Sunday evening as we returned from a concert we were looking for a "Dinner" sit down with great food! We happened across this listing for a restaurant -it's located in the Hyatt regency- but it's an open space with lots of windows and pretty views. We also were at the start of Denver restaurant week, it was early and we had selected items on a happy hour menu too. There were many menu options to choose from. Since we were early on a Sunday the restaurant was staffed however there were not many patrons until we were about 45 minutes into our dinner. It was very nice to have attention and great service, but we will have to return at a busier time to get the real feel. I had selections from the restaurant week menu and my husband chose from the regular menu. He was able to also take advantage of the happy hour drink menu. I had the starter salad with baby gem lettuce and mango, the presentation was very beautiful, and tasted so fresh and lovely. Then I had the trout featured entree also so pretty with asparagus and potatoes and wonderfully served. It was so tasty that I did say I would choose this if available on a regular menu too. For dessert we choose a banana dessert that were fried inside a crispy wrapper served with and iced cream again so pretty and delicious. My husband enjoyed the 5280 burger entree with fries, he stated that it was perfectly done to his specified request. He enjoyed it tremendously. We spent about an hour and a half and people began to arrive and be seated, there was never a disruption to our terrific service from Charlie and crew! My "credentials": I am from Aurora, though I don't live there anymore. I am somewhat of a foodie and fortunate to live in Southern California, where I have easy access to just about any cuisine- from street food to James Beard to Michelin. That said, my husband and I really enjoyed Borealis and ate most meals at the restaurant during our one-week stay. The only times we didn't eat at Borealis were when we went to my parents' and siblings' homes and a couple of times we went out. Even though Stanley was nearby, we preferred the dishes and service at Borealis. Highlights: Breakfast: French toast. It was simple but it was tasty. It was perfectly cooked. It didn't come with sides but it was perfect the way it was. It wasn't too sweet. I had a humble black coffee and half of my husband's bacon and it was the perfect start to the day. Happy Hour/Dinner: I'm not a big dinner person, so I tend to opt for appetizer or happy hour food. I had the pork green chili, egg rolls, and sliders during our stay. The sliders were delicious!!! I was actually going to have the hamburger that everyone at the bar raved about (I was there one night and the four other guests were eating and commented to the bartender how it was really good; my husband also had it twice), but it was too big for me. I figured that the sliders were of the same meat so it was the perfect size for me. Anyway, it did not disappoint. The egg rolls were ok, but a little too big for me. Maybe preference; maybe bias (my dad's is the best!). Dishes my husband had that I sampled and was blown away: The salmon with whipped ube mashed potatoes is a must-have. That was the perfect blend of savory and slight sweet. Had I not eaten my sliders, I would have orded my own. I have never seen this combo and it's definitely worth the drive (if you are not staying at the hotel). The steak with adobo sauce was also fantastic. The sauce was served on the side. Even without the sauce, the steak was tasty. And as I mentioned, he had the hamburger twice. Dessert: The ube tres leches was DELICIOUS!!!!! Other considerations: Price Point - Happy to say that it's not your typical hotel crazy price point. The cost is comparable to local restaurants, and the food was really good. Service - Shout out to the bartenders, especially Charlie! Very friendly and chill. Parking - There is free one-hour parking. There are also other free parking nearby. Seriously, even if you are not staying at the hotel, Borealis is definitely worth checking out. read more

TERRIBLE! got the breakfast sandwich and said a chipotle mayo type sauce on it but holy crap it's so spicy. The bun was like a brioche and cold and I picked around and ate some egg and bacon. The potatoes are crispy and hard - not great seem deep fried. Had a meeting so came over but overall will probably steer clear of this place. read more

