Pollo al Chipotle with beans and rice.
    Nicholas S.

I ordered the pollo al chipotle and a side of guacamole. The guacamole was good, once you add some taijin it really came together. The pollo al chipotle was great. The chicken was still moist and the sauce over the dish was very tasty. The staff were attentive and the service was great.

Carne asada plate was amazing. Tender and flavorful. I recommend that and an enchilada to add to the plate!

Lunch today at Tequila's Mexican Restaurant in Cortez, Colorado was great. My husband had the Pollo Asado (Charbroiled chicken breast. Served with rice and whole beans) and said it was very good. I had the Camarones A La Crema (Jumbo shrimp cooked with mushrooms sautéed in a sour cream sauce) and it was delicious. Service was excellent as they kept filling our drinks and offered more chips and salsa. The atmosphere was nice too! Great lunch!

If I could give it 10 stars I would. Nothing beats Tequilas. The service is outstanding. The food is amazing. 99/100 times I get the carne asada with a side of tomatillo sauce. We stop every month when we go to town for our grocery run. When we travel and eat out, we compare everything to the Tequilas standard. Nothing compares.

Was passing through with my dog and craving Mexican food. Although the Taco Bell down the road would have been an easy option, I decided to take a chance on a local spot... and boy am I glad we did! For those of you visiting Mesa Verde, the patio is lovely with views of the hill and mostly covered so it was cooler than the day's heat. I had my dog so I wanted somewhere we could sit outside and the restaurant accommodated us. As the only patrons on the patio, I was able to close my eyes as I savored every bite without judgement. I'm a shrimp girlie and immediately was draw to the Tequila's special. Charcoal grilled shrimp in green sauce with tortillas and rice... as if the grilled shrimp wasn't enough, the rice was also topped with baby shrimps. I've just ordered fried icecream to go.. I think we can assume that I'll find a safe space to savor my dessert as I have no room in my body at this moment but felt the need to try it. Let's go ahead and give it a pre-emptive 10 out of 10.

Both ladies were excellent, fun and very very welcoming. Nicest people we have met thus far driving from Nevada. Always smiling, not hanging over you while you eat, and extremely polite. The food was absolutely incredible. Over a week traveling with numerous stops, La Casita De Cortez absolutely comes out on top easily. Homemade food with passion behind it and generous portions. Everything was cooked to perfection and tasted incredible. The drinks were also impeccable with a decent variety of margaritas and others. Stop here if you can and enjoy every second of it! They have a decent amount of tables inside. The vibes are so fun with good music and decor. The had Diet Coke and the brew was great!! For my meal, I got the shredded chicken flautas, and they were SO good. The chicken was juicy and flavorful. I also really liked their rice. My SIL got the carne asada, and that felt like the star of the show to me. Everyone at the table enjoyed their meal. My husband got the steak, and it came out a little underdone. They took it back and cooked it a little longer for him when he asked. If you're wanting red meat, I'd say to go for the carne asada instead of the steak. Overall, super great experience especially for a road trip meal. I'd go back for sure!!!

After hiking and driving through Mesa Verde, we were starving and started looking for food…read more Gustavo's had by far the most interesting menu out of all the Mexican places in Cortez and we decided to stop by for an early dinner. Chips & Salsa (Complimentary) - The chips are served warm with a small tinge of oil sheen. Very even in thickness. I think these are commercial chips, but the menu states they have homemade corn tortillas, so maybe they fry the leftover ones into chips? The salsa is nice and refreshing with just a hint of spice. A good start to the meal. Horchata ($5) - This drink actually isn't on the menu, but I noticed it available in Gustavo's online ordering system. I asked the waiter if they had horchata and they did! I happened to be sitting at the table right next to the fridge and I saw the waiter remove an unlabeled plastic jug filled with white liquid and fill up my cup. I guess this must be home made? Very nice rice flavor, sprinkled with cinnamon and spices on top. A lot of horchata I've had in the past have been almost cloyingly sweet, this one is not too sweet in comparison. It has a smooth texture that isn't too gritty and is generally delicious to drink. (5/5) Corn Salad ($8) - This is a very simple salad with cilantro, black beans, red bell peppers, and corn in a very, very tangy and vinegary dressing. They top it with a slice of red onion and some queso fresco (per the menu, although I thought it was dry and aged like a cojita, but I'm not expert) crumbles. There is a bit of liquid at the bottom, but it's easy to drain. The server gave us four griddled tortillas to make rolled tacos if desired. I found this to be a little too acidic for my tastes. (3/5) Two Chile Relleno Crispy ($17) - This dish comes with small ramekins of rice and beans, both perfectly seasoned. The rice is cooked until very tender and fluffy with diced carrots, tomato, peas, and corn. The beans are excellent - the best I've eaten in recent memory. They're super light like they've been whipped and have the fragrance of lard. The beans are perfectly seasoned, and while light in texture, are very heavy on the stomach. I swear, it must be like half lard.... The chile rellenos are very interesting. Instead of being battered and fried, these large maybe 6inch long green peppers (hatch, perhaps?) are wrapped in a dough square and deep fried. The square almost reminds me of an egg roll wrapper, except developing plenty of micro bubbles while being fried, lending a crisp when dry. The rellenos are stuffed with plenty of cheese, very stretchy, mild tasting, milky, and doused in a green chile sauce, which softens the wrapper. They pile lettuce and tomato on top, followed by a drizzle of sour cream, guacamole sauce and crumbled queso fresco. Overall the taste profile is very tangy and a bit spicy. Additional green salsa is provided in a squeeze bottle on the side, although I didn't use it as the dish is flavorful enough. (4/5) Gustavo's Mexican Restaurant & Bar was a very good choice for our dinner. We both left happy and full even though we didn't even order two entrees! I would revisit if I'm ever in Cortez again. Bathrooms - Two rooms in the back.

We walked in and were immediately greeted by one of the bartenders and told to sit wherever we liked. We found a nice booth off to the side of the bar area. Our server Patrick stopped by the booth and pointed us to the food menu in the chalkboard. We also had another server but I didn't catch her name. They were both very friendly and attentive. I ordered the special for the day. A green chili Rueben & fries. Wow, this sandwich was so delicious! What a creative combination of flavors. Even the slaw in the Rueben included the green chilis. The fries were hot and crispy. My husband ordered the spicy BBQ pulled pork tacos. He said the tacos were amazing and the flavors were off the charts. They were topped with a slaw and pickles. The side of "tortilla chips" had a dusting of a very flavorful spice. Not sure what it was but very tasty. Looking over the menu, this restaurant has some very creative dishes.
