It's easy to compare Aztec to Mother Earth Brewing, as they're both up in Vista, roughly the same scale, are cherished by locals (in North county), and have a similar vibe of being a mom-and-pop suds operation. Beer aside, our hero would venture to say that Aztec is pretty much the same as Mother Earth without the home brewing supplies shop and the hippie theme. Their in-house brewed beer selection runs a short range of 6 different styles, which are all somewhat subdued in taste. Aztec uses quite a variety of hops, but it's very subtle, even in their IPA. Their chipotle IPA is the strongest of their house beers at 6.6% ABV and 58 IBUs, which is fairly low for an IPA in San Diego county. After tasting all their beers, our hero would venture to say their agave wheat and red beers are probably the most drinkable. Even though reds are among our hero's least favorite beer styles (a few notches above fizzy yellow American lagers), he still thought Aztec's take on a red was palatable and smooth. Their chipotle IPA on the other hand, was a bit too off the beaten path for our hero's taste buds and didn't mesh the spicy and hoppy flavors well. Stone's green tea IPA is a nice unique IPA, whereas Aztec's chipotle IPA could use some tweaking. PROS: - They utilize quite a variety of ingredients to cover a very different selection of half a dozen different beers. - They have some interesting guest beers on tap, which are hard to find elsewhere in SD. - Good customer service. CONS: - Located fairly out of the way. - Their more experimental beers could use a bit more work. - Their beers taste fairly muted and subtle. It's more of a place for session beers and those new to beer tasting who dislike heavier beers. It's not much of a place for hardcore craft beer enthusiasts who are into stuff like barleywines and stronger beers. read more

I hate to rip on a small, "young" brewery but I know people who brew better beer at home than these guys. I found most of the beers lacking that full flavor I'm looking for and they came off too watery for me. It's sort of like having coffee that's made too weak. It just doesn't do it for me. However, there were a couple that hit the mark such as the Chipotle IPA and Bitter Brit. There is definitely potential and I love the fact they go out on a limb in their variety and they experiment a bit. The other issue was that there wasn't much character in the place. It's was Plain Jane, the customers were just too themselves, and it just lacked any sort of energy. The people working there were nice but didn't bring anything to the table. It would be nice to see some more personality, enthusiasm, something. I just didn't feel it. I hope this place grows into something better but I think there is a lot of work that needs to go into it both in the beer and in the place itself. read more

I have been coming here for roughly 2 years..so I'm pretty hip to the events now and tend to frequent the shows that bring top notch musicians. That is my draw, these guys are influencers of creating a community of music, something that San Diego has made unsustainable in North County- but Aztecs owners keep doing it, and it's amazing that I was able to bring my 5 and 6 year old and they totally respected the atmosphere. I celebrate this aspect of the brewery so much. About my favorite beers. Guava Fula-bula and hibiscus. I also sampled a concoction with cold brew coffee macaroons and chocolate nibs, so there's the potential artistic glass of goodness if you can imagine it. When I'm not sampling the goodness made from within, they provide tasty kombucha and sodas. And the pretzels deserve their own 5 star rating. Barkeepers are divine artists, John and Claudia bless everyone with cheerful vibes. Tristen I am so grateful you've taught me to be a better musician. And the cool staff are all super talented top notch artists in their own right. Then there's the brewmaster who's creativity and art to craft beer, brings this home away from home to another level. I am so happy to celebrate their anniversary shows, watch the stage evolve and bask in the glory when Claudia gets down on bass. This is a sacred place to me. This is a family place to me. I even feel safely kept when in the parking lot. Food services are oh so yummy. And my little family performs here often. Heck the last time I braved an open mic there was a local celebrity supporting his son's music. All walks of life recognize how this rose garden opens its petals to musicians blooming into their careers while professional award nominated bands play here as-well and simply enchant the patrons with their melodic perfumes. The people that come through here are part of the amazing garden that it is. Aztec you are the center of the vibrations that keep so many people blissful and safe. I appreciate your hard work. I appreciate the insight when you hand pick hosts, and appreciate the friendly beers and friendly reminders about responsible attendance. Aztec will always hold a special spot in my heart. My family and I have been going here for at least 2 years. When it first opened, the interior was a little stale and there was a scarce amount of seating. Aztec is now decorated with a Mexican style theme including their skull logo here and there and some little decorative Aztec/Mayan looking pieces. There's even a little shrine in one corner that has some sugar skull decorations. Now, there is a really good amount of seating but nonetheless I recommend coming early to claim your seat because this place can get PACKED! Our favorite night to go is Thursday nights, it's open mic night, Casa De Los Alambres caters and boy those are the best street tacos and Alambres plate you'll ever have for just 5 bucks. Don't come to open mic night expecting awesome bands though, sometimes the performers are great sometimes they are....iffy but it's all in good fun ;) the crowd is pretty low key, there are definitely the regulars but they're all friendly. The owners of Aztec are always walking around talking to everyone which is a great bonus, a huge reason why this brewery has been one of our family favorites. Oh and Aztec is dog friendly! And the wifi is free. The beer is awesome (chipotle all the way or the Hibiscus mmmm) purchase an Aztec glass and bring it back with every visit for a dollar off each beer. I've been to most of the breweries in North County but for some reason, the Aztec name and logo didn't appeal to me. It wasn't until I tried their Chipotle IPA at a restaurant that I decided I had to go to Aztec for a more extensive tasting. The Chipotle IPA that I fell in love with has since evolved from a spicy IPA to a more hoppier IPA. For me this was disappointing but I guess it fulfills their niche for a hoppy bear. All of the beers I had here were good. Many of them had unique flavors but their Amber and Blonde were more typical. The staff here is friendly and they have seating indoors to enjoy your brew (as with most Vista breweries). The seating and decor was very hodge podge (left over dining room table, random bar stools, etc.) and I think it that was more cohesive if could help with the branding of their labor. On the day of my visit they had a food vendor selling quesadillas and burritos. I like that the food vendor's tent butt up against the big garage door of the building so you could technically stay inside and order your food and pick it up. This is nice since you can't walk outside with your beer due to the Vista ordinances/liquor licensing laws. read more

