The wine flight was reasonably priced with unique flavors. Our favorite was the chardonnay. The only thing i wish you could do is mix the red and white wines for a tasting. It was odd you could only do a flight of red or white wines. The charcuterie board had the perfect amount of meat, cheese, nuts and fruit for a small snack. Although there could have been more crackers with it. Overall this winery has the best views out of them all! Would highly recommend stopping here if you are in town.

The location was incredible, the views from the tasting room were breathtaking but the wines made the day - our tasting consisted of 8 recent releases, including a really great Chenin Blanc and their award-winning Reserve Malbec, among others. The ownership was on site, personable and working hard, alongside our incredible server / bartender Amy, who spent over an hour with us, sharing stories about each of the wines, their labels and Palisades history. We knew there were plenty of wineries, but since my wife like trying new things and I didn't know where she had gone in the past, I had her pick the place to go when we got in and she 'randomly' selected this one. We couldn't have been happier. They have plenty of places to sit outside, but we went to the upstairs patio that overlooks the vineyard. It was a great choice. It's very pleasant, the view is beautiful, it's covered (so you're not baking in the sun), and when the breeze rolls through, it's perfect. We were a little taken aback that we had to go "all the way" downstairs when we wanted more wine, but then realized that it's the 'winery atmosphere' (remember - first day in to Palisade). We absolutely loved sitting on the patio and having a couple glasses of wine. We spent the next day visiting a few other wineries, but after two others, we decided to go back to Carboy. Sat on the upstairs patio again and listened to the live music (with a couple glasses of wine). It was amazing. Carboy has an assorted selection of food that can be ordered. We didn't order any, but it looked amazing and the people around us that did order things seemed happy with it. The only thing that we commented on was that when there's live music, we would have loved to have had the option of a food truck. If that had been the case, we both agreed that we probably would have stayed and had dinner there (as it was, we decided to leave and get dinner from a restaurant). If you're in Palisade (and are visiting wineries), I highly recommend Carboy. Personally, I'd skip the tasting 'flight' and go straight for a glass of wine, but that's mostly because the tasting varies from white to red (and I'm not a big fan of whites).

The wines I picked were on cards which had descriptions of each one on the back. Each wine I tried was great - the gal in the smaller building out front and near the sitting area was very knowledgeable and friendly. There is ample seating and even reserved tables available if you're with a larger group. For a Saturday, it wasn't terribly busy and finding a spot to sit wasn't difficult. At the end, you tell the gal which wine was your favorite and they give you a wine glass charm that matches the one you picked, so cute and thoughtful! I also bought a bottle of my favorite and they offered to chill it before I left. Both the tasting and bottle were reasonably priced. There's also a trolley that stops by and takes people to different wineries - a perfect way to wine hop and not worry about transportation. Definitely recommend if you find yourself in Palisade.

For those of you unfamiliar with what a winery collective is all about, it's a "greatest hits" of vino, curated by the owners to give you a tasting experience from all over the region. Colorado Vintner's Collective is new(ish), but what they lack in tenure they make up for in quality wine. Two of the varietals on their tasting list are produced by their proprietors, while the other 3-4 are regional wineries. I did the full tasting and enjoyed a glass of their Animas Chardonnay. It's half oaked, half steel so you get some buttery notes but not a bucket of movie popcorn in your mouth. Compared to other, more crowded wineries in Palisade, this was a treat! There was plenty of seating, no wait time, and a very nice restroom available.
