I expected Mike to have a good grasp on cooking up meat, Texans usually do (or at least should), but I was still pretty damned impressed when I tasted that brisket. I loved his approach to sourcing ingredients, supporting small farming programs by local youth. One thing not to be understated was how well the meal timing was managed. The California coast gets real cold real quick, and every dish was brought out hot enough to warm you to your core (truly a feat for anyone who has even tried to grill burgers on the beach for more than four people.) Loved the pork belly, loved the shrimp and grits, absolutely loved the mexican street corn. Only complaint was that I broke the wooden fork that was set out for me, but thats kind of my fault for eating like a neanderthal. Almost forgot that balsamic ice cream. Damn that was great. Looking forward to visiting the truck in Lockhart sooner than later.

You enter the building and are immediately in front of the pit and even some open fire. You order your meat from the guys and pay there. Then you can go into the dining room and order sides, or just eat your meat like we did. They aren't kidding when they say "no forks." They just give you knives, but the brisket barely needs a knive.

As we walked in at 10:30, there was no line. We asked for the simplest order. A single slice of brisket and a single slice of turkey. It was about $12 all in. As we sat down with one of the 4 pieces of butcher paper for 2 slices of meat, I noticed that there are no forks at Smitty's. Just knives. We got to work. The turkey was fantastic. Barbecue turkey is honestly an underrated concept and their turkey was juicy, soft, and would change any Thanksgiving meal to one for the history books. I was extremely disappointed in the slice of brisket though. It was extremely chewy like plastic. Decently seasoned but not tender at all. Probably a bit undercooked. It was worth visiting for the experience, especially to get a picture next to the fire pit, which one of the people on staff was nice enough to take for us. She greeted us with a smile and had some great suggestions, which we took and were not disappointed. Aidan G and Chris at the meat counter and register were also really good. Both were patient and friendly while we decided on what to get. Overall, we had a great experience, the food was excellent and the staff were friendly and outgoing.

One of the highlights was getting to walk by the pits and chat with the staff. They even gave us a little tour and explained the smoking process. You can tell they take a lot of pride in what they do. We ordered the Large Family Pack for the group, which consists of 6 lbs of meat and 5 quarts of sides. We also added a beef rib to the order, and there was more than enough food for everyone. In fact, we still had leftovers. We tried the brisket, beef ribs, pork ribs, turkey, and jalapeno cheese sausage. For sides, mac & cheese, Mexican rice, potato salad, cream corn, and cole slaw. Everything was delicious, but my personal favorites were the cream corn and beef ribs. I've been to a few Terry Black's locations, but Lockhart is the one I'd gladly go back to again and again. Great barbecue, great people, and a great experience.
