    I ate at the restaurant tonight and it was packed!! The food was delicious but mostly I was amazed how only one server and one bartender were able to manage what seemed to be about 40 people. Service was excellent but without a busser there were dishes at the table I had wanted to sit at, management needs to make better arrangements to not stress out the staff who do want to work.

    This is the hotel restaurant in Hyatt regency aurora. It's bright, casual and decent. Service is better than ambiance but usually there's only one lady manning the place. So you gotta be patient. Food: the menu is super duper reasonable! I haven't seen such low/ cheap prices in eternity. Seattle is insanely expensive compared to Denver so there's that. But it is SO cheap! You can order an entire menu for only $100+ That's cheap!! Menu does changes though. First day, I had their pancakes, built your own omelette and avocado toast. Pancakes: with strawberries and whipped cream. Butter and maple syrup too but I don't touch those. It was nice and tasty. Built your own omelette: you can pick 4 out of about 8. Also 4 different presets like meat, veggies I believe. I went with veggies omelette with spinach, arugula, jalapeños and tomatoes. It was A ok. Avocado toast: the disappointment and disaster that is!! It came doused with so much balsamic: yuck! And sunflowers seeds. And a salad. I couldn't find find the toast! Like where was this toast?? Under the over fried egg which was under a pool of balsamic. This dish: I didn't touch it at all! Nor did I send it back. It was $15 I think. Avoid it at all cost. Next day: menu changed! Tried their French toast. Super duper dry, super duper sad French toast. It's missing eggs or creaminess or flavor. Just lacking! Decaf coffee: they couldn't brew it. Nor do they have it. How weird is that? Just say not enough people want it so I don't wanna brew it. Chamomile tea. Only non decaf tea they had. Tazo packs. Came with little honey jars. Can't go wrong much with that. Omelette second day: added onions, jalapeños, spinach and arugula. It was a ok. Also had a side of bacon: non crispy bacon! Meh. The $6 bacon is a ok. $2 fruit bowl though is crazy good!!!! Like get it! There are two , three ladies that work here. One is always long blonde hair, a little rude, seems very impatient.. at least with me. She talks and talks with other table that aren't a solo diner. So guess that's just her. There was another older lady: short hair. She's so sweet and nice. Also the younger brunette lady: if you get those 2 service will be great. Overall, it is a hotel restaurant. I appreciate the convenience , 6:30-10:30 am breakfast. Helps on the very cold days of Denver this week. A ok food.

    Just got home from a wonderful weekend getaway, which included enjoying several wonderful meals at Borealis! Located inside the Hyatt, the atmosphere was casual yet a bit upscale. Everything was very clean, and the wait staff was pleasant and helpful. Over two days, I enjoyed Asian tacos, a beet salad, roasted Brussels, avacado toast, salmon fritata, and grilled salmon. Aside from my salmon being slightly overcooked and dry, everything was perfection.

    The food was absolutely delicious, but the portions are small, so minus 1 star. The staff was very attentive and friendly. The ambiance is a hotel resto, so set your expectations accordingly. Will be back for sure.

    Borealis menu offers breakfast options like eggs, omelets, pancakes, and toasts, along with breakfast sandwiches and burritos.

    3/30/24-So this is what a hotel restaurant should be, and I haven'thad a good hotel restaurant experience in a long time. My experience started off on a bad foot. When I got there one waitress took my order and then 20 minutes later another waitress came over to me asking if she could take my order. I told her that the other waitress had taken my order and she said she would go and check on it. She quickly came back and told me she didn't see my order in the system. She asked if I wanted her to put it in. I told her that I didn't have time to wait again since I had con panels to get to. She said that there was a quick dish she could put in for me that would only take a few minutes and she wouldn't charge me. I said OK. Then the other waitress showed back up and apologized saying she had gotten busy and forgot to put my order in. She also said she would bring me an orange juice as well. The staff showed that they were will to own their mistakes and try to make it right. Normally staff wouldn't do that, it was a show of good customer service. As to the food what I got in was average in taste, but was very beautifully presented.

    Recently went to an event and after a small group of us decided to get lunch at the restaurant in the hotel. I love the dining space! It's beautiful! I especially love the ambiance, lighting and color scheme. There are cute little nooks and seating areas. There is also lots of outdoor space and great patio dining set ups too. I enjoyed a Caesar salad with salmon. Everything was fresh and delicious. My fiends enjoyed the green chili soup, the burger, fries and sandwiches. The fries were a def must order extra crispy! Another bonus was the restaurant had great wait staff. Tigris was so kind, friendly and helpful with ordering. I'd def be back for a quick lunch!

