Bread with a selection of butter. Far right us Brittany seaweed butter

Really enjoyable meal. They had a Nespresso menu which was 6 courses or so, each with a bit of cocoa/coffee even the mains. I am pescatarian so they had to do one substitution but that was outstanding itself. Nice vegetables, several fish items and all seemed to be local and fresh. I had the sommelier pair the wines with each was a great way to match the variety of courses but to be Monroe adventurous with selections , most Swiss than I would normally have been. It was not cheap , but hey, it's s Michelin star in Switzerland.

Check for Lunch Special + Earl Grey Tea

WOW. That's the end of my review. Just kidding. But really. That could sum up my entire experience. Bayview is located in the President Wilson Hotel, which is located next to the beautiful lake. The hotel itself is gorgeous, and the restaurant is just the same. The beginning of my experience was a little rocky and slightly uncomfortable, making me almost abandon what would be the best lunch I've ever had: I was promptly greeted at the host stand, and I told the man I had a reservation for 1, followed him to my table, and he asked me a good three times if I'd like him to take my coat. At least three servers asked me what I'd like to drink, but as I refused to pay 7 euros for water, I politely declined beverages for the longest time, until I realized that no one would take my food order until I ordered a beverage, and finally after the fourth time of being asked what I'd like to drink, ordered an Earl Grey tea (12CHF) I had originally come here for the special lunch menu, which is 68CHF for an amuse bouche, starter, plate, and dessert, but was shocked to see that the menu wasn't there. I asked the server and after showing the photo of the menu online, she told me it was only a Saturday special, which I was thoroughly confused about. She called her manager over, and it turned out that the first server had handed me the dinner menu instead of the lunch menu. From here, things got better. Food: Before ordering, I was presented with an amuse bouche - a savory madeline with foie gras, and... another item that I can't remember. Both were beautifully presented and was a nice introduction to the meal. Before the actual meal, a server came around with a basket of assorted breads to choose from. They also brought along a cart of butter, and she let me sample all four of them - Piment, Vanilla, Salted, and Regular butter. I tried the olive bread and the walnut bread, and the walnut bread was absolutely amazing. The butters were all magnificent as well. My favorite was the vanilla butter on the walnut bread, as they were both slightly sweet and complimented one another. MENU ITEMS: Amuse Bouche - Ice Cod Fish with gogi berry infused tapioca and fig. The fish was very light and thinly sliced - my favorite part was the tapioca! So amazing. Cream of Porcini & Chestnut Soup - with stuffed mushrooms and baked chestnut chips. Absolutely amazing. Creamy and robust flavors from the mushroom, and the contrast with the nutty chestnuts was amazing. I especially loved the chestnut chips that come on the side. Pike Souffle - with crispy colored cauliflower and a lobster bisque sauce. The menu stated that it would be a truffle sauce, and this dish was one of the main reasons I chose to dine here, so I was a little surprised when it turned out to be a lobster bisque, but it was absolutely amazing! Very seafood-y with both the sauce and the pike souffle itself, which by the way was so fluffy and airy. There was a creamed cauliflower mixture that was also a perfect way to balance the strong taste of the dish, and the roasted cauliflowers were also so good! Roasted Vanilla Foam Chocolate Dessert - with cacao nib ice cream, chocolate ganache, crunchy chocolate & cacao nib praline, and a bit of a tart lemon spread, accompanied by a cute little churro on the side. I will say it once more, but absolutely amazing! The cacao nibs gave the otherwise sweet dessert a bitter element, and I loved the crunch that came from the cacao nibs. I also fell in love with the tart lemon, which was surprising, given that I never like sour desserts. I was ready to be on my way after dessert when a server brought along a cart filled with chocolates, fruit candies, nougats, fudge, and cookies, and told me that this was the "dessert after dessert" I got all four types of dark chocolates, a salted caramel cookie, and a fruit roll-up per the server's recommendation. The chocolates were creamy and rich, the cookie was the perfect sweetness, and the fruit roll up was so good, I can see why the server recommended it! Overall, my lunch bill came out to be 78CHF (I thought it would be 80 because of the 68 meal and 12 ear grey, but I'm guessing because I only requested cream and no sugar, they took off some money? or forgot to charge me? Either way, it was a nice surprise). Considering how expensive Switzerland is, the price of this lunch was unbeatable in my opinion. The staff was absolutely amazing, especially the manager, who made my experience 10x better by going above and beyond. I'm so glad that I got to make Bayview my first fine dining experience.

