First of all, don't go here on your first date with a beautiful gal, unless she's a Texan with a big craving for a homemade barbecue. It's a sticky, messy and yummy lunch or dinner for BBQ lovers. Not a place to impress your date with good table manners. Go here with the mindset of an original neighborhood barbecue, including the trays for plates, plastic cutlery, kitchen rolls and even a window escape to the smoking area. The atmosphere breathes BBQ, so don't expect a traditional restaurant, nor the luxuries of it. But if it's really smoky BBQ ribs, chicken, sausages, pulled pork, brisket, coleslaw, burnt end beans and kick ass onion rings that you want, this is the place to go. I just finished half a rack of ribs and am sorry I didn't go for the full one. Not that it's small, but it's just too good. Meat falling of the bone with this nice smokey BBQ taste. I must say, I was pleased with the food at the Bison Bar. I'm from Texas, over here for a couple of years, and definitely miss BBQ. The brisket here was surprisingly tastey as was the sauce and sides. For an Irish place, they had the right idea. Have been twice now and had the brisket both times. Have also tried the sausage and pulled pork. The pork comes in a mustard based sauce, which isn't my style. The sausage wasn't great, but the brisket, onion rings, and potato salad were all excellent. There is a coll vibe at this place and it has saddles for seats in some areas. Although a little gimmicky, its a fun touch. Lots of whiskey too. read more

Very cosy & relaxed atmosphere and great food. Based on the hype, and the slick visuals of the website, I was expecting to walk into a very modern type of establishment, and walking into a room that looked very much like an old Dublin pub I at first wondered if I had come to the right place! The staff were very friendly and quick in organising a table during the busiest dinner time, and everything just kept getting better once the food arrived! I feel like there aren't enough pubs that serve top notch food in Dublin, so the BBQ here definately fills that void! Great for a chilled out mid-week after work hang out. We were a group so I ended up plate-jacking tasting from most things on the menu, and I have to say the pulled pork here is absolutely great. Now there are two schools here, the boiling and the smoking, and it's a hard call to list them in an order of preference, so I will refrain from comparing this with the Pitt Bro's one! I am not a fan of white cloth sit-with-your-back-straight type of establisments, so it's great to see that there are unsuspecting places like this where you can get such great food combined with a corner pub atmosphere! read more

Was here for the first time during the week and had thoroughly good time. Friendly, knowledgable bar staff directed me and my friends on what to look out when selecting quality whiskies, but the beer selection is fairly standard. The bar itself is really well finished with a nice cosy atmosphere, and a really cool smoking area. Have to say though, i'm not a fan of the saddle style bar stool's; wouldn't be an ideal seating arrangment for a first date! But that's just a minor blemish; will definitely be heading back there again. read more

Popped in here for one the other evening with a few friends. It's true... they do have saddles for bar stools - a nice novelty but not so sure if I could stay mounted up for more than one. What made our experience here was the staff. They were absolutely fantastic. They were happy to give advice, funny, and knowledgable. One of the bartenders was knowledgable and excited about whiskey. The other told us some quick funny stories. Both were refreshingly polite. They keep the beers decently cold. The draught selection isn't terrible, but don't go here to try a variety of beers. They have some good whiskeys which is nice. Ambience was good. The other patrons weren't obnoxious and were polite. People were chatting having a nice Sunday afternoon. The problem was the food. It's good food for drinking at least. If you need a fat fix, here you go. It just wasn't very good. Not very warm, not very moist, not very favorable. I honestly think it's frozen and reheated. However, it was satisfying to eat while relaxing with a few beers. read more

What can I say I have found my new home from home. Staff are so helpful food is great sides are a little on the small side but for what you pay it's good. Best pulled pork in town. Simple. Brother Hubbard serve more, but it's shredded, dry and spiced. Oxmantown comes close. But the pork at Bison is unfailingly unctuous, a real treat. Grab it in a bun to go, eat on the boardwalk. Watch out for junkies and seagulls. Ah, Dublin, I love ya'. read more

Still the best texas BBQ in Dublin. They've now opened up even more great food selections from classic slow cooked meats to fantastic burritos to the spiciest chicken wings in Dublin (just barely beats Porterhouse on spiciness but not on price). It can be a bit expensive but seriously great attention to detail on this makes it worth it. Great selection of manly cocktails too like old fashioned, whiskey sour and loads of specials. The food was AMAZING!! We were Leary about BBQ in Dublin, but the ribs fell off the bone and the brisket was flavorful and moist!! The BBQ sauce was thin; sweet with hints of honey. We loved the beans and the cole slaw was pretty good too. The potato salad was probably the weakest point in the meal. The fact that they have saddles to sit on is cute but not practical at all! I would probably suggest using those as decor not as actual furniture!!! The service was super friendly and attentive and the drinks were good. You have to go to the bar to order food and drink, but they will bring it to you, it's very basic paper napkins and plastic silverware but man is the food good!!! This place makes Aussie BBQ look like a McDonalds. I usually get the Beef Brisket and Pulled Pork combo with a side of onion rings and chips. I have never been let down by this place the meath is always succulent and tender and cook to perfection but the real surprise for me were the sauces, probably the nicest BBQ and mustard sauces I've ever tasted. If you haven't been, get on it. Staff are really nice and friendly great atmosphere in the place, quirky saddle seats and steel trays make this place a pleasure every time I eat here. read more

