    My second review, just can't get enough! This drink is perfection in a glass........Don't call me pretty=Strawberry Gin, white pepper syrup, lime and basil. Drinks made right, so lucky to have Blaylock's in our back yard!

    This is my favorite bar in Astoria. The decor and vibe are so inviting. The cocktails are outstanding. I ordered the Irish Maid and it absolutely blew my mind. It had so much more depth than I was anticipating. My group shared the Roasted Vegetable Board and the Charcuterie Board and were satisfied with both options. I think my favorite part about Blaylocks was the staff. These guys were great to be around. Very courteous while also being super laid back. We totally interrupted their prep hour by going in early to take some photos and they were very cool about it. Easily a five star experience.

    We came in as a party of 2 on Saturday night at 10:15 PM. It was crowded but not too loud, and we were able to be seated right away. We admired their wall of spirits behind their bar. It was tough to narrow down what to order, but their menu was organized well-they went by flavor and then you could find your spirit of choice based on what you are craving. I chose to go the spicy route, and I ended up getting the Bird of paradise cocktail, a tropical mezcal sensation with a smoky peppery rim. This was fruity without being too sweet. It even came with a dried fruit with tamarind powder that was delightful. We split a Pate Board between ourselves. Their homemade pickles went with pate so well. The pistachio/pepper/pork/hazelnut combo was amazing-this was the best pate we have ever tasted, and it was enjoyable with bread and crackers. We loved our time here. The service and ambiance were exceptional. I would come back for both the cocktails and the snacks!

    A Gentleman Never Tells...unless that's the name of the drink he ordered, which, in my case, I did. And if I didn't tell you about it, you'd never know how wonderful it was: a smooth, cherry-forward take on an Old Fashioned; you could call it a New Fashioned, if you're so inclined. Our late afternoon snack ended up being more of a dinner, considering the delicious, savory charcuterie and smoked salmon boards we ordered, as well as a plate of pickled vegetables. Our server, the lone bartender, hustled between filling our drink and snack orders, while juggling several others, somehow managing to get everything rolled out to each table in a startlingly short amount of time. Truly impressive, especially considering the absolutely ludicrous number of cocktails available on the menu; to be able to churn them out with such speed and accuracy implies a lot of knowledge and experience. Meats, cheeses, smoked salmon and a smoking hot wife, all together in a sultry, dimly-lit, well-stocked whiskey bar...what more can a guy ask for?! My only complaint about Blaylock is that it's located in Astoria, and not back home in Portland, meaning I won't be able to visit as frequently as I would like. A shame, because my wife and I both agree, this is the sort of place we would hang out on the regular.

    We visit Astoria at least once a year. Blaylocks is always on our list of must stop or was. They open at 4:00pm we always make sure we arrive a few minutes before they open. The place is tiny they fill up fast. I love everything about this dark mysterious and sexy lounge. The seating is comfy I love sitting on the velvet couch under the elk head. You have a bird's eye of the their excellent bourbon selection and people coming and going. It's also near the fireplace which puts out just the right amount of heat. On the day we visited Friday, the bartender was not friendly. My husband approached the bar to get a better look to see what bourbons he has not tried. He asked if he could see the George Dickel 17 year. The bartender was annoyed to be asked and pointed to the bottle which was way high up on the shelf too high to see. He then turned his back and ignored my husband. My husband sat back down and ordered the George Dickel 17 year, neat $31 a pour from our server even though the bartender gave him no insight as to his opinion. The place is tiny, we were early it's not as if he had a line at people waiting to be served. It was just rude behavior and off putting. My sister ordered a Highball and I ordered a Manhattan. Our drinks were served prompt by our server with a smile, he was very attentive. They were delicious and well balanced. They do have a small food menu we have not tried but will next visit. Maybe....if my husband gets over the rude bartender.

    Yes to more whiskey bars, especially since Albatross closed down. The cocktail list here is AMAZING. We tried four, and enjoyed them all, from the less sweet to the more dessert-ish. Didn't get a chance to try food this time around but looking forward to our return!

    If you find yourself in or around Astoria, this is where you should end up in the evening. From the whiskey, to the service, you will find what you need here. A large selection of flights, a number of delicious craft cocktails, a good about of delicious treat. You'll find what you're searching for here. This place gets busy, and for good reason! Stop buy and grab a drink or three. You won't regret it! Cheers.