    I feel like most hotel restaurants kind of just phone it in. They know they have a captive audience so they don't go above and beyond in the customer service department or make a menu very creative. This is not the case with Borealis. I really enjoyed the 2 meals I had here, and even if I wasn't staying at the hotel, I'd come here again for the food. Nesia, our server both times, was outstanding. Our drinks were never empty and she was so sweet, knowledgeable, and attentive. The hummus appetizer is big enough for a meal by itself. It's absolutely wonderful, served with vegetables and warm, toasty pita. My daughter and I split the 'Merica burger and it was juicy and delicious. Unfortunately, the side dish of macaroni salad it was served with was bland and boring. Breakfast at Borealis is a treat too. My waffle was one of the best I've ever had. I didn't see a side of eggs on the menu but they were more than happy to make me some.

    Had the opportunity to have a lunch meeting at Borealis, which is inside the Hyatt off of Colfax near the medical campus. The restaurant is located to the left of the main entrance. It is integrated into the hotel main lobby, so there is a nice open atmosphere. The service off the bat was excellent with a waiter greeting me right away and taking my drink order. My table ordered spinach artichoke dip with pita bread, which was an excellent appetizer. The menu is relatively healthy with a good selection of salads, meats, seafood, and burgers. I ordered the 'Mercia Burger with no cheese and a side of sweet potato fries. I was a little underwhelmed with the taste of the burger considering it was $12. The burger also came out lukewarm. The sweet potato fries were the highlight of the meal as they were crispy and full of flavor. It's a good spot for lunch meetings and interviews, but I would not recommend for casual dining.

    It took an hour to get these two $20 each to go salads. The order had to be corrected and sent back for chicken to be on both salads instead of just one. Someone walked out of the kitchen at some point not wearing a mask or any ppe, asking the bar tender if the orders were over and was sent back into the kitchen groaning. The salad dressing was pretty good which is important with a Caesar and the lettuce was fresh....but why is it considered fancy to make the customer chop their own lettuce? I've seen this a few other places and it's so frustrating. I know that times are tough because of Covid which is why I am giving two stars instead of one. This seems like a simple meal, we were extremely patient, and then to finally get to our hotel room over an hour later and open the boxes to this was just suuch a bummer.

The decor is 1950s memorabilia with chrome touches and leather wrapped seating. It's everything you would think a diner would be but the food is so much more. They have a full bar as well as dairy treats, including shakes and malts. They also have breakfast all day and love their pancakes. They also serve barbecue. But I went for the patty melt. And my other half went for breakfast. His breakfast was the mountain man breakfast and was full of meats, eggs hashbrowns, and Ken with pancakes, but he opted for English buffet instead. It also came with a side of toast. It was a very ample breakfast. My patty melt sure did hit the spot. It was a perfectly medium cooked hamburger on rye with cheddar, and Swiss melted with grilled onions and thousand island dressing. Instead of fries, I went for the mashed potatoes and gravy. It was comfort food to the max. My date also got the peanut butter shake. He slurped that down in a hot minute. He said it was wonderful. He offered me a taste at least twice before I noticed it was gone. There's also meatloaf on the menu as well as a pulled pork barbecue Frito pie and they have a Frito pie burger. They also serve meatloaf. They have several classics and several twists. I recommend going there. There's something for everyone.

The restaurant is located inside the nice food hall, Stanley Marketplace in Aurora, CO. Parking is accessible all around the marketplace. The restaurant has fun vibrant modern decor. Plenty of booths and tables are available for dining in. A lively full bar with bar stools looks welcoming. There is a family friendly diner vibe going on which was great. Since it was about 4:00pm when we were seated unfortunately they were not serving anymore breakfast food which includes the Franklin Biscuit Sandwich. It ended up being a blessing in disguise though because it happened to be happy hour. We ended up ordering 2 Lights Out Burgers, Sully Fries, Kids chicken tenders, Old fashioned cocktail, and a glass of Chardonnay from the happy hour menu. We also ordered a big cinnamon roll to go. Everything was delicious. Our Lights Out Burgers were mouthwatering. The soft bun, huge juicy patty, melted cheese, pickles, onions were such a great concoction of bold flavors.