I ate at the restaurant tonight and it was packed!! The food was delicious but mostly I was amazed how only one server and one bartender were able to manage what seemed to be about 40 people. This is the hotel restaurant in Hyatt regency aurora. It's bright, casual and decent. Service is better than ambiance but usually there's only one lady manning the place. So you gotta be patient. Food: the menu is super duper reasonable! I haven't seen such low/ cheap prices in eternity. Seattle is insanely expensive compared to Denver so there's that. But it is SO cheap! You can order an entire menu for only $100+ That's cheap!! Menu does changes though. First day, I had their pancakes, built your own omelette and avocado toast. Pancakes: with strawberries and whipped cream. Butter and maple syrup too but I don't touch those. It was nice and tasty. Built your own omelette: you can pick 4 out of about 8. Also 4 different presets like meat, veggies I believe. I went with veggies omelette with spinach, arugula, jalapeños and tomatoes. It was A ok. Avocado toast: the disappointment and disaster that is!! It came doused with so much balsamic: yuck! And sunflowers seeds. And a salad. I couldn't find find the toast! Like where was this toast?? Under the over fried egg which was under a pool of balsamic. This dish: I didn't touch it at all! Nor did I send it back. It was $15 I think. Avoid it at all cost. Next day: menu changed! Tried their French toast. Super duper dry, super duper sad French toast. It's missing eggs or creaminess or flavor. Just lacking! Decaf coffee: they couldn't brew it. Nor do they have it. How weird is that? Just say not enough people want it so I don't wanna brew it. Chamomile tea. Only non decaf tea they had. Tazo packs. Came with little honey jars. Can't go wrong much with that. Omelette second day: added onions, jalapeños, spinach and arugula. It was a ok. Also had a side of bacon: non crispy bacon! Meh. The $6 bacon is a ok. $2 fruit bowl though is crazy good!!!! Like get it! There are two , three ladies that work here. One is always long blonde hair, a little rude, seems very impatient.. at least with me. She talks and talks with other table that aren't a solo diner. So guess that's just her. There was another older lady: short hair. She's so sweet and nice. Also the younger brunette lady: if you get those 2 service will be great. Overall, it is a hotel restaurant. I appreciate the convenience , 6:30-10:30 am breakfast. Just got home from a wonderful weekend getaway, which included enjoying several wonderful meals at Borealis! Located inside the Hyatt, the atmosphere was casual yet a bit upscale. Everything was very clean, and the wait staff was pleasant and helpful. Over two days, I enjoyed Asian tacos, a beet salad, roasted Brussels, avacado toast, salmon fritata, and grilled salmon. Aside from my salmon being slightly overcooked and dry, everything was perfection. read more

3/30/24-So this is what a hotel restaurant should be, and I haven'thad a good hotel restaurant experience in a long time. My experience started off on a bad foot. When I got there one waitress took my order and then 20 minutes later another waitress came over to me asking if she could take my order. I told her that the other waitress had taken my order and she said she would go and check on it. She quickly came back and told me she didn't see my order in the system. She asked if I wanted her to put it in. I told her that I didn't have time to wait again since I had con panels to get to. She said that there was a quick dish she could put in for me that would only take a few minutes and she wouldn't charge me. I said OK. Then the other waitress showed back up and apologized saying she had gotten busy and forgot to put my order in. She also said she would bring me an orange juice as well. The staff showed that they were will to own their mistakes and try to make it right. Normally staff wouldn't do that, it was a show of good customer service. As to the food what I got in was average in taste, but was very beautifully presented. read more

Recently went to an event and after a small group of us decided to get lunch at the restaurant in the hotel. I love the dining space! It's beautiful! I especially love the ambiance, lighting and color scheme. There are cute little nooks and seating areas. There is also lots of outdoor space and great patio dining set ups too. I enjoyed a Caesar salad with salmon. Everything was fresh and delicious. My fiends enjoyed the green chili soup, the burger, fries and sandwiches. The fries were a def must order extra crispy! Another bonus was the restaurant had great wait staff. Tigris was so kind, friendly and helpful with ordering. I'd def be back for a quick lunch! read more