    Our visit here was one of the highlights of our trip for sure. We popped in our last evening and enjoyed incredible cocktails and a fantastic cheese board. I enjoyed perusing their old world and new world whiskey cocktail lists and they certainly make it tough to pick just one. They also have a few other boards, include charcuterie and roasted veggie, so you could easily make a meal of it. Service was wonderful. The space compliments the menu with a dark + moody + classy vibe--just my style. The space is small, so consider calling to reserve a table, if possible. We were there about 6 pm mid-week, and most tables were already occupied or reserved. If we lived in Astoria, we would most certainly become regulars.

    Are y'all as excited as me that there's a cocktail lounge in Astoria? Blaylock is here to fulfill your spirit needs. It's a small lounge with tall ceilings. It's classy and has an intimate setting. I don't drink whiskey and I tell y'all this so you know it's not just a whiskey bar. I prefer gin and this bar did not disappoint. I picked a riff on a gin gimlet that allows you to choose an herb and either gin or vodka. This was a delicious and well balanced cocktail. All patrons are to wear a mask to enter. There's hand sanitizer when you enter. The staff wear masks. The safety of everyone is in the forefront at all times. I will for sure return and try another cocktail soon. I won't go alone again though. The seating for individuals is at the window, so your back is turned and you're looking outside. This is not the kind of lounge you want to be looking outside. There's a lot of character and it seems to be a place you'd want to enjoy the scenery. I'm looking forward to my next visit. Do yourself a favor and get in here.

    Wow is this place cool! It's like the owner said, "I have a clear view for my whiskey bar and I'm going to do it exactly to my vision or not at all. No compromises." The inside is quaint and comfortable. Even in the world of Covid, you are 6ft apart, but it still has this cool, exclusive feel, The inside of the bar is beautiful! As it's a small place, the liquor bottles are on multiple shelves so the person working needs to go on a ladder to get everything. The lighting and the decor feel like you're stepping into a Hemingway novel. The menu is extensive. There are no shortage of old school and new age mixed drinks. If you don't happen to like whiskey (hey no judgement) this place has you covered! My husband and I happen to like this obscure Irish whiskey that everyone kept recommending when we were in Ireland called Green Spot. This place had it. We got a New Fashioned and a Mint Julep. They were delicious and came in these fancy rocks glasses with glass straws and a metal toothpick. Again, everything felt like it had been executed to the nines. Absolutely flawless. For the service, it was one guy (we were guessing the owner) seating everyone, taking orders and making drinks. Be slightly patient as service isn't lighting quick. (Give the guy a break. How much can one person do?). That said, he's so fun to watch because he's amazing at what he does. The drinks are complex with so many components and he handles them with speed and grace - and delivers them with a smile. The place is on the smaller side, so even though the server was doing a lot, he got to us pretty quick. The end result, pure joy! Could not recommend this place more highly. We can't wait to come back.

    We stop at Blaylock's each time we're in Astoria. The service is great, the vibe so warm and inviting, and the drinks are amazing! It's the perfect place to relax and chat with an outstanding beverage and bite.

    This place was the spot to go to if you are looking for some whiskey after dinner or before. I was visiting Astoria the past weekend. This p;ace caught my attention. I was bar hoping and was asking the bartender where to go for some good drink. They said this place recently just open, so that mean I just have to go and try it out. It was pretty busy when I got there. We sat by the window, the menu is on the table already. So we took a look. The have a huge option for different kind of cocktail, and of course whiskey. I was looking at their whiskey flight page. Took us a while to decide what we are going to have. I got one of the whiskey forgot the one I got but it was good. My friend got a Special Manhattan, and as well as their cheese board! It is a great experiences going there. Great service as well. They introduce you what they have or any question require the flight or drink you prefer. If I ever stop by Astoria again, I will be back.

    Blaylock's sports a very cozy and friendly atmosphere with an impressive wall of whiskeys behind the bar. Their menu offers an extensive menu of craft libations of Blaylock's own creation as well as a selection of traditional cocktails of days gone by. An extensive menu means nothing if your drink is a skimpy portion for the price or made without care and perfection. This is not the case at Blaylock's. On our two visits all of our cocktails were crafted to perfection and were well portioned. Blaylock's is a real gem in Astoria.

    My only complaint is that I can't try everything! The vibe was cozy and quaint, the drinks were so good that I will be back tomorrow!

