Fantastic California-sourced drinks from a knowledgeable team. I was a bit too tipsy and loved the drinks too much to remember to take pictures so I will try to describe it as best I can. They have a bunch of liquors: a blonde rum, spiced rum, barrel aged gin and regular gin. There's an option for a tasting flight to try them and I would highly recommend that. The drinks are fantastic! I only got three drinks so I'll list them below: Wiseman: Made with blonde rum, blueberries, sage and lemon. This was my favorite drink because it was sweet and went down so smooth. Generally I'm a fan of whiskey and don't really like rum but gosh darn it, Aaron is onto something because this was absolutely wonderful. Fizzy Lifting Drink: Made with gin, rhubarb and soda. This was great because it was also sweet but not as sweet as the Wiseman. Old Fashion: Made with both rums instead of whiskey. This was wonderful! It was different from a regular old fashion because of the rums but I found that I did not miss it but accepted that it was unqiue and relished the newfound flavors. They also serve food although I did not eat any because I'm lactose intolerant and we had the Spanakopita. But my friends loved it and were raving about the hot sauce. 10/10, would definitely visit again. Also it looked like a Firestone was opening nearby so this is definitely a stop for wine and/or beer tours. read more

A party of us visited this place this weekend. The drinks/whiskey were good, but our server was awful and left a LOT to be desired as far customer service is concerned. When dealing with the public, having a bad day is not an option nor good for business. This dude should have stayed home this past Saturday. My wife still left a tip (so she told me later after we had left) that was I'm sure way too much for a poor service from the server. read more

Haven't been here but will make sure it's my first stop for the COVID-19 after party. I live in Ventura County and this email message we received this AM from our sheriff's department (not sure if picture will post in the review but they turned their distillery into a hand sanitizing facility and donated 15 gallons of disinfected spray to our Ventura County officers) was the best one I've ever seen. I came here as a suggestion from a tour I was on and it was the highlight of the day. Half of my group did a spirits tasting and the other half bought a bottle of a mixed cocktail to share. The mixed cocktail was so good I'm sad I didn't buy a bottle to bring home. Leo walked us through the spirit tasting and was probably the best part of our experience. He was sarcastic, hilarious, and really knowledgeable about the different liquors we were tasting. Would definitely recommend this to anyone who visits Paso. read more

This distillery is amazing. Their products are top shelf. My favorites are the fabulous Barrel Reserve Orange Liqueur and Grandpas Coffee infused Rum. You will never use Grand Mariner again once you taste the Orange Liqueur. Top off a margarita and it is a Cadillac. Aaron has numerous fabulous recipes to use it in as well. Grandpas Coffee makes the best White Russian I've ever had. The spirits are remarkably smooth. This was a real plus in my opinion. I would suggest joining the Calwise Club for great discounts and bi yearly or quarterly specialty packages. Calwise is now on my go to list of places in Paso Robles from now on. read more

A fabulous addition to an already incredible town. The skillfully mixed cocktails are amazing. They are amazing because of the spirits carefully created, Field Use Vodka, Big Sur Gin, Spiced Rum, which are mixed with pure elements from nature-Cranberry Syrup, Raw Sugar Gomme, Spiced Apple Cider syrup, to mention only a few. We went to the Christmas Tiki Trivia Party. Food was a little overpriced. $10 for a 6inch personal pizza. The spirits were pretty good, but because they weren't legit Tiki drinks(traditional tiki, using the coveted recipes) it was a little overpriced for that reason . But they were Good - I will give them props for that. They have the tiki trivia often. But I think they use the word "Tiki" a little loosely and it is not the way I would describe it to someone who follows Tiki Bars who will be expecting something else... Trivia questions were ridiculously hard, hard to be enjoyable. There were people using their phones for the answers which makes it not fun to play.... For being advertised as a christmas tiki "party," I feel like there should have been a little more hospitality - passed appetizers, a cheap tiki souvenir, a dollar off for anyone wearing a tropical shirt, something- ya know? The atmosphere was nice, the service staff very friendly. The bartender was quick. I think if I came here any other night with different expectations and not "tiki", I would have enjoyed it a lot more. I will try again in the future for a second chance. read more

