Unfortunately, my review remains the same. I wanted to try this place again as I kept getting ads that they had a new menu specifically for Wednesday Happy Hour where any 3 dishes is $25. My husband and I decided to give this place another shot hoping the revamped menu addressed some of the suggestions in the reviews. We also invited some friends to join. Due to having a large group we were able to try a lot on the menu. We had the seared scallops, bad hat bang bang, cold sesame noodles, koji fried chicken wings, sticky pork ribs, shishito peppers, and coconut curry mussels. As for dumplings we tried the shitakiyaki, shrimp and bamboo, stuffed pepper, and braised lamb. Let me start with the good items. The seared scallops had the perfect sear on them, they were big and juicy, but sadly you only get 2. The wings were sweet/savory, fried perfectly, and still juicy. Plus the wings were a good size as well. The sticky pork ribs were super tender and fall right off the bone. The coconut curry mussels, you get sooo many! Plus its basically 2 appetizers since after you finish the mussels you can mix the curry with the bowl of rice. The shrimp and bamboo dumplings were tasty and paired perfectly with the yuzu sauce. Now for the bad. The cold sesame noodles had absolutely no flavor, we had to ask our waitress for soy sauce to put on them. The stuffed pepper dumplings literally tasted like a frozen pizza with too much tomato sauce, we had to send it back. The braised lamb bao's had no flavor and we had to drown it in the sauce provided. My rating stays the same because the name of the restaurant is Bad Hat Dumpling and I'm sorry but the dumplings are just mediocre. All of the bao's that look similar to soup dumplings, the skin is just too thick and dry. They need to change something with that recipe. I will wait again until there is another menu change and then give this place a shot. read more

We took a risk and went last night, Friday night, without a reservation. Not a great idea as they were completely booked with an hour wait. There was one seat at the bar so we had a couple drinks and then, lucky for us a seat opened up at the bar, just as our food came. Jay was such a great bartender/server. He made some mean cocktails and also had great suggestions for food. I had a fun lychee drink that was served in an actual peacock!! I think the drink of the evening was the asian margarita with the pepper on top, the Steven Segal. Very good! We will definitely be back and I wouldn't mind sitting at the bar again either. Jay really made us feel so welcome. For a first visit at a new restaurant that has only been open for about a a month, it makes a huge difference. The wings were awesome, and my husband loved the sticky pork ribs. The shiitake dumplings should not be missed. Nice to have this new restaurant in Marlboro! An Asian fusion joint at Marlboro that's open till way later than most suburban places? I'm in. Came here after a friend told me about how Bad Hat has been selling out since they opened and I had to check it out (also no Yelp page, so I had to take matters into my own hands). I managed to get an 8:30 reservation on Friday via Resy, 3 days after its opening. I did see a bunch of unclaimed tables, perhaps they're limiting full occupancy at the moment because they're just starting out. We were super hungry and started off with the Coconut Curry Mussels (star of the evening) and the Shitakiyaki dumplings (more gyoza style) before getting to drinks. The mussels broth is to die for and you're going to want to slurp it all up. The accompanying rice was undercooked (and so was the whole batch) and they graciously replaced it with the Paratha, which also went fabulously with the curry. The Paratha was very crispy compared to traditional roti canai but I loved it. For drinks, we got the Lion's Roar and Master & Commander. My drink (the Japanese whiskey one came in a wooden box and was very interesting in its concept, I'd rate it a 3.5/5) while the other one was definitely wrong on our part to order in December but nonetheless well executed. The cocktails all have fantastic names (Beatrix Kiddo was my second choice if I had to order one solely by its name). We also got the Grilled Prawn Supreme and a side of the Stir Fried Noodles - I think we shied away from the large plates because they're pricey and we weren't confident enough for our first time. I'd definitely try it the next time we come (which will be very soon). Both these dishes were exceptionally delicious - perfectly grilled juicy and tender prawns, while the noodles were comforting and a great portion for a side. Overall, I'd give this place a solid 4 but the mussels and prawn manage to push this to a 5. They're very new and I'm excited to see them thrive. read more