I believe I wrote a review a few months back. This is kind of a follow up. Since first trying Aztec's Macaroon Nut Brown Ale, it quickly became one of my top 3 favorite beers! I live a distance away, so, lining up a time to get back to purchase some more was a logistics challenge. I did decide to just call before I headed out. I'm thinking it is an owner I spoke with, and he assured me they would be there the evening I had available. BUT, I told him my story, and he said, "You should just call me, I only live minutes away. I would have been there!" WHO DOES THAT IN TODAY'S world?!? Talk about sincere customer service! Now to today's review; I went down and bought what I could. They even threw in some "Sundae" glasses so I could try making a float. It has been a longtime dream of mine for someone to come up with a beer float. Look no more! THIS IS IT! Get to Aztec Brewery. Ok.. So I'm not a huge beer fan. I'm not into a hoppy dark or bitter beer. This was a really small brewery and I have to say... I was pleasantly surprised! I mean... Who woulda thunk that I would like an IPA! The Chipotle IPA was tasty and I really liked the Hibiscus wheat beer. $5.00 was pretty reasonable as well! Believe it or not, I had never heard of this brewery until I made this trip over there a few weeks ago.I went to check out the band Psydecar. My friend promotes the band and convinced me to come check them out. I thought we were lost heading into an industrial area and then I saw the sign. I'll admit at first I wasn't too sure what to expect. I walked in with a friend and took a seat next to what turned out to be a nice little couple who were regulars. This couple was super welcoming and gave recommendations of which beers to try. I started out taking their recommendation and tried the El Dorado. It was fresh and light, but i usually tend to drink IPA's, so I tried the Simrillo IPA. It was just my style. Delicious! I didn't eat but the folks next to me had a burger that looked pretty darn good. I think they were cooking outside. The place was small but not too small. Not fancy by any means but super comfortable and fun! The band was amazing! All in all I thought this brewery was a good place. I love beer and this place was awesome. I stopped in to try a couple beers and ended up sitting there for four hours. Upon looking for a brewery in which to try some local beer we found our way to Aztec. Like many of the Vista locations, it's in the middle of an industrial Park. When you walk in, you get a very relaxed feeling. A few high top tables, picnic tables, and lots of standing room with places to set your drink. While you're drinking your craft brew, they have pretzels and pork rinds (which I've found to be pretty yummy surprisingly) for you to snack on. I'm really bad about asking for names, but the bartender was delightful. We also had the opportunity to meet the owner. He seems like he is quiet, but once you get him going he's a wealth of knowledge about local breweries, beer, and San Diego in general. At Aztec, they have live music every couple of weeks, but also have other cool events. They do a Potluck Sunday every week, which I will need to attend very soon!! Keep it up, Aztec! I'll be back! Finally my fiancee and I were able to check out aztec brewery. Make sure you follow the signs as its in a big business park. Walked in and noticed that they have live bands that play. Live music while at a brewery.. Pretty cool. Bar seating, couches, tables and chairs. It had the living roomish feel to it..had a warm feeling. Full staff. No waiting when it came to getting a pour..they have a good selection of beers to choose from. Tabs are designated by a number. So when you keep a tab open you simply show then a cap with a number on it. Pretty simple. Flight of ANY 4 for $6. I really liked the sacrifice IPA. Had a some smooth caramel taste to it. The Hop serpent IIPA was my 2nd favorite. 103IBU. Good stuff. I had a taste of the macaroon on nitro. Very very smooth. Light. One of those chillin beers at a barbeque to enjoy. All the beers aztec has are tastey. Nothing bad about any of them They also have food trucks. Good stuff aztec. I'd definately come back. Keep up the good work. read more