The food and the drinks are good, except for the baked beans side. It was awful, there wasn't any flavor at all... I'm not sure how they are baked beans at all. The portions are very small for the amount you pay. I would suggest if you are hungry and want a decent size meal, I would go else where. Really like this bar. It's a nicely layed out classic style boozer. Not sure if it is all original features or they just made it look that way but either way it feels authentic. They have a good selection of beers and whiskeys. But mostly I've been here for the texan bar b q. I always get the beef brisket. You also get a side, they're all really nice and even the bog standard fries come with a lovely tangy chipotle sauce. I've also had the main meal size for 12.99 which is a portion of meat and 2 sides. This is a substantial meal. All in all a carnivores dream and you can still hang around for pints and even venture upstairs to the Workmans if you don't want to leave. read more

Went here over the weekend on a recommendation from my cousin, I was glad I call in. The bar is a bit small but there is a good sized smoking area with another seating area behind. There is a good selection of beers and cocktails. The staff are friendly and the atmosphere is relaxed and fun. The décor and layout is a bit wacky but it all adds to the fun. It's your basic BBQ menu, ribs, pulled pork, brisket, half chicken and sausage. The meat is good, I'd like a bit more spice but it's tasty stuff. We had the pulled pork, brisket and chicken. 3 stars for the meat! The sides are really tasty we had the beans, onion rings and home made chips. 4 stars for the sides! It's a great spot for a beer and a BBQ hit, I'll call again soon. 4 stars overall for the food and staff! read more

This is the best BBQ in Dublin, nowhere else comes close, nowhere. I've had people recommend pitt bros and smokin bones...poor imitations. If it's your first time visiting, perhaps go for the tasting plate but on your return do yourself a favor and get the full rack, nothing compares to it. The bar décor is brilliant; somewhere between mock-'Oirish and mock 'Old West' without being terribly tacky. Good craic, for want of a less clichéd description of a pub. Having one of the best selections in the city, it's perfect to take visitors who are interested in whiskey. But not the uninitiated; it's not cheap if you're looking for a bar to spark your interest. Other higher end bars in Dublin have cheaper, albeit much more limited selections. If new to whiskey and after something interesting and Irish, head to any of the old landmarks and grab a Green Spot. You'll spend less, and have a less mesmerising menu to contend with. If, however, you're looking to try some interesting whiskey and branch out a bit, go for the Bison but watch the tab. The cocktails are a bit of a mugs game; my last visit last me a bit miffed at my less than Manhattan-ey Manhattan, and it's always a bit of a cop out to drink a pint in a whiskey bar. Be advised, if you're not careful or too timid to ask the bar man for a bit of guidance on something you haven't tried, you can end up dropping 8.75 on some rare old concoction not to your liking (be wary of anything peat filtered). Points lost for the pricing and less than enthralling whiskey based cocktails, points gained for selection and staff. If they became the first Dublin bar to produce a Manhattan of top quality that didn't require a small mortgage and dropped price of some the pot stills just a bit, 5 stars. read more

Popped into Bison Bar on a very short break from work as the guys recommended their pulled pork sandwich to keep me going for the night. Service was super quick, staff amazingly friendly and the sandwich was the best sandwich in the universe! I went back a few nights later to sit and have a proper meal. The pulled pork was so tender and juicy and the choices of sauces on the tables complimented it perfectly. I'm generally not a fan of fries but I would eat their's all day long! I am a whisk(e)y drinker. Always have been, always will be, and as I carry on in my whiskey career, I'm learning more and more about my own particular poison. Therefore, a whiskey bar in Dublin is a find that's just made for me. You can get other drinks, but really why would you when there's an extensive menu of better things. As the bar is very new, a lot of the stock on the list hasn't arrived yet; however there is still a great deal of choice. The price for a whiskey varies from about €5 to about €25 (yikes!) and it is attractively served in the correct glasses. The staff are utterly charming and know their stuff. What is also an interesting quirk about this bar is that the bar stools are actually horse saddles. (Don't wear a short skirt!) A (fake) bison's head takes over a good proportion of the main seating area. I patted him. There are also (fake?) stags' heads stcking out of the other walls. They are a little OTT, but I get the point. The smoking area is covered, heated and excellent, and the ladies loos are beautiful. Country music plays in the background, which I like, and it also wasn't loud enough to be distracting. I loved this place, and when they get their full stock of whiskey they'll get their last star from me. read more
