Let me tell you I found it. Los Chapines, is the place for some amazing Guatemalan food. I had an order of the revuelta pupusas, cheese and meat and beans. They were very authentic and good sized. They are served with a vinegar slaw and red sauce. I could have eating many more, they were just like my moms. Then I noticed that tamales were on the menu. I ordered a tamale con carne, pork tamale. Huge tamale with a nice sauce and veggies. Served with bread very traditional dish. Lights out the best tasting tamale that I have had in years. The restaurant is tucked back in the plaza next to a Dotties. Very unassuming location. They also have many other Latin favorites on the menu and a bakery! OMG, I hit the lottery. The waitress was very nice and friendly. They have about 6-8 tables on each side. If you want to leave a tip bring some cash they do take credit cards for your meal. I am going to come again to try many more authentic dishes!

The cashier was quite young - I'm bad with ages of kids - my gut says 10/12 but who knows, could have been 16 or older. I ordered a few items, and upon ordering asked how long the order would take (my husbands food already was done and he was eating so I was literally just curious) and she said, "whenever it's ready." LOL And then I asked if they offer any hot sauces or anything and she said "whatever it comes with." Okie dokie. About 20 minutes later i noticed the cart had a closed sign now so I came over to check in, and when I asked about the status of the order, same employee said "whenever your pager buzzes its ready." Obviously this is a family business and this individual is supporting the family business and probably working through a summer break - and I was literally just curious and in no hurry - I worry about her interactions with anyone more intrepid. Or perhaps the dismissive nature would shield them from being affected. Regardless - food was ok. Well cooked - but at least for me it really needed some kind of spice - like a hot sauce LOL

This is not the case of Sivar's.... I've been coming to this small hole in the wall, in a middle of a busy Central American mall, next to Super Mercado in Hillsboro and I am keeping it to my heart. There is this amazing strong woman who is an angel in the kitchen! I have been trying her pupusas since she opened her place.... amazingly delicious and honestly prepared, right there, in front of you. I have been drinking her Atol de Elote and I love it... no milk. Horchata is amazing, no milk, just rice cinnamon water sugar and morro fruit. I'm talking about Salvadoran horchata here, not the milk infused Mexican stuff. Please, don't get me wrong, the Mexican horchata is delicious but the milk, it kills me, especially the condensed milk. What else? Caldo de res, beef soup. Holly smokes! Do you want beef soup that you eat it with a spoon? No need to cut your beef with a knife, because the meat was so tender and deliciously blended. Her work team and her efforts are incredible; this is my secret spot when I want to eat like a human, no industrial food here!