Kind of like the feeling of coming home. The place was packed -- just a testament to their very good food and excellent drinks -- there was even a couple sitting outside and they had a fire going. Wish I had taken that photo. It was a really beautiful moment. The place was decorated and felt very holiday festive with small bright lights reflecting off the tin ceiling. Excited to have a couple of days on holiday here. Stopped in to pick up their latest version of fudge because Christian the Baker keeps evolving the art of fudge making...and you don't want to miss an iteration. Using the owner's grandfather's recipe as the base, he makes some of the best fudge in Oregon. Tonight I was told he decided to explore a Mediterranean approach and added nutty sesame to the fudge. The sharp but soft chocolate is a perfect compliment to a delicious drink on a cold, cold night. While I was waiting for the fudge to be packaged to take back to the fireplace in my room, I spied their latest culinary endeavor sitting in jars on the counter... and actually started salivating. They are now serving Pickled eggs. Incredible. When was the last time you had a pickled egg? When done right, pickled eggs are among the most satisfying and clean bite of delicious ungrilled, ungreasy proteins in the world. And the lounge has decided to serve two different kinds, so we might've died and gone to heaven. If you love eggs of every kind, as I do, boiled eggs hold a special place because they are hearty and compact and completely whole. So when you add a spices and acid to that perfection...it emerges as "wow." The service was attentive and thoughtful always, and I was told they're open New Year's Eve until 9.

It was a big portion of shrimp cocktail with salsa on the bottom and these large sized blue chips. It was so good that we ate it quickly. Octopus skewers was a tad charred. Yet very delicious especially if you eat it with the pineapple together. Brings out the flavor of the pineapples quite well. We ordered the Pork Belly Tacos and Mole Shrimp Tacos which came in 3. I absolutely loved street tacos filled with good fresh ingredients. And both of these hot the spot. The pork belly was an absolute great flavor of the pork belly. The Shrimp was delicious. Cook perfectly and easy to devour quickly. DeFuego Nachos had Jalapenos. But wasn't listed. The nachos were delicious and it was quickly devoured. Wings came in 4 wings with garlic parmesan with carrots and celery and ranch on the platter. Heavily garlic on the wings yet very delicious. Half wedge salad was a surprise how much there is in the salad. A lot of fresh veggies there with cherry tomatoes and sliced radishes in it. I had a absolutely fun experience celebrating my birthday here. DeFuego had Happy Hour from 3pm to 6pm, seven days out of the week. Seems the Happy Hour here is very popular. I ordered 2 things and both came out wrong. Our waitress spoke very loudly and we could hear her having long personal conversations with people a couple tables away from us for 10+ minutes at a time, several times. While we waited for her, we ran out of water a few times and I had to ask for more. It was over an hour before our order was even taken. We did flag her down to order an appetizer, brussel sprouts with cheese on the side due to a dairy allergy, but... the sprouts came out with cheese on them. They corrected this fairly promptly, but then we sat for another 45 minutes before our order was actually taken. I ordered a steak as "somewhere between medium & medium well" and she correctly repeated my order back to me "medium/medium well." When the steak came out, it was WELL well done. Like, burnt. I wanted to send it back, but I didn't want to deal with the embarrassment or have to wait even longer for food. We were about an hour & 45 minutes into dinner by the time we got our food. I was so disappointed! I also wanted to get dessert to celebrate the occasion but the service was SO slow that we had to cancel our after-dinner plans. We ordered it anyway & requested the check promptly, giving up on our plans for the rest of the evening. We were only a party of 2, we arrived early for our reservation, & we watched several larger parties come and go while we waited for our order to even be taken. It was a Wednesday night and not overly busy, there were several empty tables, so I'm not sure what the hold up was. We were also seated at an odd table next to the kitchen with a small divider between us and the staff. It was noisy and I even heard 2 staff members exchange a joke about how someone else had left & said they'd never come back. They laughed about it. I wish I had the guts those people had to get up & leave! I've never once left less than a 20% tip and felt immense guilt not tipping well, but after experiencing the poor service then also hearing the staff blatantly acknowledge it & not care.... I was appalled. The Hilton bought the hotel attached to De Fuego and I'm shocked. This was a Monarch hotel before and I'd assume that the Hilton's standards would be higher but the service and quality here have tanked hopelessly low since the acquisition. I had a similar experience at The Underground before it closed. I've learned my lesson & won't come here for a special occasion again.
