, you just close your eyes and dream about when you can get it again. The sides were also just perfect. The mac and cheese - right amount of sauce, pasta cooked just right, the crunch of the gratin. Just yum. The spinach, sauteed with garlic and the creamed corn were also delicious. We washed down our main meal with a bottle of bottle of Bremmer Family Wines 2016 "Seek". You just couldn't ask for a better meal. I cannot wait to go back! read more

Located at Resorts World. I was excited that I was finally able to try Carversteak; since I had heard good things about it. Our server was Morgan and she was so attentive and friendly. She answered our questions and made our dining experience a fun one. For cocktails, I had their Old Fashioned and it was perfect. They have an extensive wine list and we ordered a nice Pinot Noir for the table. The sommelier was very friendly. For appetizers we had the Oysters Rockefeller (delicious) and the Giant Tiger Prawns (delicious as well and a beautiful presentation). My BF and I split a Baby Iceberg Wedge Salad which was great and plenty for both of us. They split it for us and it's presented nicely with half an egg and onion ring on each with the usual blue cheese dressing and bacon. For steaks, they come by with a beautiful wooden box and have you choose your steak knife. Different sizes and weights, I asked Morgan which one she liked and I went with her favorite. I had the Filet of Ribeye, 10oz, medium rare with the Black Truffle Butter and it was cooked to perfection. My BF had the Seared Scallops and they were absolutely amazing. The restaurant is beautifully decorated, it has natural light and the color scheme is lighter colors than a more traditional steak house. My best friend and I had dinner here last week and Zane was our server. He provided the best experience (even when we probably overstayed our welcome). He recommended an old fashioned for her, and I tried 3 versions of espresso martini recommendations (all amazing) and the martini cart - dangerously good. The martini was so smooth, it was hard to tell it was a martini. For an appetizer, we had the petite seafood tower and Wagyu bites. The Wagyu was in a lobster roll butter type bun and was the perfect size and taste. The seafood tower, I didn't prefer the clams but everything else was phenomenal. We split the F1 steak, perfectly medium rare, I considered truffle butter but it didn't need it. We had augratin potatoes and broccolini for sides. You can't go wrong with potatoes and cheese, and the broccolini was good but everything else was better in my opinion so I'd pass next time unless I really just wanted something green. We were given a panna cotta type dessert for her birthday which was the perfect way to end the meal. The best service I've had anywhere in a bit. Perfect from start to finish. The restaurant is located inside Resort World. Making the reservation was online and simple. Initially I was going to cancel because the email I received stated at night no small children but when I had called they said kids just had to be seated before 7pm. The decor inside was beautiful. We haven't been out with family in awhile so decided to come for some fine dining to celebrate. We ordered various dishes: brioche, wagyu beef skewers, black cod, seared scallops, jidori chicken, rib cap, asparagus, and Mac and cheese with lobster. The brioche wasn't anything special to me but all the other dishes were fantastic especially the rib cap domestic wagyu. My parents were pleasantly surprised at how delicious everything was. Staff was very nice. What left a bad impression and not sure if fault of resort world hotel or the restaurant but for staying with the hotel we were given $50 dining credit for each room. We had told the waiter who then suggested we split the bill for each room to get the proper credits. Upon checkout staff told us Carversteak is not one of the restaurants that the dining credit could be used. We felt tricked. Someone goofed because even the waiter thought we could use it. Located in resorts world...it's a long way from the front door... like really, maybe consider a tram or golf cart shuttle... that is my only complaint... staff was well turned out. I got the Kansas steak, dry aged very well prepared. They actually have a selection of steak knives to choose from... like they come out with a presentation box and you choose. Mine was very sharp and had signs of being sharpened regularly. I also had the potatoes au grat... which is French for cheesy potatoes... they were excellent... now a bit about the service. My waiter was James... well turned out possibly early thirty's with an epic handlebar mustache... he provided me with excellent service and other staff backed him up as a good crew will but my service aside ( and again it was excellent) I watched as an older couple was sat next to me. The lady mentioned chilled... within a minute James returned with a shawl. ( think the blanket granny kept on the couch. The lady was comfortably wrapped and no one on staff blinked an eye telling me this wasn't exceptional service as much as expected service. I'll say up front that this would be a five star review, if not for a fairly notable incident regarding my take away bag. More on that later. I dined at Carversteak recently with a group of seven. It was the crown jewel of dining for our group that was in Vegas for a six day stint, and in almost every way, it delivered. Perusing the menu, I was drawn to the Kansas CIty steak, dry aged for 28 days. Rounding out the meal was a side of onion rings and roasted broccolini. As I sipped the Paso Robles cabernet that we'd ordered for the table, I awaited the goodness. Our server asked if I wanted it sliced in the kitchen, and knowing it was a bone in steak, I opted for this. The steak was delivered picture perfect. Earlier, we'd participated in one of Carversteak's big presentation features, the selection of the steak knife. I selected a Damascus steel knife, I'll confess, largely because it looked cool and I know a little about how they're made. I drew my "weapon" (really, that's what they call it, see my picture) and began to dig in. This was the third time I've had dry aged steak, and this was by far the best of the group. It was a perfect medium rare as requested. It had been expertly liberated from the bone (still on the plate), and each piece was about two bites after further carving with my awesome knife. It had a rich, deep, complex flavor, and