I would gladly take off a star because of how claustrophobic this place could be, and how disorganized everything is. Nothing is labeled, the place is cramped, half of the display faces the street, the other half is inside the bakery. It is a royal mess. But if I were to focus on this, I may be called a diva. I was in the Miami area to check out the art installation at Faena Beach for Miami Art Week. Whenever I'm in the area, I always check bookmarked spots I want to check out. Decided to hit up True Loaf which was close by. True Loaf is located in Sunset Harbor next to Tequiztlan Mexican Kitchen & Tequila Bar. Also two spots down from Maman which is one of my fave bakeries. I stopped into True Loaf to scope out their selections. The young lady at the front was nice, I didn't get her name. This spot is more of a bakery with a huge kitchen area and limited space to order or sit. They had a few patio tables outside but no sitting area inside. Quick order and go kind of space. They had a display of food options in the front window and ordering area. I also didn't see a menu or labels for the pastries so it was hard to decide what I wanted. I was going by visuals of what they still had available. I ended up getting a canelé. And let me tell you, they made a quite perfect canelé with the crispy exterior and custardy interior. Each canelé costs $5. I knew a nice bakery like this would make a good canelé. You can just tell. How does True Loaf just keep getting better and better? So glad this gem remains open and successful in the Sunset Harbour area of Miami Beach. Staff is always so kind and helpful. They tend to either sell out or nearly sell out so definitely plan accordingly. It's small but might. In the last month I've been twice and have enjoyed my pastries very much. I tried the chocolate walnut cookie which was so good. Most recently I tried their cheese pizza special they have on Fridays. It's Detroit style and was very delicious and fresh. As a local this is one of my favorite bakeries on the beach. Staff is always sweet and patient as this place can get a little crowded. Pastries are always fresh made everyday with love. I love their cookies- especially the peanut butter and chocolate dipped. The Madeline's are so fresh with a delightful citrus flavor. 10/10 would recommend stopping by early! This place has the tendency to sell out later ij the day. They sell a wide variety of breads and pastries. On Fridays they sell Detroit style pizza - so GOOD. They also sell coffee to grab and go. The inside is small but cute with full view of the bakery behind the counter made for you to order your items and leave. They recently added outdoor seating for you to enjoy your pastries fresh. Aggressive for such a small space, items ranging from Viennoserie to Donuts, fans of Brenton Butter Pastries will note True Loaf's Kouign Amann exceptional thanks to faultless lamination while the Almond Croissant is fairly flaccid without much flavor besides the Sugar and Nuts on top. Saw so many amazing reviews for this place but was unfortunately let down by my personal pastry experience. I care a lot about the texture of my pastries, and nothing I got here was the crispy, flakey goodness I crave in baked goods. However, the babka was really excellent and given it's not meant to be crispy, that did exceed expectations! PASTRIES: 1. Chocolate Babka (5/5) - Soft, pillowy, and love the addition of hazelnuts baked in 2. Guava cheese danish (4.5/5) - Not crispy but the guava and cheese are a really nice combo in this 3. Recently discovered this gem post work out as I was walking around Sunset harbor to a grab some breakfast. Wow, this spot was exactly what I wanted. I love discovering new bakeries in Miami and True Loaf was just the perfect one to find. We arrived around 10:30 and the line was not that long but they did run out of many bread options. I saw them making some fresh mini sandwiches and immediately bought one to try. So fresh and delicious! I tried several items and all of them were absolutely incredible. The BLT didn't get a pic bc I ate it too fast - amazing amazing bread and great filling ratio. The guava brioche was probably my favorite - I've never had anything like it! So light and fluffy and amazing, sweet filling. Everything I tried was delicious! And that's a very rare hit ratio for any bakery to achieve. I especially love how they were so filling-centric here and not stingy with the amount of filling. Raspberry Cream Cheese Croissant: I can see why everyone raves about this! If you look closely on top, you can see two holes where the filling was inserted. One for the rich cream cheese and one for the tangy raspberry jam. Both with a very generous portion! The cream cheese and raspberry complement each other perfectly and taste excellent against the flaky croissant. Nutella Chocolate Croissant: Another croissant with a very generous filling. Nutella tastes wonderful on everything, but especially the airy croissant. And I love that there was a vein of firmer chocolate running underneath, for a bit of overload. Plus the candied hazelnut on top was a tasty treat. Brioche Bun with Dulce De Leche: Croissant-like, but not as flaky. Dulce de leche is piped in from the bottom. Was only a modest amount of filling, especially compared to the filling overload in the items. I cut it in half and one half had a sufficient portion of dulce leche while the other half had just a light smear. Too bad, since their dulce de leche was so nice. Raspberry Cream Cheese Square: Kinda like a danish, but with a flaky croissant-like puff pastry shell. A nice custard baked in the center. And an interesting choice to top it with fresh raspberries instead of some baked raspberry jam. Chocolate Chip Cookie: Who doesn't love a chocolate chip cookie? More like chocolate chunk here, the chocolate pieces were so large. And very soft dough, almost bending when you try to break off a piece. So moist, didn't need any milk. Coconut Cream Pie with Chocolate Bottom: A cream lover's dream! Like it is literally all coconut cream, except for the crust. And I'm counting the chocolate as part of the crust since it's a fine layer of ganache attached the crust. So adds a little chocolatey flavor, but it's really about letting the coconut cream shine. read more

