They need to come up with a new name. Maybe Nonsmoker? I walked up to the counter, ordered the brisket, and paid for it. The guy makes a big show of looking at the receipt. No, I don't tip if there's no service. I don't tip if I'm standing when I order food. I don't tip someone for being a cashier. The food shows up 15 minutes later. Good coleslaw and good pickles. Below average mac and cheese. It seemed like the brisket was cooked in a slow cooker. The texture was way off, basically what you would expect from a slow cooker, and there was no smoke flavor. They asked me if I liked the meat and I asked them if it was smoked, which is how it's advertised. They said yes but really froze up when I asked them what kind of wood they use. I asked them again, they said they use a pellet smoker, and I laughed. This is the first I've ever heard of a bbq restaurant using a pellet smoker. That certainly explains the lack of smoke flavor. But I've used pellet smokers. They still have more smoke flavor and better texture than the brisket served here. Whatever they are doing, it's terrible. I'm guessing they used an oven or slow cooker. I'm also guessing the brisket wasn't particularly fresh because I started feeling sick within about an hour. read more
