The Germans have the Black Forrest Cake, the French, the corquembouche and the Swiss, their rosti cakes. While the rest of the world may fawn over European sweets, my 2-year old niece only wants the cheese bibingka from Bibingkinitan. All within reason, the bibingka in this shop really is delicious. It's light and fluffy, comes with a creamy cheddar on top and biting into it always gives a harmonious taste of salt and sweet in the mouth. I've been coming here for years and yet whenever I see those little yellow treats on top of banana leaves, I still get warm and happy feelings inside.
Tips:
1. The best bibingka are the ones with the burnt edges on them.
2. Don't just get 1 piece! Get an entire box for your lola!