actually, really tastey. we all shared the rocknrolla drink which was SO. GOOD. & refreshing - definitely suggest. we shared a little of everything off the menu. the flavors did not disappoint ! i really enjoyed the stretched wok which has pork, peanuts, bamboo shoots, scallions, bean sprouts and more. the dumplings were really great also. the layout of the restaurant is deff the low point here - kind of like a narrow hallway for dining. i think they'll make improvements with this in time considering there was a moderate wait of ppl to get in! great news for them. we sampled the desserts & i really liked the truffles which i believe are infused with a type of liquor. read more

Bad Hat was a fun food experience! The drinks were very delicious; especially the olives in the martini. We ordered one each of all the dumplings, the Korean wings and a side of hibachi noodles. Everything was delicious. The service could have been better, but I understand they are just starting out, and that will come. After seeing a lot of hype on Instagram decided to go to Bad Hat for dinner. It shares the other half of the building with Fireside Grill and Bar. I will say the signage for Bad Hat is not great, you can hardly see it on the sign with Fireside - font is way too small. I had difficulty getting a reservation on Resy, but I think ultimately that is because there are not many tables inside. Once seated, we waited a bit for our server. While pleasant our server didn't have a great personality and did not know much about the menu. She didn't offer great insight into the menu. We ultimately decided on the Koji Fried Chicken Wings, Papa Chung's Grilled Short Ribs, Spicy Pork Dumplings, and Fried Rice. The wings were definitely spicy as was the dipping sauce for the dumplings. While the food had good flavor nothing wowed us. The short ribs were served similarly to PF Changs lettuce wraps. Overall, I think we will give it sometime for Bad Hat to iron out the kinks before trying again. read more

This is not your normal Asian fusion restaurant. Hidden away in Marlboro, this restaurant combines creative cocktails with an oriental flare with a menu which is both flavorful and creative taking new tacks on familiar favorites. Combining oriental seasoning with high class ingredients, the mix and match menu offers something that will please everyone from vegetarians to carnivores. The staff is friendly and helpful, leading the diner in their selection of what may seem familiar but are in fact quite different. Though prices add up to be somewhat high based on expectations of what oriental meals cost, the overall experience is well worth it. read more

2.5 starts would be a fairer rating. Not really sure what to say about this place. I have visited twice. First... the bar is a cool looking spot and the drinks are good. A little expensive, but good. The food.... some good, but mostly bad. I had mussels both times I was there. The first time - it was a knock-out. The second time - not so much. The sauce was too thick vs the first time, the rice was just plain white rice - it was flavored with a slight green color the first time and about 25% of the mussels were not open (which means they were dead). They sell various items called 'Bao'. However, none of them are actual Baos. Most of them are like a fry bread sliced in half - one was a dumpling that had a thick skin that was so dry it was inedible. Some of Baos were tasty (the General Bao - really a chicken slider with hot honey was great). The filing on the pork Bao was just gross while the lamb filing was great also. However - neither filling works with their respective 'bao'. The Bang Bang Shrimp were great - but not really bang bang shrimp. They were salt and pepper shrimp with a mild sauce to dip in. It was the best thing we had on the 2nd visit - but certainly not bang bang shrimp. Ribs were too soft for me and lacking in flavor. Usually Asian style ribs have that outer sweet bark. Spicy pork dumplings were so spicy - that I couldn't taste anything for a while afterwards. It is a shame - because before the spice hit - they flavor and texture was great. The only good dumpling I had was the shrimp and bamboo dumpling. The 2nd visit was on Wednesday when it is 3 dim sum plates for $25. The waiter told me that they expect each person to order 3 plates. That is crazy as it is too much food. We ordered 6 plates (and 1 order of dumplings) for 4 people and we didn't finish it all. 12 plates would be ridiculous. Overall - I don't think I am going to return there. Maybe if they last another year - I will give it a chance again. But both times I am there, it was pretty empty - so I don't expect it to last. read more

