Unfortunately, after visiting, my first thought was that this place might have opened a little too soon. When I went in April 2026, there were still construction materials around, and part of the restaurant didn't even feel fully finished yet. It gave the impression that they were still trying to get everything together while already serving customers. I always want to give new restaurants a fair chance because opening a new business is not easy, but the food itself also needed some work. I tried their bún bò Huế, and unfortunately, it was probably one of the weakest versions I've had in Orange County. The biggest issue was the lack of flavor. It honestly felt like I was eating noodles with water. I added a lot of mắm and other sauces hoping to bring the dish back to life, but even after trying to adjust it, it still didn't come together. The bún thịt nướng had a similar issue. The majority of the flavor came from the sweet fish sauce they provided on the side. Without that sauce, the dish was extremely bland. There are so many places around OC that serve this dish well, so this was a disappointing experience. If you're craving bún bò Huế, I would personally spend my money elsewhere. Places like Ngự Bình or even Fusion Corner on Beach Boulevard, which surprisingly has a good version, would be better options in my opinion. I do think Bun Bo 533 has room to improve. New restaurants need time to adjust, and hopefully they can revisit their recipes and bring more flavor into their dishes. However, considering the price wasn't especially cheap, I think there are better choices around Orange County for the same amount of money. The restaurant has potential, but between the unfinished space and the lack of flavor in the food, I wouldn't recommend it right now. Hopefully they can improve because Vietnamese food has so much room for great flavors, and I'd like to see them find their footing.

The broth is always consistent in being flavorful and filling. I know I can always count on Pho 54 for my quick fix. One thing to note is that they charge .25 cents for the to-go containers, but not usually a problem for me as I usually finish everything.