I enjoy coming here every Thursday for the outstanding open mic night. A plethora of musicians come out, a few local musicians, some from more distant places. Usually there are 10-20 groups or solo acts; most of which are decent. Genres range from blues, rock, reggae, covers, originals, and sometimes hip hop and comedians. From experience, the beer is pretty good. Usually the ladies enjoy the hibiscus wheat, the Aztec red sacrifice is a favorite with most beer drinking people's, and they have some strong iipa's. Come check it out around 6 on any Thursday, you're bound to have fun and probably make new friends and/or jam buddies. read more

Stopped in for the first time to pick up two growlers of their macaroon nut brown to surprise my BF. He discovered this beer while we were at Oggi's enjoying dinner and he hasn't stopped dreaming about this beer. I didn't stay very long but the brewery is located in a commercial business area. I didn't spot it right away, you have to look for it. But once you find it you'll always remember how to find out. It's small but very cozy. I stopped in early Saturday night it wasn't packed and they didn't have any bands playing yet. It's a well kept brewery and they offered several beers. The staff was really nice and laid back. I am defiantly coming back with a group of friends. I think we'll have a great time here. I'll update my review when I have more time to take in the full experience. read more

We came to Aztec Brewery on a Saturday so they JUST opened. I saw they had $6 flights so I was hooked! We came in and ordered two flights. I'm a huge fan of sour beers so when I tried their limited Bruja Rubia & Bruja Rosa I was in love. Probably some of the best sours I've had. The brewery itself was a bit small, but very welcoming. The owner was very friendly and talked about how her and her husband opened up the brewery a couple years back. We were only visiting family in Vista, but when we come back, we are definitely visiting Aztec Brewery again! read more

We were thinking about heading home after two somewhat disappointing brewery visits in Vista (Mother Earth's main brewery, and Indian Joe Brewing) but decided to stick it out and try one more. We were glad we did! From the outside, Aztec Brewing is just another commercial space with an open garage door. There's not much signage. Inside, from the look there's also not much to tell you this place is different from a run-of-the-mill brewery: old tables, plastic folding chairs (albeit nice ones), nearly non-existent interior design and not much in the way of decoration. But then, once you start interacting with the owners, it begins to feel like a whole new world. First of all, they are kind and welcoming. Just chatting with them for a few minutes makes you feel like you are part of the family. They are eager to talk about beer, and they stop to check on you as you are enjoying their wares. I can't remember that happening at any other brewery in San Diego, certainly not when I was not sitting at the bar. And it wasn't just an insincere, pro-forma query, either: they were truly interested in honest feedback. That attitude may be one contributing factor in why they make such good beer, and why they've survived six years in business. The beer is not just good, it is very good, and they have a bouquet of ribbons on the wall to prove it: Three golds, two silvers and a bronze from a bunch of serious competitions, and across a wide range of styles, too. They were pouring 14 beers during our visit. Aztec is open seven days a week, and they host various kinds of crowd-pleasing events such as open mics on Thursdays, bands on Fridays and Saturdays, and vinyl records on Sundays. It's difficult to not give Aztec 5 stars, but I do have to differentiate between what I feel are great breweries and excellent breweries. I like the flavors they give their beers; they're definitely not Yet Another North County Brewery With A Bunch Of Really Hoppy IPAs. Lately they've had on tap a Chipotle IPA with, which is neither overwhelming on the IBU side nor on the chipotle side, and has just enough hoppy bitterness and just enough spiciness to make it a not-overwhelming regular go-to. The Coffee Blonde has just enough coffee flavor to make it actually have a welcome peppery taste; it's a fine alternative to one of my other limited-edition favorites, Ballast Point's Calm Before The Storm. They're perhaps one of the pioneers in the trend of A Brewery In A Business Park, meaning that the tasting room itself is nothing special -- a bar, some folding chairs, some tables, a sofa -- but the employees are; they're very welcoming, kind, and informative. It's a dog-friendly place and they don't seem to mind when I slide my pup a couple of pretzels from the big barrel of them. I'll be back. read more

