It was around dinner time, and there was still plenty of pastries to choose from. I ordered the focaccia topped with fresh mozzarella, cherry tomatoes, arugula, and Kalamata olives, which was toasted to order. I grabbed a seat inside the bakery and watched as the bakers prepared the next batch of focaccia. I was the only diner inside the bakery, but several customers came in to order focaccias to-go. The focaccia tasted fresh - the bread had a nice chew, and the cherry tomatoes were nice and sweet. The arugula seemed to have lost some of its crispness and became wilted after going through the toaster oven, but otherwise, the focaccia hit the spot. I noticed several other Rosetta Bakery locations in South Beach, so I'll have to try their Italian sandwiches and pastries if I'm ever back in the area.

It was 9pm and they had an hour before closing but again, I just wanted a single espresso so I figured it was enough time. No greeting when we walked in. Barely a word spoken as we ordered. I saw they were about to serve my espresso in a paper cup and I asked for a ceramic cup since the paper changes the flavor. They said they couldn't do that because they were closing. There was still 45 minutes to go at this point but they said they'd rather refund me the $3+ dollars for the ounce of coffee. They ended just giving in. It took less than 5mins for us to eat the 4 small tarts and me to drink the espresso. They proceeded to get an attitude and mock me on the way out. None of the employees like their jobs or people. None of them want to be there. They are rude and disrespectful. I get it, its work. Ive been there. But I will not support or spend my money again in a place where everyone exudes "we hate you and this job". There's plenty of other options.

Even better, the timing of my visit lined up with Salt & Straw's cereal flavor series, meaning that they were scooping one of my favorites, Pots of Gold and Rainbows. I also noticed a few flavors that sounded like local specialties, including coffee tres leches and cheese guava. Since the shop was empty, it took several attempts to catch someone's attention when I was ready to order. Once I was being helped, I sampled a couple of flavors and decided that I couldn't go wrong with a scoop of Pots of Gold and Rainbows in a waffle cone. There wasn't any seating indoors or outdoors, but the shop is located along a shopping promenade, so I took my ice cream to go and enjoyed it on my stroll.

He allowed us to try different flavors and recommended two of his own. The store itself is extremely clean and organized. There is not a lot of clutter and there are plenty of spoons and napkins around. The floors and windows were all very clean and without any defects. I truly appreciated the quickness and hospitality that the manager gave us that day. The three of us left extremely pleased with our experience and can't thank this Salt and Straw team/management enough!

The staff is beyond friendly and attentive, often stopping by and not only checking on you but also to simply converse about your meal, opinions on the food, or chat about whatever you want to bring up. That is a level of personalness that just doesn't exist in most restaurants or even the service industry. The decor is soft and inviting; intimate; it has a soft, yellow lighting and the rest of the environment is meant to contrast the lighting. It's a nod to not only the owners' backgrounds and roots, but also to the old school fine dining environments. It set the stage perfectly for what was to come. The tasting menu is 10 dishes and is served in 4 courses (apps, small plates, entrees, dessert), served in a 3 plate course until dessert which is 1 dish. Each dish is unique in its own right, yet contrasts from the others so you don't get fatigue from a single flavor or style. For example, the app course that I had was a wahoo ceviche, a shrimp and green papaya salad, and an endive and sharp cheese salad (served in wrapped endive leaves). They all worked together, but offered vastly different textures and contrasting flavors while feeling like an orchestra working together in your mouth. This experience continued through the entrees and I cannot opine on the dessert (rum cake) because I took it to go because I was so full... which has never happened to me in a tasting menu before. Paya is not only worth consideration in a saturated market of fine dining in Miami, it is one that should be prioritized and experienced as an indulgence of senses and flavors. While it may seem expensive in a vacuum, it is 33-50% cheaper than a slew of other tasting menus in the city and offers more courses for that cheaper price.

I like that many of his ingredients are sourced locally at his farm where he trains his team on food quality. I think it does add something extra to the dishes. This is his new elevated Caribbean fusion cuisine, which I was excited to try and didn't disappoint. I went for the miami spice and ordered a few extra apps. Dim lit interior. Nice music soundtrack. Amazing menu. I enjoyed the roti starter as well as the scallop dish which had great presentation and flavors. The papaya salad was also a hit. For the miami spice starter I tried the ceviche which has great presentation and quite flavorful. As for the main, I got the fish in curry which was a table favorite! The rum cake was his signature dessert like in Mamey... however, unlike Mamey they didn't pour the sauce at the table and mine felt a little lacking something. I think the table pour was nicer and had a little more generous pour. Overall I'd recommend and return.

Some of the pieces are totally worth it while others are a bit common. Berry Nut Lokum: Wow, this was pretty amazing. It was just the perfect mix of textures and flavors. It starts with tangy dried berries on the outside. Then a chewy sweet nougat layer. Then the center is like squishy Turkish delight filled with nuts and berries. Excellent! Kadayifi Nuts: Lots of those thin pastry noodles so it's almost like a soppy nest on the bottom. A bunch of pistachios on top for some crunch and protein. Pistachio Dolama: Like a bunch of pistachio paste merging with phyllo in a wet pasty roll. Not as much texture contrast as everything else, but tasty. Cheesy Pistachio Shell: It looked like kinda like a baklava, but underneath the phyllo and the pistachio mince was this interesting cheese ball. Almost like a pearl instead an oyster, a great surprise! Probably my second favorite item. Purple Baklava: Like a regular baklava, but purple. Couldn't tell if it was meant to be lavender or ube or just food coloring. Looked cool, but tasted normal. Burma Baklava: Perfect for nut lovers. A tight wrap of pistachios inside a ring of tight phyllo wrap. Almost looks like baklava sushi.
