I first ended up at Bubba on one of those cold New Hampshire days when ramen feels less like a want and more like a requirement. It stuck. Now it is one of those downtown Concord places I circle back to whenever I am craving something brothy and comforting that still has some personality. Most visits revolve around noodle soups, and I have worked my way through a good chunk of the menu. The spicy miso ramen has a deep heat that builds instead of hitting you all at once, and the shoyu ramen is clean and savory in a way that makes you keep sipping the broth even when you are full. The Bubba pho and veggie pho are both solid, generous bowls, and the Korean noodle soup that started as a special clearly earned its permanent spot. Even the Japanese curry soup, which I expected to be heavier, if I had to nitpick I wish it had more curry flavor. My favorite order though is the spicy tantan, with a tweak. Sub the ground chicken for the soy glazed chicken. It adds texture and a little sweetness that really works with the spice. Service is friendly without hovering, and the pacing is usually spot on even when they are busy. The space itself is small, but I rarely struggle to get a table, and the bar seating is a nice option if you are solo. This place has it figured out. Instead of waiting for your soup to get cold, they add cold tofu to the broth so it's immediately lukewarm on service. As a bonus, the tofu center is still cold so you can really get complete unpleasantness with every bite. And, rather than having to spend a bunch of time waiting for your noodles to clump together as they congeal, they serve them already clumped so you get the opportunity to eat your noodle in brick form. This place is like your first real boyfriend. It's perfectly fine, and it satisfies many things that have been missing from your life up until now, but inevitably it fails to be complete, simply due to immaturity and not through any fault of its own. The cuisine is his charm, the menu is his intoxicating laugh, but the food falls short like your feelings for each other after the honeymoon phase. Let me elaborate. I love the concept: Asian-fusion in Concord, NH, a place where the only thing more predictable than a lack of night life is the lack of culinary diversity. Suddenly, Buba is offering Concord its inaugural baos, pho, udon, and other East-Asian dishes I dare not pronounce. They've cornered the market, our inexperienced taste buds are salivating, millennial are delighted. What is there not to love? After a shopping spree nextdoor - at Runner's Alley, get your mind out of the gutter - my mother and I ventured in, promised a table for 2 after a brief wait. Fully packed at 6pm on a Sunday? Go Buba! A brief inspection of the menu yielded one conclusion, we must order as if we had 4 stomachs. She wanted the Bo Tai Chanh, I wanted a pork belly bao. She wanted a pho, I wanted the yak udon. Compromise usually leaves at least one party disappointed, so we avoided it and ordered all of the above. Our stomachs growling and our taste buds tingling, and our brains promised an Asian-fusion wave of happiness, we waited for Buba to give us the perfect dining experience we selfishly desired. The Bo Tai Chanh was unique. I've never had it before, and I quite liked it! Spread onto a lettuce wrap or rice, it would be a satisfying meal in and of itself. The bao, pho, and yaki udon, however, were all good and that was it. The pork belly was average in preparation, and could've had more sauce or depth of flavor. The pho was indeed pho, but the broth did not instantly conjure up images of marrow-laden bones being simmered for 24 hours before being used to cook tender cuts of beef. The yaki udon was toothsome and sweet, but below the surface lacked any complexity that would implore me to want more. The one real winner was the bone marrow sate that came with the pho, if they sold that in jars, my sauce cabinet would be complete. I'd recommend going and seeing what you like. The dishes are fun, and they add a flavor that the area has eternally lacked. However, don't expect more than the allure Buba initially presents. It offers the cuisine we have lacked for so long, but sadly is not the place I will go to truly indulge in East-Asian flavors. read more

I'm not even taking a puritanical approach here - I understand that authentic ramen in a place like Concord, NH is a *very* big ask, but Buba has trespassed across the line of good faith and into the realm of hyper-Americanized slop. It's not just the ramen, though. The yaki udon upset my stomach, and the pho is also incredibly Americanized. The drinks are very overpriced, and our waiter was weirdly condescending to us when the person I was with asked for a vegetarian sub-out. It's very clear that Buba has no interest in delivering quality, authentic Japanese/Korean/Vietnamese food. Instead, they opt to pander to the bland WASP flavor palate. The service was really good. It seems like the place has tried to make it more "American" friendly which is understandable for their demographic. I thought this spicy ramen would have at least a little spice in it but it was not spicy at all. The corn in the shoyu ramen was very sweet (almost artificially so) and chewy so that was a surprise I wasn't expecting when I ordered. Otherwise the food was good. Fantastic experience on a rainy Saturday afternoon! What a find. The food was so delicious, ambiance inviting, fresh and clean. Parking in town is a pain, metered, but seating and service was friendly, prompt, and efficient. The Thai teas were delicious and generous. The Bao buns with pork belly were hot, flavorful, and tender and tasty. Steamed Gyoza were a treat, with super flavorful dimensional sauce. The Korean Spicy Noodle soups were so good: Hot, loaded, and savory and spicy. The brother was so wonderful. Shoya Noodles generous and flavorful. Buba Noodles were extra spicy as desired, flavorful, very satisfying. The Milk Crepe desserts were a delicate surprise and nice to share following a spicy meal. Summer rolls were pretty bland even with peanut sauce. Pho with white meat chicken was tasteless and meat was chewy. Of course pho has a lot of add ins, but the broth needed more flavor. Wow! Our first experience with takeout was fantastic. Everything traveled well on the ten minute drive home. The portions are large so there are definitely enough of the udon noodles leftover for lunch tomorrow. My husband loved the ramen and enjoyed every last drop.