    Selection of different butter

On our last night in Geneva, we decided to try the hotel restaurant, Bayview. There were no reservations available online, so I contacted the hotel concierge, who was able to secure us a table. We opted for the eight course chef's dinner with the wine pairing. All eight courses were delicious!! The wines were perfectly paired. The staff was very attentive, professional, and friendly. Easily the best dining experience we've had. Everything stood out, but a few things pleasantly surprised me...the spicy butter on the black olive bread...amazing. The truffle mashed potatoes disguised as a cappuccino....amazing. The ice cod...amazing. This place is not cheap, but there aren't many Michelin Star restaurants that are. Dinner for the two of us ran CHf 600 and it was worth every penny. I'd definitely go back.

A fantastic fine dining experience in Switzerland, at surprisingly reasonable prices for a lakeside Geneva location. While "only" awarded one Michelin star, I had a better experience here than at a number of more highly rated places. As you walk in, you enter an open and modern space with large windows. The awesomeness begins almost immediately, as bread is served. I wondered, "where's the butter?" Well to my surprise, a server came by with a trolley holding four different types of butter from Brittany. He'll describe each then use what looks like a fancy wire cheese slicing tool to serve a generous portion of whichever ones you want (we took some of each, of course). Wow they were amazing. Even the "plain" butter was delicious. There was one that seemed to have cacao in it (didn't remember the description), and it had a nice sweetness to it. My friend said she wouldn't mind using her spoon and eating it directly. We opted for the six-course tasting, which after an amuse-bouche came the first starter, duck foie gras, which included grapes, verjus and Jamaican berries. On the side was some lovely brioche. I'm not going to do it justice explaining all the ingredients, but they worked very well together and were a great combination of textures and flavors. The second starter was carpaccio of cod icefish with Voatsiperifery pepper, almonds coco and kiwi. The server poured a lemon olive oil at the table which added a nice acidity. Wow, this was also really good. With the six-course, you choose one of the mains, and we both opted for the saddle of venison with poached pear with hibiscus, coffee crumble, instead of the grilled turbot. The venison was absolutely delicious in every way, but still managed to get overshadowed by something not even listed on the menu. The course was accompanied by a potato "cappuccino," which was pureed potatoes and truffles, with cacao sprinkled on top. OMG this was one of the best potato courses I've ever, ever had. I could have eaten an entire bowl of this. Just amazing with the truffle flavor, the richness and texture. After a refreshing pre-dessert to cleanse the palate, the main dessert was a hazelnut praline with chestnut cream, passion fruit and matcha ice cream. Again it was a harmonious use of diverse ingredients to achieve a unified whole. But that's not the end. After dessert, another trolley will appear with an assortment of mignardises. There are dried fruit, chocolate, caramel etc options. I tried a few, and all were delicious! What a nice way to end the meal. The price for the six-course is CHF 130, which again for Geneva is reasonable. The wine pairing would have made it CHF 190. I opted to have the sommelier choose local wines, a white for the first courses, and then a red for the venison. The chardonnay was really good, with almost a buttery feel and hint of acidity. I didn't love the red as much, though it was perfectly suitable for the venison. Prices for each glass of wine were also reasonable. Service was very warm and professional throughout. It seems like there's about a 1:1 ration of servers to tables, so it always felt like there was the proper amount of attentiveness. The pacing of the courses was also perfect. It never felt like we were rushed, or waiting too long for the next course. Overall, an amazing experience, and I'm looking forward to a return visit. The only minor quibble I might have is, while the restaurant is facing the lake, there's a busy street in between and pedestrians are walking right next to the large windows. Not a huge deal, but I prefer feeling more privacy.

Since I'm always "game" for a new experience, I was happy to participate! I was a little nervous because when we arrived they had just opened and there was nobody there. However, I soon relaxed and felt right at home, because service was very friendly and encouraging, but with no pressure to try the game menu. I decided to be a little bold and went for the venison medallions. I even tried some of my colleague's wild boar pate, which was good. I started with a pumpkin chestnut soup which I really enjoyed. My venison was lovely as were the accompanying sides. There was a wide variety of side dishes in small portions and I appreciated that. I paired everything with a nice local beer and it was a very nice experience. The dessert menu is extensive and I went with an old standby, a chocolate mousse. It was absolutely incredible. Everything was fresh and delicious, service was outstanding and I could understand that by the time we left, there wasn't an empty seat in the place. Definitely recommend the experience here. It's more than just the food!

One of our favorites was beef with a foie gras top. We were really too full for dessert, but had to order when we saw them at a neighboring table. I especially loved the Floating Island!
