Sint Maarten (Dutch) and St. Martin (French) share this beautiful island in the eastern Caribbean. There is great dining on this island, but this place is the best we have experienced on the island.
The dinner was an adventure for your taste buds with so many flavors that are perfectly orchestrated by their chef. The Escargot and Carpaccio were amazing starters! Butter and garlic the escargot was tender and flavorful. The Endive Salad with chunks of Blue Cheese and dressed with a vinaigrette was delightful. The wine parings with the Bordeaux Wines were on point.
The hits of the night were the main courses. We had three in our dinner party, so we all shared bites of these amazing entrées. The Filet was cooked perfectly, tender, flavorful with a mouthwatering mushroom brown sauce and mash potatoes side. The Duck was amazing! Perfectly cooked, with a citrus sauce, fresh vegetables and mushrooms on the side. They provided a side of potatoes au gratin that were to die for! The Duck was the best I've ever tasted! The Sea Bass was cooked beautifully with a very nice sauce, vegetables and potatoes.
The ambiance was very good, with multiple small AC units in the restaurant. In addition, they have outdoor seating in front of the restaurant. The dinner service was packed, given the holiday, but everything was timed well, with dishes coming out hot and fresh.
We finished the evening with a trio of desserts: the Crème Brûlée, the Hot Lava Cake, and the Profiteroles. All three were outstanding! The Crème Brûlée was perfect with a soft and silky custard under the hard sugar shell. The Lava Cake was moist with a hot flowing chocolate center and a side of chocolate sauce and vanilla ice cream with something similar to pop rocks on the ice cream to give the dessert a "pop" in your mouth.
The Profiteroles were mini ice cream sandwiches with ice cream wedged between puff pastries.
The Cappuccino paired well with these dishes. Traditional French ending was available with a cheese plate and a variety of cognacs and ports.
