I asked them again, they said they use a pellet smoker, and I laughed. This is the first I've ever heard of a bbq restaurant using a pellet smoker. That certainly explains the lack of smoke flavor. But I've used pellet smokers. They still have more smoke flavor and better texture than the brisket served here. Whatever they are doing, it's terrible. I'm guessing they used an oven or slow cooker.