What I drank? - El Dorado Coffee Blonde - Not bad. Interesting take on a blonde - Hibiscus Wheat Beer - Interesting. It has a very pleasant light taste that underlies the beer itself - Aztec Chipotle IPA - Really good. This is a spicy and tangy beer. I'm not a huge fan of IPA so, take that with a grain of salt. - Aztec Cacoa Chocolate Porter - Good. Very rich porter. - Noche de los Muertos - Too much going on with this one - Aztec Sacrifice - Really good. Got a growler of this bad boy - Cherry Ale - Pretty awful, but then again the bartender said it was gonna be flat cuz the cask got tapped a few days ago. How was the facility, was there a tour? Teeny tiny facility. No tour. It's at the end of the block just pass Indian Joe's brewery. In fact we were on our way here and mistakenly went to Indian Joe's. How was the staff? Amazing! They were super friendly and joked around with us. Probably one of my favorite breweries just purely on the interaction with the staff. We got to try a lot of samples on the house and got to hear about why they did what they did. If you are going to a micro-brewery, sometimes it's the people that run it that make it worthwhile. This is the case for Aztec. How sober were you? Pretty buzzed at this point. Final feelings? Aztec seems to use the theme of cocao or chocolate in a lot of their brews. This was a pleasant tiny brewery and a great way to end the night. I will definitely be back here. read more

I don't get the hype. I didn't like the beer that much. Nothing stood out to me. I didn't find the service to be anything out of the ordinary. The tasting room is stale and uncomfortable. The "regulars" at the bar were rude to "outsiders." We're huge beer drinkers. We've been to 50+ breweries all over the world, and we can't figure out why this place is so popular. read more

Out of all the breweries in north county this one gets five stars and here is why. Although my favorite local beer does not come from here, I always have a good selection. It really is a little hole in the wall in the back of a business park but when you walk into the main room it becomes a live with so cal culture. Most of the local bands I am friends with and love how this place is so supportive of them. They have been known to have local musical talents drop in and play too (slightly stoopid just showed recently) I love to go for the good times, good music, good vibes and good beer. Some friends and I went on a North County brewery tour; Aztec was our second stop, and this place really left a good impression on me. The people there were very friendly and knowledgeable, they had pretzels and snack mix around the room at various places to sit or stand while you drink, and they had some rockin' delicious home made tacos for FREE. Wow! Of course this is a brewery and you're here for the beer, right? Not to worry, they've got you covered. The prices are great -- $1.50 tasters, $2 half-pints, and $4 pints is tough to beat, and I believe they also do 4-taster flights for $5. I will say this: they aren't the most *complex* beers I had that night, but I think that's actually one of the things I enjoyed most about them. Each of Aztec's beers sets out to accomplish something specific, and they all do it without pretension or obfuscation. The flavors are strong, straightforward, and tasty. I tried several beers while we were there: The Chipotle IPA - It isn't spicy at all. However, the flavor of the chile itself comes in on the palate very distinctly as the floral bitterness from the hops starts to subside. One of my group thought that the flavors didn't mesh well, but I thought that the combination was very likeable, and I'm not even into IPA's. Noche de los Muertos - Black as night, this is a very good Imperial Stout with all the deep, roasty, coffee-like flavors you'd expect. Eclipse Chocolate Porter - Not *sweet*, exactly, but it gives a sort of illusion of sweetness with its dark chocolate flavors. Leaves a lingering flavor like cocoa powder on the finish. Very tasty. Agave Wheat - A little more bitter than I usually like, but then I'm a low-bitterness kind of guy. Despite that, it has a refreshing, crisp mouth feel and a distinctive, slightly sweet-vegetal flavor throughout that reminds one just a little bit of tequila. An ice cold one would be a godsend on a hot day. Probably my second favorite of their offerings. Hibiscus Wheat - My favorite of their beers and one of my favorites of our whole tour. This is a light, refreshing beer with an obvious floral imprint from the hibiscus. Low in bitterness, absolutely unique flavor, great beer. "Mole" - They make this one by mixing their Chipotle IPA and Chocolate Porter. Genius! My friend's favorite of the Aztec brews, it starts with hoppy bitterness on the nose which then subsides, leaving lingering cocoa and smokey chile flavors that mingle wonderfully. So... great, distinctive beers, delicious free food, friendly and knowledgeable staff, and they've even got a big TV if you wanna keep your eye on a game. I really can't imagine what else you could possibly want from a commercial brewery. read more

