    Such a nice night dining at Carver. We started with the beet and Burratta salad. It was beautiful and so good. The beets were great and the citrus was a really nice nad fresh addition. The striploin steak was perfectly cooked and sliced. The corn side was so good and the potatoes were decedent and delicious. I got the lobster tail which was cooked well but I think I would've liked it better with just clarified butter and lime instead of the miso sauce. Sauce wasn't bad but I think it would've been better with the more simple butter dip. Service was 10/10. Zane was very knowledgeable about the menu and gave us some great suggestions. The staff all checked in and were incredibly kind and helpful. Can't wait to go back for another awesome meal.

    Came here during a trip to Las Vegas and had a great dining experience. Located inside Resorts World, Carversteak offers an upscale steakhouse atmosphere with excellent food and attentive service. One unique touch was being able to choose our own steak knives before the meal. We started with the crab cake, Caesar salad, and Wagyu cheesesteak bites. The standout appetizer was definitely the cheesesteak bites. Served on buttery Parker House rolls, the Wagyu and cheese were incredibly tender and melted in your mouth. For our entrees, we ordered the ribeye and rib cap cooked medium rare. Both steaks were perfectly prepared, well-seasoned, and packed with flavor. The chimichurri complemented the richness of the beef without overpowering it. To end the meal, we ordered the Baked Nevada dessert, which was flamed tableside. It was light, refreshing, and not overly sweet thanks to the combination of sorbet and vanilla ice cream. From the quality of the food to the polished service, Carversteak delivered a memorable steakhouse experience. If you're looking for a great steak dinner in Las Vegas, this place is definitely worth a visit.

    Walked in with no reso on a Monday night for 2. The place is massive so I doubt you'd actually need a reservation for small parties. Long story short, the food is good but is it worth 320 USD for 2 people? Im not too sure. I think I'd normally rate this a 4 but it's getting a 3 for value. Food: Ribeye: cooked exactly the way I asked it to be cooked. No complaints. Potatoes: crispy on the outside, soft and fluffy on the inside. Aioli was good too. Chilli broccolinni: grilled and drizzled with chilli. This was actually better than expected. Hefty portion too, definitely to share. All in all, food was cooked exactly to specifications but nothing spectacular or unique. Service: Really good and attentive as you'd expect from such a place. They had you pick your own knife from a wooden box at the start of your meal as a gimmick. They also have tableside cocktails which we saw someone else do. Ambiance: Very very dimly lit. Extremely upscale. Super pricey.

    We didn't have a reservation at Carversteak inside Resorts World Las Vegas, and over the phone they said nothing was available until 8 PM. With a flight to catch, I still had to try this place before leaving town, so we decided to take a chance and sit at the bar. Lucky for us, we snagged two seats next to each other--and wow... this might actually be the best steakhouse I've ever been to. First of all, Johnny--our server at the bar--was outstanding. The service was so attentive, warm, and on point that we genuinely forgot we were even sitting at the bar. He gave great recommendations and made the entire experience feel elevated from start to finish. We started with the Wagyu Cheesesteak Bites, and they were to die for--so tender, so cheesy, absolutely perfect. I'm not usually a ribeye fan (I prefer filets), but based on other reviews--and Johnny's enthusiastic recommendation--we went for the Wagyu Rib Cap 8oz. OMG. The crusting was unreal, the steak was melt-in-your-mouth tender, and it instantly became one of my favorite steaks ever. We also tried the Chilean Sea Bass, Brussels Sprouts, Kale and Autumn Apple Salad, and Potato Gratin--every single dish was beautifully executed and packed with flavor. We had also ordered the Roasted Mushrooms, but realized we had way too much food and tried to cancel them. The kitchen still brought them out and put them on the house as a courtesy for the wait--even though we didn't feel like we were waiting at all. Such a thoughtful touch that really speaks to their level of hospitality. From start to finish, everything about this place exceeded expectations--the food, the service, and the overall experience. If you're in Vegas and love steak (or just incredible dining in general), Carversteak is an absolute must. I'll be dreaming about that Wagyu Rib Cap until my next trip back!