Bottom line: Nice bakery and baked selections found here at True Loaf. The blueberry muffin and ham/cheese croissant both were delicious, but I wish there was a bit more ham/cheese filling in the sandwich. The Deets: I had heard so much good buzz about True Load bakery in the Sunset Harbour area of Miami Beach that I wanted to try it out sometime on my recent trip there. I went earlier in my trip and found a big line in a very very small space (their shop is more the "grab it and go" type of place without lots of room/no seating). I decided to forego the line that day and come back another time. So I went in on my last morning there, since I did not really want to deal with going out to a sit down meal for breakfast and lunch all during that day. There was no wait on this day mid-week. The person at the counter stood ready to take my order and appeared to want it quickly (I got the feeling that you are expected to be local/regular and know immediately). I asked a couple of questions and from my Yelp intel earlier, made a decision to go with a blueberry muffin for the morning and a ham/cheese sandwich for later on in the day. My items were quickly served in bags to go and I was set. The blueberry muffin was delicious, flavorful, and not dry. It was just sweet enough without being overly sweet, perfect balance. For lunch, I had the ham and cheese sandwich...again, enjoyable. The croissant part was flaky and delicious. The ham and cheese was nice but I do wish it had a bit more ham/cheese filling to it to be satisfying. Visiting from Seattle and on the hunt for good coffee and breads. Found this off of Yelp and boy was it a find! Wasn't able to take pics of the croissants-- chocolate, almond, and ham and cheese. Perfect, buttery, soft and flaky layers full of flavor in every bite! There was excess toasted ham and cheese bleeding out of the pastry, so that was an extra treat. The size is pretty big, so it felt like a full breakfast. Probably the best croissants we've had. The store is in a quiet street away from the water and the busy beach or party crowd. Best bread ever. Nothing compares. Rivals SF Sourdough, but different ( in a good way). And the absolute best BLT I have ever had. Their Thanksgiving pumpkin pie is one of the best I have ever had. Run, don't walk and get there early before everything sells out. UPDATE- 2 hours later on Christmas Eve. All the perspective on the product is still accurate, unfortunately they fell to a 3 because of a totally ridiculous experience I just had. This morning I went in and placed an order for their ficelle ( super delish small little baguette) and a normal baguette- none of which would be ready until at least 10 but the girl who took my order told me to come back between 10:30-11 to be safe. It's Christmas Eve and both were planned to be used in appetizers I was making to bring to a friend's house for Christmas Eve dinner. So I go back at 11 and it is mass chaos. There are at least 8 people behind the counter literally running into each other as they try to fulfill orders. It reminded me of Starbucks, which is always a total mess and an example of how not to operate. So this girl comes to me and says they only have this sourdough loaf ( that I could have purchased when I was there the first time). I am not happy. I ask what the solve is because offering me a sourdough loaf is not an option. I tell them the other girl behind the counter took my order and the girl servicing me says- well she works in the back and doesn't know what she is doing. Really? This is how you deal with a customer who placed and paid for an order in advance and now does not have it, on a holiday no less? She get's the manager and he offers me his two baguettes he has for himself. I felt like that was a nice gesture but also didn't want to take his holiday bread. In the end I accepted (1). But the reality is that place was a hot mess today and the only person responsible is the manager: on a busy holiday it is the manager's responsibility to have a staff meeting and be sure everyone is clear on their role and what they are doing and also what they should not be doing. It was pretty bad and the team gets the brunt of it because they get irate customers like me who day of, now has to find something else to make for the dinner I am attending. The bread is still the best out there. But the service today was a spectacular fail. read more

Here's the thing. I think the actual coffee might have been good. I asked for an iced americano with honey and cream. When I tasted it, there was no honey or cream. She said she put honey in. Sure enough I could see it at the bottom. I said, you can't put sugar or honey into a cold drink and have it integrate. It needs to be put in when it's warm/hot. She added the cream. It took a really long time to make and the cost was $7.00 for a 12 oz. The bread and sandwiches looked great and smelled amazing. Barista/cashier needs some work/training.
