Outside Barb's BBQ (July 2026)
Alan G.

Wonderful BBQ place in Lockhart with terrific service and even better BBQ and sides. Came on a Saturday around 2:30 pm which was our mistake because they had sold out of several BBQ options, but we thoroughly enjoyed the chopped brisket -- smoky, juicy, well seasoned--along with a sausage which was also juicy, smoked just right and full of flavor. The sliced dill pickles were also excellent. Loved their potato salad which was creamy, just salty enough for our palate and had with a good balance of textures. The green spaghetti was a pleasant surprise too as the creamy poblano sauce had a hint of heat and could have been a meal in itself given how rich it tasted. Next time we visit, we will definitely come before they open on a Friday so that we can try everything!

To be fair it was 3.5* Brisket and ribs were good but the lamb chops were the star. Sides were good except the beans. The texture and flavor of the sausage was off. The chicken had rubbery skin and lacked flavor. If the line is short give it a try. I won't probably eat there again. The other issue was the inside dining area was very hot and uncomfortable.

Our second visit to Barbs B Q somehow topped the first--which we didn't think was possible. Waiting in line turned into part of the experience. We ended up chatting with other second-timers, all of us swapping favorites and hyping up the meats like regulars. Even though Chuck wasn't out front slicing this time, the crew absolutely crushed it--things were buzzing along smoothly and the quality didn't miss a beat. We arrived at 11:30am Sunday and we got to the counter at 12:06. While in line, we found a Yeti stocked with ice-cold Lone Stars for the 21+ crowd. When we arrived at the counter, and they handed us bite-sized brisket samples while we waited. One look at that glossy, glistening brisket told you everything--you knew it was going to be insanely juicy, and it delivered. The lamb chops were a standout this time--perfectly cooked with a flavorful herbed crust and paired with a mustard-based BBQ sauce that really set them apart. We also tried the "experimental" herbalicious sausage, and wow--it needs to become permanent. Packed with flavor and totally unique. Portions were generous (again), and we walked away with plenty of leftovers--which is never a bad thing when it tastes this good.

There has been a lot of hype around Texas BBQ for a while, and I've been fortunate enough to try many of the well-known spots. I've also seen the rise and fall of some old and new famous BBQ places, whether from quality dropping, prices increasing, portions shrinking, or places simply not living up to the hype. Lockhart has many original and famous Texas BBQ spots, but I have to say, Barbs B Q truly stands out. I wouldn't even compare it directly with other more traditional Texas BBQ places. Yes, it is that good. Maybe because it's located in Lockhart instead of somewhere like Austin, it doesn't feel overly hyped yet, which honestly might be a good thing. This humble little shop operates with very limited hours but offers exceptional quality food. They open at 11 AM, and I arrived around 10:30 AM, but there was already a line. That tells you everything: you need to get there early. They did start letting people in a little early, which was nice. Like many great BBQ places, even if they say they close at 3 PM, there's a good chance the meat will sell out much earlier. The owner and pitmaster was super friendly and passionate. Even with a long line, she still greeted customers and had a quick conversation with each person, which was honestly impressive. As for the BBQ itself, I tried the ribs, brisket, lamb chops, sausage, green spaghetti, and pudding. Everything was perfection. Yes, I'll say it again: pure perfection, even the bread. When it was my turn, it was hard to find seating, so I ended up bringing the food home, but it was still incredibly delicious. This is BBQ on an entirely different level. My suggestion: come try this place before it goes viral and becomes a huge hype spot. I really love and cherish small local businesses like this, and I hope they keep doing things their way even after more success comes their way.

Came from out of town, but worth the trip. The line was about 50 people strong ahead of us They offer free beer for customers standing in line and water. Which was very nice. I loved the ribs. My husband loved the brisket. I did not like the beans, but the potato salad was good. Cornbread was great, and the pudding was rich and delicious. Ohh loved at that green spaghetti.

Best BBQ I have ever had in my life, I don't think I can go back to eating regular bbq after this. The hype is real! My friend has been trying to take me here for years! We came on Sunday morning, arrived at about 11:30 am, and there was already a line around the corner. The line was moving slowly, but an employee was giving us live updates as the meats were being sold. Letting us know how much inventory was available. It's crazy how fast their meats sell! We were nervous when we heard they were almost sold out of the cuts we wanted to try, but luckily we were able to get everything we wanted. As we were ordering, I saw the owner herself cutting up the brisket and plating the trays. Working hard, and I love to see it! We got a great variety of meats and sides, so I will break em down for you -Lambchops: Delicious, very aromatic, cooked perfectly, not too fatty (employee suggested to eat this first) -Brisket: TENDERSISM gah, best briskey I have ever had -Ribs: Loved the sauce on this -Turkey: Good turkey, a lot of people were ordering turkey, and I see why -Jalapeno and cheese sausage: Omg, the cheese was oozing out, so yummy -Potato Salad: Solid, I liked it -Charro Beans: Black charro beans? I'm here for it. And they loaded the beans with weenies! love that GREEN SPAGHETTI: MY FAV YOU MUST TRY! It was creamy and delicious, not too spicy either -Cinnamon swirl bread: Nice change from your typical white bread, I liked it! It gives it an interesting twist -Pickles: They make their pickles in-house. If you are a pickle lover, ask for extra! They are delicious The inside is small but cute. Highly suggest getting here early if you want to get certain meats or find a seat. There are indoor and a couple of outdoor seats. The inside has really cool merch! I ended up buying a t-shirt. The staff is so friendly, oh my goodness, I felt like I was eating a friend's house. I love the energy, I love the food, I WILL BE BACK!

