Located in Madrid's Literary Quarter, Bistronomika is a cozy restaurant where fish is the main attraction. Chef Carlos del Portillo has an obsession with fish otherwise difficult to find in Spanish restaurants, and he knows how to bring the best out of each one. In all honesty this is probably the freshest fish I ever had!
Per the write up on Eater, he is pretty much the only man in town willing to go that extra mile to cook them with respect, skill and is so full of flavors. We ordered the red fish and the chef allows us to order just a half fish, and it is cooked to perfection with olive oil and finished off with an amazing sauce that brings out the flavors of the dish without overpowering it. The razor clams were also crazy good - cooked in a leek soup based white sauce with scallions and goes well with a bottle of Mersault.
The interior of the restaurant was minimalist and contemporary. We sat at the table overlooking the chef's open kitchen grill station and saw him butchering the whole fish with such skills and precision. We love everything we ordered and definitely a hidden gem! read more
