I was looking for a good lunch place in Downtown Manchester before heading to airport. Buba didn't disappoint me. They have a happy hour lunch menu where you can get an entree and appetizer for 16$. Yelp reviews suggested that this place serves one of the best pho in Manchester, NH. I ended up ordering Beef Pho with pork gyoza. I really loved the soup in Beef pho. So goood. Staff asked me if I would like to add veggies to my pho but they didn't mention that it's 5$ up charge from actual price. I found that out when I received my receipt. Pork gyoza was good. Buba noodle bar is a fantastic Ramen shop in Manchester. I like all things spicy, and they do not disappoint. The service is terrific, efficient, and friendly. Bao buns are soft and pillowy with all the savory deliciousness inside. The dumplings are perfectly crispy outside and meaty inside. My only disappointment is that I can only eat a single bowl per visit, because I want to try them all. It was the day after a snow day, and a bowl of spicy miso Ramen hit the spot. I came here for the tantanmen but loved everything. They have a chicken tantanmen which is a nice variation and very well done. Fried rice and pho were excellent as well. Tofu bao was very good, but personally I like a creamer sauce on mine - just a preference. Service was quick and efficient. We got our dishes spicy so had to ask for water a few times and they kept up well. The place is surprisingly larger than I thought, as I discovered a whole back dining area. Bright with good windows in the main area. Good to know they have space as I definitely will be back. This was my second time here and I only wish they were closer. read more

I am a frequent customer of Buba Noodle Bar, and it genuinely disappoints me to write this. I've always enjoyed the food and typically receive good service, but my experience last night (Sunday, April 12th) was troubling. A very tall young server approached a conversation I was having with the bartender about my drink and escalated the situation unnecessarily. She interrupted, raised her voice, and spoke to me in a manner that was both rude and disrespectful. As someone more than twice her age--and as a loyal customer--I found her behavior completely inappropriate. This incident left me questioning whether I will return. Dusty, rundown & they didn't care to clear the west half of their sidewalk- HUGE snowbank in front of their sidewalk entrance spoke low of their hospitality ambitions. It's not a menu for the epicure; it's mall style "Vietnamese"; my summer rolls did feature a juicy and flavorful entire shrimp but after that, nothing but iceberg lettuce- no mint no depth... And the beef noodle was way too plastic-sweet. Noodle itself had a decent bite. If you're in your 20's and want a tiny yet busy joint to get a bite this place could be alright. The weather was a little gloomy and gray yesterday and I knew I wanted noodles and or something soup-like. We yelped a few places around and Buba came on the top of the list and it did not disappoint. Although the chicken pho was a little different than I usually know, it was delicious. It came loaded with vegetables like red garden peppers, broccoli and carrots, which gave it a good crunch. I had the Bulgogi Yaki Udon.. now this dish was reaaally good, it was a little sweet so be sure to ask for hot sauce, it gave it a great balance. I also asked for some bean sprouts to add the crunch and freshness I felt like it was missing. We also had the fried chicken baos as an app and that also didn't disappoint. The bao/chicken/veggie and sauce ratio was on point. And lastly, shout out to our awesome waitress Meaghan, she was personable, and killing it! She was the only server yesterday (yes, go visit her on Sundays) and she was balancing EVERYTHING- from serving, cleaning tables for the next party, taking orders AND making drinks behind the bar. And STILL, had a chance to calmly connect and bond with the customers. So appreciated!!! I've been eating here since the first day they opened. Here is my honest review of the pho. My MIL is Vietnamese and had her own restaurant, so I'm not new to what it "should" be. When the place opened it was amazing. The broth was dark and rich, very flavorful. They gave you large portions and plenty of basil, sprouts, and veggies to top your pho. As they grew they changed the broth. The flavor started to weaken. Not a lot but noticeable. I even asked the owner about it but he denied it. Flavor and broth color doesn't lie though and I was not alone in noticing. That said it was still one of the better local options. Fast forward. Prices are up. Now the portion is about 1/2 what it used to be. If you order it to go they literally only give you a half container now. They have become very stingy with basil, sprouts, and toppings. They literally gave us one sprig with 5 basil leaves to share between 3 people last time and that's not new. Let's talk broth though. Now it's so light it looks more like chicken broth than beef. The flavor is not there anymore. It's weak. They say it cooks 24 hours but it doesn't taste like it. Or they are reusing bones. This last time it was obvious they had not skimmed the fat either. Pho is supposed to sit so you can remove the top fat later. They obviously didn't do that. The top 1/2 inch was all grease. At the end of the day, if you just think of pho as soup and don't know better you'll be fine eating here. If you know what pho should be though this will not become your favorite place now. We are moving on to other places. This place for us is now far too expensive for tiny unflavorful portions. If only I could get that day 1 pho again...that was where it was at. read more

I was seated immediately and helped which was very nice as I was on a bit of a tight schedule. The ramen was fresh and delicious. I also ordered some bao buns that were off the charts. Another late review from our visit to Manchester recently. We came to this restaurant because we saw it just across from the diner we went for breakfast. It was an excellent choice to go here for lunch. They have a lunch special. I chose Pho Ga or chicken Pho. Mine came with a crunchy salad, and this salad made me think of how to make this at home. The crunchy part is not overstated. It was crunchy, and I loved the crunchiness of this healthy salad. The salad consists of cabbage, lettuce, carrot, peanut, and the topping is, of course, none other than dried onions. That's the best part! My chicken Pho was very tasty without MSG. I know it's without because I didn't feel sleepy. Hubby ordered stir fry chicken over rice. That was excellent too! All in all, this place turned out to be one of our favorites in Manchester. This ramen was so good, I didn't want it to end! I had some time to kill in Manchester and I found this spot on Yelp and knew that some nice warm ramen would be perfect for this chilly day. I ordered the spicy miso ramen and this was the best decision I've made all month. The chicken was tender and well seasoned. We returned to Buba and had a very nice meal. No waiting on a Friday evening which was even better. We got dumplings, bows, and the buba noodles, hubby got chicken pho- his usual. Everything was fresh and delish and came out hot and timely. One thing that bothered me was the cleanness- or lack thereof. Floors were so greasy they were slippery like a skating rink. This was my first time having Pho in the Manchester area. I was told that this was the place to be in Manchester for Pho. I would say the appetizers and the pho were definitely good but nothing phenemonal. The drinks that they had were alright I think in the future I will just order a coke instead of a cocktail. The service was horrendous. We did go during COVID but it took over 10 minutes for us just to get a drink and the waitress seemed very unhappy to be there.
