I haven't been to a Skinny Pancake since I received the devastating no-more-gluten-for-me news, so I was glad to see that they have a buckwheat crepe option for us gluten-free dweebs. I ordered the apple & brie crepe. I was informed that the hash purples go into a shared fryer, so they're not totally gluten-free. I accepted my future stomachache & ordered them anyways, because they've always been my favorite item on the menu. Service was friendly & prompt. Find a table, order at the counter, & they'll bring your food to you. The hash purples were totally delightful, as expected. 5 star color, too. The crepe was unfortunately very underwhelming. It was super thick & the texture was kinda ominous. I didn't end up finishing it. They might just need to tweak their gluten-free batter slightly to get the balance right. I believe in them (: Overall a fun lunch spot in the marvelous capital of Vermont.

The menu is on the small end of the scale. This seems wise for a new joint. The options covered a nice range of bases. I had the Irish Baked Potato thingy; baked tater with cole slaw, corned beef, 1000 island. It's a reuben on potato instead of rye bread. Quite yummy. Perhaps a hair on the dull side, flavor-wise, but a really neat concept. Work it, guys! it'll be great! The Mrs had chicken wings. I liked the seasoning a lot. She found it to be a bit too pepper-y. I don't disagree. Still, good food. Nephew and Mrs ea had smash burgers. They say that they liked 'em. I didn't taste, so I can't comment. They sure looked good! The space is an old (er) brick building. Nephew said that prior establishment was on loud side. Brick walls will do that. The new folks have added gentle acoustic treatment to the walls and ceiling. It looks nice and tasteful and it goes a long way to take the rude edge off of a "splashy" reverberant space. Sum up? I will hopefully eat there again; perhaps in a couple of months when the operation is more sure of itself. In the meantime, y'all should give it a taste. So there!

This is the message from the business when I wrote to inquire (as of December 2024): "We are doing a food truck now in Waitsfield on Saturdays during the winter in the Waitsfield in the Chamber of Commerce parking lot. It is across from Valero gas station. We will be there from 12-5 on Saturday. We ask if someone is getting food for 12 or more people to please preorder, otherwise just stop in and we can serve you." Meats are awesomely tender and moist, perfectly imbued with smoke, seasoned with just the right amount of salt and paprika-forward spice. Lesser barbecue sometimes clonks you over the head with smoke, sugar, and seasonings. Dino Bones is so much more nuanced and refined. It does not rely on sweetness for its appeal. We recently tried a half pound of brisket and a half rack of ribs, each $15, with sauce on the side for a bit extra. There's a good reason the sauce is sold on the side: meat is so good you don't really need (or want) a sauce to obscure those great flavors. Ingredients are well sourced, locally sourced -- and you can taste the quality. Hope we can keep this place open!!

Been here before a while back and it was strained. This time the atmosphere and ambiance were much improved. It's a pub-casual environment and feels relaxed and casual. The service was good, and prompt. No complaints. The primary issue on this review was that I ordered the Buffalo Schnitzel. I had thought it was going to be with some buffalo sauce, but balanced, as the menu simply describes it as "tenderized pork loin, panko fried, buffalo sauce, Caeser salad, bacon, blue cheese" But unfortunately it came out with at least a 1/4 cup of Frank's Red Hot drenching the top of the meat. It so overwhelmed everything, and was not brushed on or anything. Will return to try other options but this visit was a miss.
