Beef short rib & bone marrow, with tomatillo, serrano chile and papalo (some more of the relish would have been even better)
    Neil M.

This was first visit to the Smorgasburg in Williamsburg on my birthday, so me and my girlfriend decided to try at least 12 things in a little over 3 hours. As I was walking past Carnal, the queue was one of the longest and I decided to stand in line too, after taking a look at their menu and presentation, given that they're serving ribs, which isn't exactly something on a fine dining menu. An almost 30 minute wait till I could order the beef short rib & bone marrow (with tomatillo, serrano chile and papa lo). Another 10 mins and I heard my name called out, and I walked back to my girlfriend, delicately holding the rib, feeling like royalty. Carnal is easily one of the best options at the Smorgasburg. The ribs were extremely well seasoned, a slight crisp on the outside, immensely juicy on the inside, and the tomatillo relish on top was an excellent complement to the fattiness (would have loved some more of it though). I do regret not trying the (48 hour smoked) pork shoulder sandwich, but we already had had a few things waiting in line for the ribs. At $14, this is VERY reasonably priced since the portion is more than generous, and it's also one of the tastiest items at the Smorgasburg IMHO. It would be amazing if this talented team opens up a more permanent establishment and continues to impress us! P.S. We managed to try 13 different things, and also had dinner after 5 hours.

Visited Carnal at the Smorgasburg in Williamsburg this past weekend. I ordered the beef short rib with bone marrow, topped with a cauliflower and papalo mixture. The rib was SO good. The meat slid right off of the bone, it was tender and delicious, and the topping was a nice compliment. Definitely worth the wait and the $16!

I came to the smorgasburg on a hot summer saturday afternoon and knew Carnal was on my list. Its a must no matter the hefty price tag ($18) or the long line. But HOLY COW! Wow this short rib was bigger than my hand! No exaggeration. The relish they top it of is sweet savory and tangy. The meat was soft and juicy which reminds me, dont forget to get extra napkins! This short rib was incredible to say the least.

The best smoked pork shoulder I have EVER HAD!!! It was so great that I can't wait for next weekend to try the ribs! The pork shoulder is severed on a crispy toasted bun with a sauce and mint!! Just writing about it make my mouth salivate. It's seasoned to perfection with just the right amount of everything in one bite. The pork itself is moist, tender, and juicy inside-- the outer layer is crispy to perfection and not burnt like some places do. I highly recommend this place!! I will keep you posted on the next mouth watering adventure of the ribs!!

This place has the biggest line in shmorgusburg, and rightfully so. I promise you that you will not regret standing in line for this meaty heaven on a bone. The meat is flavorful, soft, and absolutely delicious. We got the beef short rib; which was topped with bonemarrow with garlic and brocolli mixture. It was out of this world delicious. I remember visiting the place when these guys just started out, and the price was $16 than just like it is now. I think that they would have the same line if they would charge $20, but I'm glad they stay with the same price. These guys work hard, and don't sit for a second. Hopefully they will continue with their cooking goodness, because people will surely continue coming.

Experienced the absolute mastery that is the Carnal Short Rib at smorgasborg. You might wonder why it costs so much - until you bite into it. Umami deliciousness to the max. You'll be dreaming about it for months to come. The toppings and sauce they put on it add an excellent balance to the meat. Drooling just thinking about it.

I wish they had a restaurant but for now, we have to settle for finding them at local events. Their beef short rib is truly the best out there. It's very large, extremely flavorful and super soft -- the meat flys off the bone and the spices are damn good. The bone marrow on top is a great touch. It will set you back around $16 and while some people think it's a hefty price tag, I believe that they should raise the price to at least $20.

So I came here on 4/30 and as usual there were a ton of people. We waited 30 mins in line for a piece of meat! The grill master was impressive and if I didn't have as much food prior to having this as my last dish, I probably would have enjoyed it more! My fiancée had a piece of the juicy meat and stated that even though shes full, she couldn't waste this delicious piece of meat so ended up eating the whole rib we were sharing! Perfectly cooked juicy meat. Definitely a great value since they give you a huge rib for $13. Best bang for your buck in Smorgasburg!

Had the pleasure of checking out some smells at smorgesborg and i was NOT disappointed. Though only offering 2 items.. Between a beef short rib and a 48 hour pulled pork shoulder with smoked lard and avocado..aaahhhh...u can't go wrong. I tried the short rib. The guy is out there on the grill just hook line and sinkering the crowd into line with them smells. Though the line was long, it was quick... And the 15 minutes of waiting for food prep well worth the wait. The short rib on bone... So juicy and tender with a crispy layer crusted over a nice delicate layer of mouthwatering fat over the beefy goodness of the rib. The pineapple salsa added a sweet coolness which really complimented each bite. I will get this and their other item again.. And again.. And again. Actual rating would be closer to 4.75 for me.