    This restaurant is a must try for an intimate dining experience. The dim lighting and modern, luxurious design set the mood right away. Our large group was seated in their private Whiskey Room, which was spacious and beautifully decorated. One detail that really caught my eye was the birth certificates on the walls showing the birth dates of classic spirits. We had a set menu, but they were accommodating to guests who wanted items from the regular menu. The appetizers were great, especially the jumbo shrimp cocktail and the wagyu cheesesteak sliders. The shaved wagyu on Texas-toast-style bread was definitely my favorite. For the entree, I chose the salmon. It was cooked well, but the skin was a bit overdone, making the filet tougher than I prefer. I like salmon medium so it's tender enough to cut with a fork. I tried the striploin tender steak and I should have ordered that. The sides were all very tasty, especially the mushrooms and mac and cheese. I'd definitely recommend this place if you're looking for a very nice dinner. But be prepared to pay $120+ per person.

    The caviar poppers were a perfect start, and the lobster en croûte was rich, flavorful, and beautifully presented. The service was attentive, and the atmosphere felt elegant without being too formal. Definitely a memorable dinner!

    EXCELLENT EXPERIENCE I want to preface with everything that our server recommended was a winner. Everything that we decided to order on our own definitely fell short of expectations. Server's recs below - we would have taken the other recs of the creamy potatoes too however we were not too hungry at that time and wanted some light dishes Wagyu Cheesesteak bites - so rich, with tender wagyu, buttery brioche bun, creamy sharp cheese, this was so good Rib Cap - done to perfection! love the crispy crust. there were no chunks of fat, everything was well marbled into the meat so that there was no gummy parts. You can pick a hot knife from their box set, which was a unique experience. Horseradish - SO FRESH, SO GOOD! it really was such a refreshing powerful kick that went will with the meats Dubai Chocolate Sundae - LOVE the pistachio paste with the crispy filament cookies. the ice cream itself was not too sweet and rich/creamy, with a strong real chocolate presence. the strawberries were pristine and unbruised. Our orders: Half dozen oysters - some were dry like they've been shucked a while ago and sitting out , and some had miniscule meat compared to the others. IMO, they should've tossed the bad/very thin ones and kept a minimum standard of size and juice Broccolini - THICK stems , you could get better quality at Costco with younger thinner stems but with a retained rich flavor Matcha Cocktail - well balanced with vanilla Season's Essence - tequila and mezcal cocktail - would have preferred it to be less sweet, but it does the job if you like sweet and strong Service from everyone was excellent - frequent water refills, frequent check ins, a cocktail cart, excellent knowledge of the menu, and nice touches as someone comes to immediately fold your napkin when you leave the table to go use their restroom. Ambience was clean, classy, large and fancy. the bathroom stall itself is the size of a new york studio. there was all sorts of cute seating. it was a luxurious feel to everything. Overall, I recommend to come for a special occasion and to just follow your server's recommendations solely. I would return again as it was an excellent experience!

    Food was amazing! Our server was very knowledgeable in the menu. Helped us pick out what was good on the menu. We went with the dry age Kansas City Steak, and it was amazing. Drinks were good. Not badly priced either, I recommend this place for anybody.

    We came at seven for our reservation and while it took a few minutes to seat, we had a great table on the "porch" area. We had a rather large party but CS was on it the entire meal! Staff were great! The food was while very expensive, it was an amazing meal. Got the full ribeye cooked to perfection! Sides were great and I can say the onion rings were perfect, crispy and crunchy! Finally stuffed we left happy! Can highly recommend, but plan on spending $ 125 per person minimum.

    The cheesesteak appetizer was the star of the show! Unfortunately everything else fell short of expectations. While service was attentive, the rest of the food (rib cap, mac n cheese) was mediocre at best compared to other spots in Las Vegas. Ambiance had no view which was a missed opportunity.

    Date night on Valentine's Day was very busy, upon showing up, I was greeted with a beautiful rose and seated at our table. It was so nice inside and smelled amazing. So many menus but especially their valentines menu was a favorite. We tried the main dishes people's rave about and they did not disappoint. The steak was decadent and perfectly cooked. I loved the service here. The only problem I had was getting food sickness after eating here. I didn't make a big deal or even say anything because my partner did not have the same experience and we ate the same things. Unsure what that was about but the experience really was great.