I agree with the other reviews that this is a very fun food experience! Both the food and the drinks are pretty good and overall it is just a fun vibe for the area. We had the scallops, mussels and noodles. All were very good - the scallops and mussels in particular were fantastic. Definitely an experience that you wouldn't get from anywhere else in the area. This was one of the best dining experiences I've had in quite some time. Our amazing server was Nina. She was attentive, warm and took care of us with such a great attitude and smile on her face. The apps we ordered were the spicy pork dumplings and the bang bang shrimp. Both were delicious...the bang bang shrimp's dipping sauce was slightly spicy but those pork dumpling def brought the heat. Sooo good but a little too spicy for my palette. We both got the entrees off the special menu which was a surf and turf (ribeye w/seared scallops topped with caviar). The steak and scallops were cooked to perfection. No complaints at all. So yummy. As far as the ambiance...it's perfect for a date night. Not too dark...not too bright. The music was amazing...some of the most unique mixes that give the perfect vibe. And the tables in the dining room we sat in...were spaced out good. I highly recommend others to give this place a try. It looks like they have specials most days of the week which is always nice. Also plenty of parking in their lot. The restaurant is on the smaller side so would def recommend reservations but I believe they'll accommodate walk ins also. read more

Went for the 1st time the place is a bit on the small side but that is only negative thing I can think of. You can see right into the kitchen as they are preparing food. the Koji wings and the pork dumplings had just the right amount of spice I also had a side dish of noodles that was hot and tasty. I had an excellent server named Sondra she was very attentive and did a great job she's also cute too be nice boys. Also had the cucumber drink which was very refreshing. My review has nothing to do with food, location, drinks or staff. It has to do with the actual inconsiderate way they've closed up this shop. You tell your staff days before Christmas that it was their last shift! Who does that? Corporate is who! People had reservations, bought gift cards and then crickets. ‍ Little do people know Fireside is next. It was a true d**k move. Pray your families never fall on hard times. Decided to come here on a Tuesday night for dinner with a small group of friends. We all automatically fell in love with the ambiance and decor. Overall a very fun, sophisticated, and welcoming atmosphere. Our server was very friendly and sociable and she was very attentive and knowledgeable of the menu. A couple of standouts for our apps were the wings, fried rice, and stir fried noodles. Everything was delicious and very flavorful. The duck entree was also cooked perfectly and it was fall off the bone delicious. Although all of our cocktails were delicious, the specialty cocktails are a bit pricy, but that is to be expected. Overall our experience as a whole is a hard 9/10. Would definitely recommend coming here anytime and we are looking forward to our next visit! read more

Just finished eating dinner at Bad Hat. I am so glad that I finally got to try this gem! Drinks - Lions Roar and Beatrix ..... both were quite tasty and very flavorful Service was incredible and attentive. You can tell this team wants to create a great experience for everyone that goes Appetizers - Wings and Ribs both were delicious and the ribs were fall off the bone tender ! We shared the duck entree and it was tender, flavorful and well prepared and I was a super fan of the baby bok choy We also had the spicy pork dumplings and the shrimp dumplings. The shrimp dumplings were my fave of the two although both were very tasty ! I highly recommend and can't wait to come back for my next round of sampling the menu and beverages. The decor and ambiance are memorable and will definitely have me looking forward to sharing this place with others ! read more