Really exceptional place! Distiller knows what he's doing & consistently has something quite intriguing in the works. Everything has an authentic California twist. Excellent bartenders: skilled, friendly, and consistent! Try their cocktails! Perfectly balanced & most (if not all!) ingredients (including mixers) made in house. Not a mai tai fan and yet theirs is one of my favorite cocktails! They are so special we became members! Great membership boxes, complete with fool-proof recipes. Super fun events. Sure, there are a bunch of distilleries popping up in the area. But go here first. You won't regret it! Oh, and they have tasty small plates too - always a plus when drinking. Don't like rum? Me neither, but I keep my home bar stocked with their spiced rum. Even I drink it regularly because it's just that good!! And if you put it on vanilla gelato or ice cream??? D-lish!! Not at all like most rums! Also incredible gins and love love love their orange liqueur (all 3 varieties: regular, barrel aged, & naturally colored from CA wildflowers blue curaçao). Stopping in at Calwise last night made our whole day so much better. I've heard good things about it so we had to stop by. The spirits were fantastic. Calwise Spirits is a creative craft distillery in an up-and-coming area of Paso Robles. Not only does Owner and Master Distiller Aaron Bergh create gin, rum, and liqueurs, he gives each a definite sense of place and homage to the Golden State. He comes from a long line of family distillers, and his talent and passion shine through every bottle. I tried a flight of his offerings first. All flavorful and well done. My favorite was the barrel aged rum. One of the signature elements of Calwise is its license that allows serving cocktails and food, not just spirit tasting and sales. For example, try their California Mule for a delicious version of the other Mule, or any of the other cocktails. Their on-site kitchen produces small plates with equal quality and creativity. Flatbread pizza, cheese-stuffed roasted red peppers, spanakopita, and more were on the menu during my visit. All this makes for so much more than just a tasting flight. Come after work or on a weekend, enjoy a cocktail, and get some food. Sit back, relax, and enjoy a little respite from a busy day. Calwise is doing it right. Can't wait to go back. read more

The guy behind the counter made two references outta nowhere, pushing a political agenda. I'm not interested in your views on politics. Just serve me and be friendly. This distillery is the best hidden gem on the central coast. Best mixed cocktails ever, favorite spirits of all time, and the staff is incredible! When you first walk in, the place is decorated lightly, in a very gorgeous well sized setting. We were originally headed out to KiloKilo, the Brewery next to Calwise Spirits. We decided to stop by Calwise before we headed home and I am so glad that we did. What a special distillery for Paso Robles. The Mixologist that poured for us, Rebecca, was outstanding! She told us the best way to experience their spirits was to do a flight. We also wanted to taste their drink of the day. The spirits tasting was fabulous and we actually bought a bottle of the Blonde Rum. We definitely plan on going back there again and enjoying some of their food. I can't say enough about the service and attention we got from Rebecca. She made this experience even more enjoyable. Wow, just wow! Such a neat little distillery with a cool vibe. My husband and I had an amazing time sampling their spirits and were so impressed with how unique the whole experience was. I loved how all of their spirits were inspired by California and you could really smell and taste their little twists from the white sage to the local lemon rind. They have a fun little twist on the Mule using their Spiced Rum called a California Mule that is SO good! We also tried their Wiseman and the Saturn. Oh. My. God. The Saturn is honestly one of the best cocktails I've ever had. It uses their gin and is so flavorful and refreshing. Seriously so so good! We're already recommending this place to all of our friends. I highly recommend taking a tour of the distillery, as it is so informative and just flat out cool. You get such an in depth and behind the scenes look at the fermentation and distillation. My husband cannot stop talking about how much he enjoyed the night! read more

Came here to celebrate a friends birthday, and It was the perfect end to our day. I felt they had a great selection on their tasting menu, and the tasting fee was really reasonable. As added bonuses they have mixed drinks (which were fantastic) and they also have a small food menu also. The tasting room attendant was helpful, informative and had a great attitude. We had such a great time here and plan to bring out of town guests. It's the only distillery that also sports a cocktail bar between here and San Diego. If you have a group and can plan it in advance, try to arrange a tour with the owner / distiller, Aaron Bergh. He is such a booze nerd, but in an awesome way. He has remarkable speaking and teaching ability, and in about 15 minutes we understood the distilling process of just about any spirit from rum to gin to brandy. Really cool stuff and his California spin on the traditional spirits really works. I had a cocktail called the Wiseman. It had a beautiful pink color and it had a sage leaf garnish. The aroma was of: San Simeon (the eucalyptus trees, coastal air, soil) I got all those things on the nose and even commented to my husband about it. Fast forward to the distillery tour with Aaron and he passed around the botanicals that he uses, which are inspired by natural settings he loves in California, like Big Sur Gin- because he loves Big Sur. The love of California shows in the setting, the bear decor and in the drinks. It's awesome bar and you don't have to deal with downtown parking to get there. Thank you Calwise for being a stellar business who keeps rising to meet the challenges of 2020. Check out the review mentioning how they supplied hand sanitizer to first responders when they needed it most. The take-home bottled cocktails, namely the Quarantini, will be a happy memory of the otherwise dumpster fire that is 2020. I have stopped in a couple times over the past few years and each time it's been a great experience with friendly, welcoming staff. Their gins are definitely not "run of the mill" with unique flavor profiles that will have you thinking about new ways to use gin in cocktails. Unlike a few distillery tasting experiences I've had, everything about Calwise is very approachable and chill. If I lived closer, I would stop by regularly for cocktails, so perhaps it's good that I don't. The coffee rum is delicious and worth trying. Absolutely a must visit if your in the Paso Robles area. The spirits are expertly crafted and the cocktails they make are fantastic. You can also do a tasting flight which is exceptional. The entire staff are super friendly and knowledgeable about what is going on. I love that they serve food and they craft custom cocktails with their spirits. The decor is all California goodness and we always feel welcome there. It is always a treat to talk with them and see what new drinks and spirits are in the works.