Once I stepped foot inside and saw a completely packed house with an hour and a half wait and barely standing room at the bar, I knew it was worth whatever wait or process I had to go through. Not only was the service absolutely top notch, the people and the regulars there were extremely friendly and outgoing. The vibe was perfect, a strange mix of a place that felt like it had been there for 200 years yet was somehow high energy and vibey. From a killer cocktail recommendation to one of the best steaks I've had in my life and coming from Oklahoma City, where I work a mile away from the stockyards and can get great quality fresh beef six ways from Sunday, that's saying a lot. I usually despise most things truffle but if I was forced to eat that truffle mac and cheese every day for the rest of my life I would consider it a life well lived. While I would have never ordered it on my own, a customer next to me recommended the porn star cocktail and I have to say it was also one of the most delicious things I've ever had in my life. Ten out of ten, top notch experience. Would recommend. Will be back every time I'm in Vegas, no questions asked.

However, the bottom portion of the tail, where it had been placed back into the shell after cooking, was tough, chewy, and slightly discolored. I ended up eating only the top portion because the rest just wasn't enjoyable. At $111 for the lobster tail alone, I expected exceptional quality from beginning to end. Overall, I'm glad I experienced Golden Steer. The ambiance, history, and exceptional service absolutely live up to the restaurant's reputation. For me, though, the lobster didn't justify the price. It's a fun place to experience at least once, but based on the quality I received for the cost, it's probably a one-time visit.

One important thing everyone should know before coming here is that they only have 1 steak option. You can get it for 1, 2, 3 or 4 but it is basically a t-bone so you get the filet side and strip side but all together. You can't just get a filet. You can't just get a ribeye, etc. Because of this, it presented a problem in that my wife and I like our steaks at very different temperatures. So, we got it medium rare for her and once it arrived I had to take a few pieces and have them cook it some more for my preference. Although they developed a nice crust on the steak, the flavor of it was just not great. It seamed relatively unseasoned and I'm guessing it is why they give you a large bowl of steak sauce at the table and they urge you to use that for flavor. I wasn't a fan - it was very spicy and had a horseradish taste. I did like the French fries - they were probably the best thing I had all night. Crispy outside and pillowy soft inside. They were well seasoned. We also thought the asparagus was ok. For dessert, they ended up being out a sundae for my wife but never even offered to show us the dessert menu and I would have tried one of their other desserts had they done so, as I had done my research and knew what was available. Free is nice but it wasn't what I wanted and so that was another miss. The ambiance of the restaurant is nice. It is slightly on the modern side and has a NY feel which makes sense given the original is from Brooklyn. I really wanted to like this place and we had saved it for the last night of this trip. It was very disappointing for it to not be like all the other high end steakhouses we have been to in Las Vegas. It was hard for me to decide what number to give it. The service was all over the place from the start to the end. I appreciate that they did want to make things sort of right, but in the end, the food was just ok and thus the experience was just ok, and when you are spending that much money on a fine restaurant, ok is not ok. There are so, so many excellent choices for steakhouses in Las Vegas that I cannot recommend coming here. The manager's effort to try and make things right are the only real reason it is getting this high a rating. If you decide to give it a try, I hope your experience is better than ours.

Unfortunately, after several visits, I felt compelled to share my honest experience. The first area that needs improvement is the greeting and reception downstairs before you're seated. On more than one occasion, we felt the staff lacked warmth and enthusiasm. First impressions matter, and guests should feel welcomed, not as though they're inconveniencing the staff. With better coaching and customer service training, I believe this could be easily improved. We visited several times for brunch, and unfortunately the experience was consistently disappointing. The breakfast plates arrived lukewarm, the eggs were not prepared particularly well, and the meals simply weren't very appetizing. Breakfast is one of the simplest meals to execute well, and serving hot food on properly heated plates would make a significant difference. The service also left room for improvement. While the staff was polite, we never felt the level of attentiveness or hospitality that you would expect from a restaurant with Echo & Rig's reputation. We also returned for dinner, hoping for a better experience. One thing that really puzzled us was the separate steak menus. The standard steak menu felt underwhelming, while the premium menu was priced well above what I would expect, even compared to several outstanding high-end steakhouses in Las Vegas. If you're promoting yourself as a premier steakhouse, I believe the menu should reflect one consistently high standard rather than separating the experience into different tiers. Our dinner service was also quite slow, and our server came across as somewhat sarcastic at times, which made the experience less enjoyable. I offer these comments as constructive feedback because I genuinely want this restaurant to succeed. Echo & Rig has an excellent location, a beautiful concept, and tremendous potential. I believe management should continue investing in staff coaching, customer service, kitchen consistency, and simplifying the dining experience so guests receive the same high-quality experience every time. I sincerely hope these observations are helpful. I wish the ownership and management continued success and hope future guests have a better experience than we did.
