Initially sharing with friends and family, the Connecticut resident started selling via popups and pickups in New York and Connecticut. You would think New York already had a good source of bagels, but after its first stand-alone location opened in 2021, momentum developed and other storefronts were initiated in New York, Massachusetts, and Connecticut. LOCATION: This Popup Bagels is located in a shopping plaza in suburban Newtown, Connecticut. CONCEPT: Compared to other bagel shops, Popup Bagels a limited number of bagel flavors (plain, salt, everything, poppy, sesame) and tubs of weekly-changing flavors of butter and cream cheese (such as martini cream cheese and lemon butter) in addition to those regularly available (such as scallion cream cheese). Sandwiches are not prepared for customers -- they are encouraged to "grip, rip, and dip" bagels into their chosen Schmear. ATMOSPHERE: The interior is crisply designed with a modern feel. SERVICE: From an investment perspective, the concept is brilliantly efficient. Limited hours (7-noon Wednesday and Thursday, 7-1 Friday, Saturday, and Sunday), limited choices, no sandwich/beverage prep, and online ordering encouraged, make the service efficient from both effort and material perspective. FOOD: Compared to other bagel shops the bagels are attractively packaged with open totes, inviting the aroma of the bagels to greet the customer. The exterior is covered by the topping, rather than sprinkled. The bagel is crisp and chewy on the exterior, but fluffy in the interior. In addition, tubs of smoked fish-based spreads are available. TIPS: The chain is expanding into Southern California. On Thursdays Schmear flavors change. The flavors are announced on Popup Bagels website. Although pre-orders are welcomed to ensure your pick, the online system does demand a minimum of a dozen are purchased. Ordering in person allows a three bagel minimum. The company recommends running water over the bagels, and placing in a preheated 350 degree oven for six minutes to crisp the exterior. Note the shop closes at noon on weekdays, 1 o'clock on weekends.

The bagels were warm, crispy on the outside and fluffy on the inside, and the scallion cream cheese "schmear" was tasty. I liked the rip and dip idea. We would put them in our top 5 in CT! This bagel looks like someone tried to hit it with cream cheese from thirty yards away. And mostly missed. When I sent this photo to a friend, their response was, "Wtf is that? Did you order a bagel with 1/3 cream cheese?" Indeed I did not. One year ago, this was not happening at Bagel Bros. of Shelton. My last few experiences, however, have seen a decrease in bagel size, bagel variety, and cream cheese. To be clear, I'd have been upset if I received this as a Depression-era ration. One star for the coffee, which was hot. Bagel Bros. crew: please head down the street and order a bagel and cream cheese from AM Bagel to see how the competition is packing their parking lot every single day. They spread the cream cheese on both sides with a generous portion as ALL other bagel shops do, and which, at an up charge of $2.34 per bagel in your shop, I hope you will, too. This was a great shop a year ago, but somewhere along the line it seems as if management has decided to squeeze the customer. I may try this spot again in a month or two (truly I used to frequent it), and if this is the quality I receive at that time, I will never return.

In truth, I didn't believe her, but i walk away from this experience as an Olmo diehard fan. Their bagels are absolutely brilliant. Tens, elevens even, across the board. I've truly never had anything like it. Their flavors are unique with a Zaatar and Cacio bagel; candidly, I was too much of a purist to try them this time around and opted for the safe yet mildly experimental Rosemary bagel. Stop everything you're doing. Book the flight. Try this. Its crust is crackly with a bubbly top, almost akin to that of high quality sourdoughs, yet the interior is plush with a quintessentially dense bagel crumb. God, there's no limit to the amount of praises I can sing about this. The flavors with the okonomiyaki are well balanced also with the sweet tangy bbq contrasting the luscious, creamy egg omelette. It's really REALLY hard to choose a favorite though as I tried their lox, okonomiyaki, white fish, and cinnamon raisin shmear, and all of them were excellent in their own right. The workers are also incredibly kind and accommodating, working fast to complete every order efficiently. Olmo's so good I had four of their bagels within a 24 hour period. Does it really get any better than this?

The new space is bright, welcoming, and much more accessible to people who may have never discovered this hidden gem before. While I wondered if something would be lost leaving that small neighborhood setting behind, it didn't take long to realize the opposite. The owners, the staff, and the loyal customers have all brought the same warmth and sense of family with them. It still feels like home. I'll admit, though, I was crushed when I learned that Taylor Ham didn't make the move to the new menu. If you read my older reviews, that's actually what brought me through their doors in the first place. It genuinely broke my heart. But loyalty goes both ways. I love this place, so instead of dwelling on what isn't there, I'm making my way through the menu looking for a new favorite. Today I tried the Jalapeño Whopper--bacon, grilled jalapeños, and cream cheese on an everything bagel. It was really good. I discovered that warm cream cheese just isn't my thing, but that's 100% on me, not the sandwich. I also ordered the Gootz: sausage, egg, provolone, sautéed mushrooms, and cherry peppers on a garlic bagel. Outstanding. I'd order that again without hesitation. I'm going to keep working my way through the menu in hopes of finding something that fills the Taylor Ham-sized hole in my heart. And even if I never do, I'll happily keep coming back for their outstanding bagels, incredible spreads, great food, and the feeling you get every time you walk through the door. And while their coffee service is a little different with the pots behind the counter, it's still fantastic. Some places serve breakfast. DeRocco's feels like home.
