In past years I would order an omelette with cheese and it came with a bland plain egg omelette folded in half and stuffed with cheese. Maybe an eggadilla (Huevadilla?) would be more of a correct description. Not sure if this technique is an American classic (sorry for slamming it), but I'd recommend to add the cheese to the eggs *before* frying the mixture.