Worth a visit. Smallest area Brewery. Mexican style Lagers, and California Ales. The four (Noches, Bitter Brit, Chipotle IPA,Chocolate Porter) beers I sampled were of a light, crisp taste. They serve in plastic (unless you buy their pint glass). Their website has a cool SD Historical Society link of Aztec beer photos. In time, I hope they add Aztec Beer historical photo enlargements inside the brewery, to link with the revival of the historic brand. All the local breweries have something unique to offer. Such a very cool place. Came here to meet some friends from Temecula, and was pleasantly surprised by how much fun I had! Hidden in an industrial park this place was POPPIN! Open Mic night is such a blast. It is great to see so many different talented people have the courage to perform in an open setting like this. The venue is small but cozy. The beer is flowing and tasty. They have that little taqueritta stand that is cooking up some delicious bites. I really recommend if you are in the area to check this place out. I had the opportunity to see a 12 year old kid shred on the guitar for the first time in front of a crowd, so that alone was pretty cool. -1 star for being so far away from me and only having one bathroom! read more

Came here for happy hour last night, and had a great time! Yes, the industrial park location is random, but it gives it almost a speakeasy kind of feel. Which I like. You can bring your dog! Free tacos! How can you go wrong with that? Now on to important things, like the beer. I had the hibiscus beer, and it will definitely be a new favorite of mine! Full disclosure, I'm not a beer snob. I just like things that taste good. And this beer tastes awesome! I also tried the chocolate porter that my boyfriend got, and while I don't think I could drink a full cup, it was very smooth. Just beware, there is no air conditioning. So wear something cool, or wait for a nice cool day to go. Or just keep ordering cold beers! Wait a second, maybe that is their plan...genius! read more

I have been coming here the past 3 weeks for Open Mic night. My friends and I love the atmosphere, great beer and very friendly staff and fellow patrons. The selection is great, and I am especially fond of the Sacrifice IPA, El Dorado Gold, and the Chocolate Porter. The musicians that show up Thursday nights are very talented and play several different genres. It is all ages friendly amd you will even find some little shredders tearing it up on the guitar. Well Aztec, it was about time! I am ashamed to say that work less than a mile from your brewery and I had only gotten in here just a few weeks ago for the first time. And I am glad I did. Some friends and I stopped in early-ish on Saturday and it was a great choice. The staff was helpful and friendly, and even gave us a quick tour of the place and show'ed us what they are working on. It is nice to see what has gone into one of these hardworking crews and the product that they provide. I have since been back a few times, picked up a growler and have sampled many of the beers. I believe great people make great beer. I have been going to Aztec from the beginning. It is great to see a brewery that brews Mexico inspired beer. There tasting room is a must see, Aztec inspired ar everywhere!! Love all the designs on their bottles. I believe Aztec brewery is a beautiful combination of great Beer, Art and music. If nothing else, you should definitely come here for the hibiscus beer. It's amazing. Aztec Brewery is a new old brewery that seems not really to have any connection but a name to the old brewery (they even admitted that they dont actually have any of the old recipes). It's pretty intimate, but the beers I tasted were very enjoyable, and I'll definitely be on the lookout to drink some more hibiscus beer! read more

Easy to miss, as it's just one garage door in a row of them in the back of an industrial park. Fortunately, the signs make it easy to find and parking isn't far away (though not immediately in front). Aztec does not have a huge list, but boy, what they have they do right! This place is underrated, and it's probably the best small brewery in Vista. (Iron Fist draws the crowds, but for my money the quality at Aztec is much better.) They have some genuinely standout brews, and I will make a point of coming back here. My favorite, by far, was ABC's Noche de los Muertos. It's a 10% imperial stout, and they had both the regular and a bourbon-barrel aged variety on tap. Full, delicious, deadly. The wheats were decent: the Hibiscus was really interesting, and was better than the Agave, which had notes of banana. For IPA drinkers, the Chipotle IPA makes good use of the heat. And their Sacrifice is good, too. We were there on a Sunday afternoon and there was a local food truck parked outside that had set up a sushi bar right inside the tasting room. Fair prices for fancy spicy sushi rolls of various sorts. Just be careful if you use a tasting cup for soy sauce, it may look like a porter... :) Verdict: Go! read more