Drinks were awful to be honest tried 3 different drinks for the signature menu all were not balanced well and didn't taste good. Had 2 more drinks made off menu and they were not great either, no fresh fruit in cocktails. The best dish was the noodles plate Galbi JJin Noodles but it was also $34.00. I love an establishment who takes pride in their restaurant by serving quality food and drinks. I had a recent visit on Friday 4/19/24. Excellent service starting at the door greeted by the hostess. Food is good... bartenders and most servers on top of things. But they do lot answer phone. We've been 3-4x now and once for a special occasion. We noted on resi and two of us advised when we got there that we had a birthday celebration. Dessert was bright out with zero mention and they clearly knew our request. Not sure what the deal is but... Bartenders and some of the staff is top notch. The few other greeters seaters and what seemed to be management didn't seem to know what was up or the process. read more

Was looking forward to coming here this weekend and it did not disappoint. Cool vibe, smart concise menu, and strong service. We split sticky ribs and pork belly steamed buns for appetizers. Both were pretty amazing. For mains I got spicy pork dumplings and pork tamale bau and she got galbi jjin noodles. The dumplings were the best thing I ate, and although I probably wouldn't get the tamale blau next time, they were solid as written on the menu. Her noodle dish looked amazing and she loved it. Barely finished half of it. The drinks were solid. She got a special saki sangria that tastes great, albeit without a ton of alcoholic strength, and I stuck with what I always drink, but they were strong enough to catch a buzz off of two. Highly recommended if you enjoy Asian fusion flavors. They clearly know what they're doing in the kitchen and I wish them lots of luck. I'll be back, and relatively soon. read more

This was our second time at this place. The food & drinks are always amazing. The staff is always very helpful, always giving us ideas on what drinks & apps we should order, but on the evening of April 20th, 2024, they went above & beyond, with their service. I had lost a very valuable diamond ring & I decided to call the restaurant & make sure I didn't loose it there. The hostess answered my phone call & told me, she will check right away. Not even 5 minutes went by, she called us back & told us, she found the ring & will hold it for us, until we return to pick it up. Thank you so much for the honestly & service. Dining at Bad Hat Dumplings was a terrific experience! We sat and dined at the bar; to our surprise we were informed that there were happy hour priced drink and food specials from 5-7pm. One of the happy hour drink specials was half priced local beer made exclusively for Bad Hat by Source Brewing - their rice lager was light and delicious! We also ordered a cocktail called Beatrix (not on the happy hour menu). The blend of flavors and ingredients were amazing! For food, we ordered the chicken shishito dumplings, spicy pork dumplings, and shiitake mushroom dumplings off the happy hour priced menu ($10 all dumplings) which were all delicious! All dumplings were well cooked and were very satisfying, but the spicy pork dumplings were hands-down the best of the flavors! Beyond the dumplings, their food menu is extensive, which we plan to sample next time we visit Bad Hat. Our bar tender Adam was very friendly, attentive, and caring. The atmosphere of the restaurant was nicely decorated, classy, and chic- it felt like we were dining in Manhattan. Highly recommend Bad Hat Dumplings for an enjoyable evening out! read more

All I can say is wow! From the second we walked in the front door we were greeted like family by Liz. We were promptly seated and Edwin met us immediately to begin sharing insight into the best selections on menu and cocktail menu! It's so appreciated when it's so hard to choose from all of the delicious options! I ultimately chose the scallops and a side order of the noodles which both were fabulous and I was wishing for more! My husband ordered the ribs which were fall off the bone, cooked and seasoned to perfection. Managers Emily and Jason are OUTSTANDING in every aspect checking into our table to see if we needed anything as well as personally bringing food to our table. A high note is how they jump in to help their team as they are exceptionally busy-- which is to be expected with how excellent of service you are provided when seated and all throughout your dining experience! Stopped in after hearing about this place for awhile and let me tell you it lived up to the hype and more. Ordered the chicken wings, spicy pork dumplings, and the ribs. Let me tell you the meat was cooked to perfection, nice crisp bite with fall off the bone tender, something i cant wait to have again. The dumplings were a delight as well, a sneaky heat thats not overpowering and super flavorful. I'm already planning to go back with some more friends to try the noodles and some of the craft cocktails they have.