FML. Why didn't i make it here sooner? Literally kicking myself. Showed up on a cold Saturday and there was a small line; it took about 45 minutes to get through it. Worth the wait? That and more! I'd stand in that line again for the scrumptious meats and sides. Really unequalled. Ordered a nice spread of brisket, both moist and lean, pork ribs, turkey, sausage - both with and without chile, the incredible sides: potato salad and green spaghetti and for good measure, they threw in a chicken thigh for free. Now, we weren't going eat all that in one sitting so we also grabbed a few to-go boxes. I dont know where to begin as it's no hype. This is the real deal. Both briskets were juicy and melted in your mouth, with that salt and pepper bringing all the goodness out. The ribs were just stupidly mind-blowing; the last time I had ribs anywhere close to this good was like 15 years ago after LA Barbecue had just opened. The turkey was moist and so tender. The sausages, my god, how did they make these incredible treats? And the sides? Jesus F christ. Unparalleled! The green spaghetti and potato salad were to die for. And the staff? So friendly and approachable. If we get invaded by aliens who want to destroy our world for lack of culture, they will change their minds after eating here. There's reasons why Barbs B Q has won so many accolades, you just gotta try them yourself.

5 meats - brisket, sausage, ribs, turkey and chicken thigh along with green spaghetti and potato salad

Took a day trip to Austin from the Houston Area and decided to check Barbs BQ off the list due to their Texas Monthly and Bon Appetit Accolades. We weren't disappointed. We arrived about 10:15 on a Saturday morning and there was probably 25 people ahead of us in line. As other reviewers have mentioned, once they open at 11, the line moves relatively slowly. But the staff is so friendly throughout the entire experience, even before when they go over the menu, specials and helpful hints for the ordering process with the crowd waiting in line. It took us about 1 hour to make it up to the counter to order directly from the Pitmaster Chuck. She was extremely friendly and I was really impressed with how she carefully created our platter of smoked meats. She was purposeful in placing each cut of meat in certain spots and making the platter look like artwork. Never experienced that in a BBQ restaurant before. The restaurant is pretty small as far as seating goes and it was too brisk to try to sit outside. My wife and I happened to get our food when there was no place left to sit. The staff was very helpful though and they found us a comfortable place to be as a table that had been eating the entire hour we were in line was finally getting ready to leave. So, maybe a 3 minute wait for the table. Now we finally get to eat the food - We ordered moist brisket, ribs, herb sausage, turkey, and they had a special grilled and marinated chicken thigh available. Our sides were the signature green spaghetti and potato salad and we got a strawberry cheesecake cobbler for dessert. A bunch of food. The food was the star of the show. Great brisket, very tasty ribs and ribs aren't normally my favorite smoked meat. The lime zest they garnished the ribs with was unique, and a great addition. The turkey may have been the best smoked turkey I've ever had and I could have eaten a dozen of the chicken thigh special. The only meat I wouldn't get again was the sausage. This might be because my palate has changed because I'm rarely a fan of BBQ joint sausage these days. The green (poblano) spaghetti met did not disappoint and the potato salad was good if not the most memorable. But between the brisket, turkey, ribs, chicken thigh and the green spaghetti we definitely had us a 5 star BBQ meal. Great job Chuck and the team!!!

Barbs lives up to its accolades. Unique and creative dishes that compliment tried and true, traditional BBQ. The sides were as good as the main course. It's worth the wait, if there's a line. Delicious down to the bone. I cannot thank the owner enough. You provide the best service of any restaurant I've ever reviewed. We felt welcome, swept away by your signature flavors, and grateful that your food exists. You're one in a million!

I had read a lot about Barb's and welcomed the chance to try it during our Austin-area barbecue safari. A line started forming an hour before they opened, and although we were about 20th in line, the line crawled very slowly. It took an hour to get food. This is the one drawback to Barb's The food was delicious. We ordered: --Ribs: tender, moist, flavorful --Brisket: moist --Lamb chop: Perhaps the best lamb chop I've ever eaten. Seating in the restaurant is limited. Barb and her team were very friendly and helpful. Definitely one of the top 3 joints we visited on our barbecue safari.