My daughter& grandson took I and my cousin there for dinner for Mother's Day. It was really nice, the food was served hot an beautiful plated. It was delicious. I feel like most hotel restaurants kind of just phone it in. They know they have a captive audience so they don't go above and beyond in the customer service department or make a menu very creative. This is not the case with Borealis. I really enjoyed the 2 meals I had here, and even if I wasn't staying at the hotel, I'd come here again for the food. Nesia, our server both times, was outstanding. Our drinks were never empty and she was so sweet, knowledgeable, and attentive. The hummus appetizer is big enough for a meal by itself. It's absolutely wonderful, served with vegetables and warm, toasty pita. My daughter and I split the 'Merica burger and it was juicy and delicious. Unfortunately, the side dish of macaroni salad it was served with was bland and boring. Breakfast at Borealis is a treat too. My waffle was one of the best I've ever had. Had the opportunity to have a lunch meeting at Borealis, which is inside the Hyatt off of Colfax near the medical campus. The restaurant is located to the left of the main entrance. It is integrated into the hotel main lobby, so there is a nice open atmosphere. The service off the bat was excellent with a waiter greeting me right away and taking my drink order. My table ordered spinach artichoke dip with pita bread, which was an excellent appetizer. The menu is relatively healthy with a good selection of salads, meats, seafood, and burgers. I ordered the 'Mercia Burger with no cheese and a side of sweet potato fries. I was a little underwhelmed with the taste of the burger considering it was $12. The burger also came out lukewarm. The sweet potato fries were the highlight of the meal as they were crispy and full of flavor. It's a good spot for lunch meetings and interviews, but I would not recommend for casual dining. read more

It took an hour to get these two $20 each to go salads. The order had to be corrected and sent back for chicken to be on both salads instead of just one. Someone walked out of the kitchen at some point not wearing a mask or any ppe, asking the bar tender if the orders were over and was sent back into the kitchen groaning. The salad dressing was pretty good which is important with a Caesar and the lettuce was fresh....but why is it considered fancy to make the customer chop their own lettuce? I've seen this a few other places and it's so frustrating. I know that times are tough because of Covid which is why I am giving two stars instead of one. This seems like a simple meal, we were extremely patient, and then to finally get to our hotel room over an hour later and open the boxes to this was just suuch a bummer. read more

Borealis is inside the Hyatt. Hotel restaurants don't generally leave lasting impressions but the Borealis may be the exception. The food was actually quite good. I decided to have breakfast here and I sat at the bar to be quick, the bartender Angela came up to me and said "what do you want" and I'm sitting down double checking that it's a restaurant and look at her confused "food" and she says "well how old are you" and I respond "29". The rest of the meal was unpleasent she was very passive, I am unsure why she was in such a bad mood. For a $28 meal, I mean really any price, I think the bare minimum is respectful hospitality. Ate 4 meals here while I was a guest in the adjacent Hyatt Regency hotel. Pricey restaurant to be the only restaurant in the hotel. Food was good, especially the Smothered Burrito for breakfast. The burrito is also HUGE! Make sure you are hungry or be prepared to take half of it home (or back to your room) with you. I ate that burrito for two of my three breakfasts!!! The breakfast buffet was adequate, but not for $17. Yes, they make you a made to order omelette from the kitchen, if you want it. But if you are low carb, low sugar, there are only limited items to eat from the buffet. Also, where's the bacon on the buffet. You have sausage, eggs and potatoes, the bacon is most definitely missing. Lastly on the buffet, there was jelly and cream cheese for the toast, but no butter. Couldn't eat either of those two, so 86'd the toast. As for dinner, I was only there for a late meal with a much smaller menu and only a few items I could eat on my diet. Ended up getting a burger without a bun or cheese and just ate the burger with arugala and bacon. Oh, and sweet potato fries! Their sweet potato fries were made with care as they were outstanding. I had them one other time at the hotel, and twice at other area restaurants. Highly recommend giving this place a try. Try one of the Local Favorites for breakfast, you won't regret it. Not only does this restaurant live inside the hotel, it also has hotel prices. That doesn't mean that the $14 burger isn't good. It's actually good. The service is always spot on and the service is great! Here's the rub: After food prices there is a hotel tax added to your experience. It's about 24% when combined with the usual 8.5% Aurora tax. If you're there for a convention like GenghisCon you're better off eating at the grab and go in the main gaming hallway. read more