while not heavily marbled, the aging helped with tenderness, and it was just a joy to eat. Unfortunately, between the sides and table bread, I was unable to finish my steak, getting through about half of it. I asked for it and the rest of my wife's filet to be boxed up, and this is where the trouble started. When digging into the box back in our hotel room later, it was obvious that my Kansas City steak did not make it into the box. My wife's filet was there, and she enjoyed, but also in the box was... some other steak, seemingly not even from our table. It was clearly not the steak I had ordered and dined on in the restaurant; it wasn't dry aged, was probably a medium, and was just not in the league of the steak I had ordered. Honestly, it'd have been better if they just didn't put anything in, but to put someone else's leftovers in our box - this is unacceptable, hence my rating. I'd definitely go back to Carversteak, but this time, there's going to be some oversight of my takeout - this problem will not happen again. read more

Carversteak, Hit or Miss? Carversteak has been on my list since it opened, and we finally had the chance to try it last weekend for a couple of birthday celebrations. Maybe we came on an off night. We left unsure if we'd return. Service: (3.5/5) The restaurant acknowledged the birthday note in our reservation, which was a nice touch that they placed a couple of birthday signs on our table. The first impression was classic and upscale. We dined during Restaurant Week, though we hadn't planned on ordering from the RW menu. Still, it was surprising that the menu wasn't even offered, we had to ask for it multiple times. Even though we didn't end up ordering from that menu anyway, I feel like it's not being respectful to the non profit for being part of the restaurant week. Our main waitress was just average and lacked the professionalism I'd expect at a high-end restaurant. The busser (our secondary server) was warmer, more attentive, and checked in more often than our main server. The lack of strong service was one of the biggest disappointments of the night. Ambiance: (5/5) Beautifully decorated with a stunning bar, elegant patio, and stylish private dining rooms. The atmosphere is modern, classy, and upscale. Food: (3/5) We ordered seven appetizers, the tomahawk, four sides, and a couple of desserts. Some dishes were above average and some were below average. Hits: * Wagyu Skewers (4/5) * Greens and Burrata (4/5) * Korean Pork Belly (4/5) * Mac & Cheese (4/5) * Roasted Mushrooms (4/5) * Roasted Broccolini (5/5) * Cookie Monster Dessert (5/5) Misses: * Iceberg Salad (2/5) * Singapore Sling & Old Fashioned (2/5) * Cheesecake (3/5) * Tomahawk Steak (3/5) - Ordered medium rare, but it came out medium and slightly overcooked, which was disappointing for such a signature item. *Corn and clam chowder (2/5) Overall: It was an okay experience. Had a tremendous experience here for my bday! Food was excellent and highly recommended! Service was A1 too!! Ambiance was 10/10 We started with the waygu cheesesteak bites (wow! I don't have enough great things to say about this) Yellowtail carpaccio! Absolutely delish and would have 10 of these dishes along with the cheesesteak For entrees we got the salmon and the wagyu rib cap! Salmon was done perfectly and had a great sauce to go with the fish The rib cap was perfectly done and extremely flavorful didn't even need any sauce! We got the broccoli that was out of bounds! We got the twice baked potatoes but that was underwhelming tbh. Slightly disappointed in that side. Drinks we got Tropical escape which is like the pornstar drink but with tequila! 10/10! This was my 2nd time at Carversteak to celebrate my birthday with my girlfriend. The 1st time was outstanding, so why not return and enjoy it again. This most recent visit was just okay. Made dinner reservations on a Sunday evening. We were seated on time and for whatever reasons, seated basically in very back of the restaurant in a tiny two person booth which also serves as a walkway for a majority of the staff. You literally have a view of nothing in this area which is also near the back patio doors that get left open constantly allowing a cold draft enter. That was off putting, especially considering we came dressed very nice to have dinner, above and beyond the typical business casual dress code that Carversteak requests. Our waiter was a kind older man and initially provided kind and friendly service. We ordered drinks to start off with and placed our dinner orders. Shortly after getting our drinks, a woman came to our table and introduced herself as the operations manager, she asked how things were, well at that time things were going fine. Now the food itself I would say took a very very long time to come out. We got checked on twice, first by our waiter and second by I believe his helper? Were we supposed to get bread and butter ahead of our dinner? I don't know. I remember on the first visit we did....hmmm. Food finally arrived and it was great, we both cleaned our plates. Our waiter asked if we'd be having dessert and we declined, but he did mention at least make some room for the complementary birthday dessert, we definitely agreed yes to. Well that birthday dessert no joke at the very minimum took a solid 25 minutes. When our waiter finally showed up with the slice of dessert I kindly mentioned "wow that took a very long time" he replied with "I agree, Happy Birthday" and set the plate down and walked off. My gf and I looked at each and said to each other "what the heck, that was rude. Our waiter soon returned with the check and said have a nice evening and happy birthday, I said thank you. At that point I was personally over it, I said to myself it's my birthday I'm not going to let this ruin my day when really I wish that operations manager would been around so I can offer my feedback. Resorts World is my favorite place to stay and without a doubt we will not dine again at Carversteak. The entire experience from start to finish should be outstanding and this was simply not. If you're going to seat people in the back of the restaurant where no one else is, then how about seating all the people that come in wearing t-shirts cargo shorts, baseball caps dine back there. I was hoping Carversteak would be our go to steak house restaurant when staying at Resorts World but we'll be going elsewhere to be better appreciated especially when coming to celebrate a special occasion.