Juicy, chewy, beefy deliciousness. The salsa topping the short rib cut through the fatty meat and made the experience all the more ethereal.

The short rib was pure deliciousness. The guys would even cut out the fat to make a leaner cut. Smaller pieces of ribs are compensated by an extra piece of meat for fairness. The topping added freshness.

Pricey, but good. The largest ribs I have ever seen or eaten. Lean meat, well seasoned and tasty. Loved it and easy to eat on the go.

The $10 pork shoulder took an incredible amount of time despite zero line (as smoke billowed out, assaulting the lungs of everyone on that half of Smorgasburg), and they're cash only. Not a great product, either.

If you want to pay in cash, make sure you have the exact amount. The meat was so flavorful and the fat was rendered beautifully off of the meat! I'm docking 1 star because they had accidentally given us 4 skewers instead of 5 that we ordered when they gave up the skewers wrapped in tin foil, anddddd after consuming the skewers did we realize we did not get the variety we ordered, but instead 4 lamb and 1 chicken gizzard. The lamb was honestly so delicious though we weren't even mad!

I stopped in on a Saturday afternoon and found the restaurant moderately crowded. We were greeted promptly and seated upon entry. I found the space comfortable and relaxed. Our waiter was polite and attentive. We ordered the corn bread as an appetizer. I prefer sweet cornbread versus jalapeño, so it wasn't my thing. However, my cousin is the opposite and she really enjoyed it. I ordered the pulled pork sandwich, greens, and biscuit. I didn't care for the greens, but the biscuit and pulled pork was excellent. My sister had the ribs, greens, and dirty rice. She didn't like any of her food. She said the ribs had a lot of gristle. There was very little meat on the bone. I tasted the rice and agreed with her assessment. It wasn't that good. Our cousin had the chicken, mac-n-cheese, and baked beans. She liked her food. My cousin had been to Virgil's before many years ago and said this experience mirrored past ones. We all ordered dessert as well. i had the strawberry shortcake, which wasn't great. The strawberries were fresh, and I liked the whipped cream, but the "shortcake" was actually the same biscuit that was served with my meal. It wasn't sweet enough and just didn't work well. I ended up picking over the dessert, so most of it went to waste. My sister had the key lime pie which she didn't like. My cousin had the banana pudding which she enjoyed. Overall, the experience got mixed reviews, but I'd visit Virgil's again in the future for sure. The bill ended up being about $150 plus, if I recall correctly, because we ordered alcoholic beverages as well.

We got the large beef combination platter which comes with ribeye, thin skirt, brisket, marinated kalbi, and marinated chuck flap. Most people stuck with water, while a couple got ginger ale. I ordered the soju flight but I ended up not liking it so my cousins shared it. The meal comes with different veggies as well as your choice of soup. We got the spicy tofu and split it 6 ways. The spice lived up to its name, so I didn't eat very much. The best part was meat. Despite there being 6 of us, there was plenty to go around. I think you have the option to cook it yourself or have them cook it for you and we chose the latter. While I enjoyed it, I wish there was more space. Most of the space was taken up by the accompaniments that come with it (veggies, etc), so there was hardly any room to put anything else. It didn't help that none of our dishes were cleared once we finished them and that no rice is included. Aside from that, both the food and service were great.

Since our program covered the expenses, we didn't pay anything out of pocket. Now I enjoy a good BBQ cookout at home as much as the next family, but don't care for it as a dining experience. My employer catered BBQ luncheons from time to time, and even then I wasn't crazy about it. Here in Hill Country, a room was reserved for us (party of 36). Our dinnerware resembled army mess tins lined with sanitary papers; our glasses resembled moonshine jars complete with screw threads at the rim for lids. Our dinner was a catered set of longhorn cheddar mac & cheese (quite good), sliced brisket (meh), market chicken (a little tough), fresh baked cornbread (dry & hard) and collard greens (good but could be saltier). I consumed massive amounts of mac & cheese and collared greens to help swallow down the almost rock-hard cornbread. Desert was chocolate chip cookies (that wasn't bad). Some members of the group ordered liquor (at their own expense) to celebrate the good time they were having. Customer service was less than stellar. The waitress did not inform us that soft drinks were complimentary until after we finished eating. That wasn't all. The restroom was located downstairs past the bar room. During my two visits - before and after the food was served - the same staff member was there cleaning. He had just finished the sinks when I went in the first time. On the second visit, the front door was blocked from the inside by a pail - he was mopping the floor. Couldn't he have waited till the off-peak hours to do that?? Customer service and cornbread were enough for me to not recommend this restaurant.