This restaurant is located in the Hyatt Regency (a very nice new hotel). I was there for a 3-day business trip and decided to give the restaurant a try. The atmosphere is very open and actually quite noisy. This was fun but don't expect to get any work done if there on business. The bar is considerably small for the size of the hotel and each night several groups were turned away and required to sit in the restaurant instead (not as much fun). The first night I was able to secure a seat at the bar and was greeted immediately. I order my martini and the Sicilian Risotto with Pancetta, Calabrian chile, mushrooms, fava beans, Pecorino Romano. The drink was very good but the Risotto was excellent. It was cooked perfectly! Overall I had a great experience the first night. The second night I was also able to secure a seat at the bar and was greeted immediately. The Risotto was so good and I was unsure if and when I may ever get a chance to come back, I order the Risotto again. To my disappointment, it was not good at all. Very under cooked and too many mushrooms. Also was a little sticky and dry. There are many good things about the places. The hotel is very nice and the staff for the hotel, bar and restaurant are very good and friendly. The kitchen is were the issue lies. It could be that it is fairly new and they have not gotten into a consistent process which too bad because the chef nailed the Risotto the first night. One of the best I have had. I would say if you are staying at the hotel and don't want to go into downtown Denver or deal with a chain, give it a try. I am hopeful they have improved their consistency on quality. read more

It is the only "high end" restaurant for few miles around, but can venture into seedier areas for large variety of ethnic, mostly Mexican, food. The space is nice, clean and modern. Staff extremely attentative. I had lamb rack with cesar salad side. Cesar salad pretty god - nothing extraordinary. Bit disappointed with lamb. I rarely write reviews, but I was severely unimpressed with the timeliness of service and the quality of the food, especially for the price. I know hotel restaurants are often slow, but this was much worse than average. We were staying at the hotel for an event and tried the restaurant twice over the course of the long weekend. Thursday evening, we sat for dinner and fewer than half the tables were full, but service was still slow. It took a long time for our food to come out (almost 45 minutes), to the point that our children started fussing and I had to take our daughter upstairs. My husband then asked for the food to be boxed to go, which took another 15-20 minutes. The salad I got was very small for the price, with only very small amounts of the non-lettuce ingredients listed on the menu and the steak was gristly. We tried again for lunch Sunday afternoon, and only 2-3 other tables had anyone at them. It still took almost a half hour for the food to come out, they brought me the wrong burger and both mine and my husband's burgers were woefully undercooked (to the point we could not finish them, but didn't ask for replacements because we didn't have time). read more

I had a very disappointing plate of the local eggs benedict that had very dry meat. It seemed like the meat wasn't fresh or grilled at the time when my order was taken. A co-worker and I decided to try this restaurant which is inside the Hyatt Regency and only been open for a couple of weeks. There was nobody in the restaurant just us, so it was nice and quiet. I don't think people know about it yet. She had the American hamburger and I had the cosmo hamburger. The cosmo hamburger had Brie and red pepper jelly on it and arugula. It was delicious if a little greasy from the hamburger and Brie. It came with a choice of Rosemary french fries sweet potato fries or potato salad. We both got the Rosemary french fries and they were amazing. The service was excellent. Anytime my water glass got halfway through there was somebody there to fill it up. Awful awful awful. Terrible wait time to have my order taken, passed over several times by staff before receiving water. I finally ordered and received a Brussels sprouts and peppers dish as an appetizer. The Brussels were burnt, not just crispy, burnt. Then I tasted one of the peppers that accompanied the Brussels and it burned my mouth. The acidity was not advertised, and I am a frequent user of hot sauce. The next day I had a burn on my tongue. The waitstaff did get me a milk after I requested it twice in order to calm it. After ten minutes I attempted to eat the bread or chicken fettuccini Alfredo I had ordered. The bread was also burnt and dry, and aggravated the burn further. The chicken fettuccine was simply awful. I did not realize how badly one can prepare this dish. The noodles were mush and over cooked, the sauce was almost curdled by the misappropriation of herbs and citrus. I could not finish it. I asked for the bill, refused a box, and was not once asked about the quality of the meal. Overall a waste of both time and tastebuds. read more

My wife and I have eaten here several times (breakfast, lunch and dinner) while visiting Children's Hospital right across the street. There's quite a dearth of restaurants in this area besides take out, and so visitors to Children's may be resigned to accepting fast food or hospital cafeteria meals. However, check out Borealis if you are looking for a creative menu, with high quality ingredients prepared expertly. The quality of the food here is up to par of what you'd get at bistros in Lodo and Downtown. read more
