    We came here for dinner before heading to our rental. I didn't realize the trophy room meant hunting trophies. That was a surprise. It was also a nice surprise that they had karaoke. There were some good singers there that night. We love French dips so we got that and the fry bread taco (half). The issue I had was I asked the server if both the red and green chilies had meat. It wasn't very clear on the menu so I asked. She said yes. So I went with green. It didn't come with meat which was disappointing. The service was few and far between that night so I couldn't even say anything to ask to have the meal fixed. Despite there being no meat it was tasty.

    We were just passing through Cortez and like to try all sorts of local places and figured this place looked good. It was Barely OK. I ordered a French dip and it was a mix of good and not. The meat was great, it had a great flavor to it although just a touch salty. The flavor of the meat was taken away with the American cheese. It was not a good combination. I feel like it needed a provolone or maybe Swiss to compliment the meat. The bread it came on and the au jus were great. The French fries were ok, very basic and standard. The service was not very good. We stood at the bar for a long time not being acknowledge (all someone has to do is say "one second") then after being seated it took a while till they took our order. Only came by after that to drop off food, then barely came by and didn't really ask how things were or if we needed anything. The atmosphere was good though. They had karaoke night going and that seemed fun.

    The $5 Jalapeño burger turned out to be a 1/4 pounder with one cold Jalapeño. But the sweet potato fries were amazing!

    Quite disappointing, but not the worse we have had. Only three beers on tap, and not even a local IPA. But it's a burger bar, not a brew pub. The queso looked strange but was actually pretty good. We were told that all the $11 burgers were $5, but what they didn't say was that the $5 burgers were 1/4 pounders, not the 1/2 pounders on the menu. Didn't eat my burger as it was cold, as was the single jalapeño "topping" it. But the sweet potato fries were amazing. A little cold, but delish anyway. Not a place we would ever go back to, but the fries and queso get it 3 stars. Oh, if you don't like dead animals, avoid this place. They are serious when they call it a "Trophy Room"!

    Good to have some drinks. I'd say over feels like a home bar for locals and the It place. In Monday's they have Tricia night. Food wasn't bad but definitely bar type food.

    Great food they have a good menu and also breakfast on the weekend. They don't have tonic so beware.

    After hiking and driving through Mesa Verde, we were starving and started looking for food…read more Gustavo's had by far the most interesting menu out of all the Mexican places in Cortez and we decided to stop by for an early dinner. Chips & Salsa (Complimentary) - The chips are served warm with a small tinge of oil sheen. Very even in thickness. I think these are commercial chips, but the menu states they have homemade corn tortillas, so maybe they fry the leftover ones into chips? The salsa is nice and refreshing with just a hint of spice. A good start to the meal. Horchata ($5) - This drink actually isn't on the menu, but I noticed it available in Gustavo's online ordering system. I asked the waiter if they had horchata and they did! I happened to be sitting at the table right next to the fridge and I saw the waiter remove an unlabeled plastic jug filled with white liquid and fill up my cup. I guess this must be home made? Very nice rice flavor, sprinkled with cinnamon and spices on top. A lot of horchata I've had in the past have been almost cloyingly sweet, this one is not too sweet in comparison. It has a smooth texture that isn't too gritty and is generally delicious to drink. (5/5) Corn Salad ($8) - This is a very simple salad with cilantro, black beans, red bell peppers, and corn in a very, very tangy and vinegary dressing. They top it with a slice of red onion and some queso fresco (per the menu, although I thought it was dry and aged like a cojita, but I'm not expert) crumbles. There is a bit of liquid at the bottom, but it's easy to drain. The server gave us four griddled tortillas to make rolled tacos if desired. I found this to be a little too acidic for my tastes. (3/5) Two Chile Relleno Crispy ($17) - This dish comes with small ramekins of rice and beans, both perfectly seasoned. The rice is cooked until very tender and fluffy with diced carrots, tomato, peas, and corn. The beans are excellent - the best I've eaten in recent memory. They're super light like they've been whipped and have the fragrance of lard. The beans are perfectly seasoned, and while light in texture, are very heavy on the stomach. I swear, it must be like half lard.... The chile rellenos are very interesting. Instead of being battered and fried, these large maybe 6inch long green peppers (hatch, perhaps?) are wrapped in a dough square and deep fried. The square almost reminds me of an egg roll wrapper, except developing plenty of micro bubbles while being fried, lending a crisp when dry. The rellenos are stuffed with plenty of cheese, very stretchy, mild tasting, milky, and doused in a green chile sauce, which softens the wrapper. They pile lettuce and tomato on top, followed by a drizzle of sour cream, guacamole sauce and crumbled queso fresco. Overall the taste profile is very tangy and a bit spicy. Additional green salsa is provided in a squeeze bottle on the side, although I didn't use it as the dish is flavorful enough. (4/5) Gustavo's Mexican Restaurant & Bar was a very good choice for our dinner. We both left happy and full even though we didn't even order two entrees! I would revisit if I'm ever in Cortez again.