I've been wanting to checkout Barb's for awhile so we stopped on the way to Corpus on Friday. It was less crowded than expected but probably because the bbqfest was two days later. We got there at 10:30 and were about 20 in the line. We got our food at 11:30 and got to briefly meet the owner Chuck as she was at the main/chopping location. Everyone was super friendly and welcoming before, during, and until we left. We decided to get the Tray for two to make it easy and because it was a good deal and included everything we wanted, plus some. Its 1/2 lb of each turkey, brisket, and pork ribs, with 2 sides and a dessert. We got the green spaghetti and upgraded to a bigger size and then the pork stew and the cobbler. The pork ribs, pork stew, and cobbler are spectacular. Brisket/turkey/green spaghetti are pretty good, in my opinion. The green spaghetti was actually really good leftover too, better than fresh. The only thing I didn't really care for was the sauce. Its sweet and I didn't care for the flavors either. It's in my top 10 and I'd like to come back and try the beef rib sometime when they have it.

Solid 4 from my experience on a Friday. Arrived at 10:30 (28th in line), set foot inside at 11:05 and took almost an hour to get my food. To be fair, lots of people were taking a ton of pics / video which slowed the line down. The BBQ is solid, I appreciate the cinnamon bread & green (Mom's) spaghetti, but I'm not sure if it's worth the drive from Austin + the wait when there are plenty of BBQ options nearby.

If there was one word I could use to sum up my experience at Barbs BQ it would be Peak. Peak as in I would climb to the peak of a mountain to get this food in my mouth again. But alas, it's just south of Austin and so close to my home in Houston it takes everything in me not to drive there every weekend! This restaurant has me in a chokehold and I think about its greatness every day since I've gone. There is parking located right outside of the restaurant which is near a bunch of little shops so I suggest you walking off your BQ when you're finished cause you're going to leave STUFFED. Wait was about 45 minutes but I'd wait even longer if I needed to. Come with friends so you don't feel guilty buying one of everything cause you gotta try it all. I cannot stress this enough how phenomenal this place is. The prices are not egregious and the flavors hit you like a train. The cherry on top is that it's woman owned by someone from Brownsville. Brisket 5/5- I am a super fan of fatty juicy brisket and this brisket ticks all my boxes. Pork ribs 5/5- I'm not a super fan of pork ribs but this just made me a believer. Cheese jalapeño sausage 5/5- I've never had sausage with this much cheese and flavor bursting from it in my life. I usually have one bite of sausage but this one kept me coming back for more and more. Lamb chops 5/5- Yes you read that correctly. Again, I am not a lamb fan as I find it to be too gamey but this one is not that at all. In fact, it's juicy, flavorful, and cooked to perfection! So juicy and tender you gotta try it. Turkey 4/5- You can see in the photo how flavorful this turkey is! Charro beans 5/5- I never in my days thought black beans would be good in charro beans but I couldn't be more wrong. They even got the weenies in there! Sooooo good do not skip this cause these are LOADED. Potato salad 3/5- I've simply had better potato salad. It's not bad at all but it's the most lack luster thing I had the whole meal. GREEN SPAGHETTI 10/5- Yes I realize it looks strange but trust me you're going to love it. Seeing this offered and finding out homegirl is from Brownsville made me feel something because my family has roots there. The spaghetti is green because of the poblanos used to make the sauce. This one is so creamy and spiced so well it's just perfection. As good as it can get. House made pickles 5/5 - They saw us running through these pickles and brought us more throughout the meal. It doesn't get better than this. If I could buy a jar I WOULD! If you want to experience peak, go to Barbs BQ.

Kreuz Market is one of my favorite places among their stiff competition in Lockhart. It was in the mid very hot afternoon and not a lot of vehicles parked. Not sure how the pit masters take it but they gathered my meat order of Half Chicken, Beef Brisket, Spare Ribs, and Hot Jalapeño Cheese Sausage together. The brisket was tough and cutting it so thick made it a challenge to chew. The pork chop was a bit tough as well and lacked smoke flavor. For the price you pay there are other BBQ places with more tender meat, more smoke flavor, and better flavor. The Mac and cheese was overcooked. Barbecue turkey is honestly an underrated concept and their turkey was juicy, soft, and would change any Thanksgiving meal to one for the history books. I was extremely disappointed in the slice of brisket though. It was extremely chewy like plastic. Decently seasoned but not tender at all. Probably a bit undercooked. I ordered: 1/2 pound of brisket and two pork ribs and small peach cobbler. There is nothing about the drive thru menu that didn't look like a regular menu...everything was available from the meats to the sides. The brisket was good in terms of flavor but wasn't as juicy or tender as I've had despite ordering the juicy/fatty option. The pork ribs were on point, very tender and falling off the bone. The sauce was not to my liking, which wasn't sweet or sour just tomato-y and otherwise blah, again not my favorite. Overall, the drive thru was awesome like any other drive thru and these guys do it well. The meats were wrapped in such a way so that if you had a long drive to home/hotel they would keep. The BBQ was good but considering this location is a stones throw for the Original Terry Black's...I feel there is room for improvement.

It's not often you come across a place where both the food AND the service leave such a lasting impression. This little hole-in-the-wall is absolutely worth visiting! Whether you're local or just passing through Lockhart, do yourself a favor and stop in. You won't be disappointed! We will DEFINITELY be back!
