This family-owned gem, run by Ailey & Mike, is tucked into the cobblestone marketplace at Lake Las Vegas -- and it's a must for pasta lovers. They specialize in fresh, handmade pastas and house-made sauces, including unique varieties you won't find in stores. We picked up Campanelle, Honey Squash Agnolotti, and Scarpinnocc (cheese-filled) -- all outstanding. Ailey suggested perfect sauce pairings and even labeled the bags with heating instructions, which was such a thoughtful touch. This is a take and bake or cook fresh pasta business located in the village behind the Hilton in Lake Las Vegas, the ambience is open, clean and fresh, and this is my second visit here because the first time every ingredient I bought was so incredibly fresh and delicious. The people that work there are so helpful and friendly, and are super knowledgeable about which of their made from scratch sauces will go best with their freshly made pastas. They have a wide variety of authentic Italian vinegar and oils as well and amazing cannellonis, they even have fresh squid ink spaghetti. I have had their spicy pasta sauce, as well as their fresh made beef and pork meatballs in red sauce. Everything is so incredibly fresh and flavorful. The delightful aroma wafting from the shop instantly caught our attention, so we decided to step inside for an oil and vinegar tasting. Chef Michael greeted us--he was both knowledgeable and kind. We initially left with a bottle of oil, a vinegar, and a hazelnut cannoli (which was absolutely delicious). We enjoyed it all so much that we came back to pick up fresh pasta, sauces, and cheese. Really great pasta! With the price of eggs, this was not unreasonable pricing at all, and the quality was quite impressive. The young lady was so nice and as a business owner of many businesses including three Italian restaurants in the past in California. My wife was Italian. She was a Rizzo and did quite well in the cooking department and being that I've been around numerous Italians. I'm sure you guys could do 100% better on your cannolis. I have faith and I will be back. But please don't make the peanut butter cannolis that's not authentic But just so you know we do love your kindness and keep up the hard work. read more

We were strolling the Village at Lake Las Vegas and had read about A&M Pasta Lab and decided to stop in. WOW - we were pleased with what we saw and after speaking with Ally and Chef Michael, it was time to pick out dinner! The selections were great and Chef helped us plan the meal. Chef Michael asked us a few questions about our preferences and when we advised we had not tried basil pesto before, he made a couple of suggestions. We started with the pesto sauce, then he recommended agnolotti (stuffed with butternut squash) and then the cavatelli (small pasta shells). He added some ricotta cheese and we were ready! Just to clarify, A&M Pasta Lab does not have cooked pastas available. They provide the sauces, pastas, sweets, juices, infused butters and accessories and you prepare the food at home. Chef Michael provides any information concerning the preparation and even writes the cooking time on each container - a real plus for us! OK - the inevitable question is WHY stop at A&M Pasta Lab to grab dinner? This is not the pasta you grabbed off a grocery aisle or pulled out to defrost! This pasta is fresh, made onsite and has a light flavor and allows the filling or sauce to really complement it. Plus when's the last time you had the chance to work with the actual Chef to build a fresh pasta meal? As noted on the pictures, our cooking time was very short and the outcome was excellent. Enjoying a glass of wine with the agnolotti (so sweet with the pesto & ricotta) while the cavatelli was cooking was so much fun and relaxing. The pesto was so fresh and went well with both pastas. The portions were perfect for the 2 of us and all this for $24.38. We would highly recommend visiting A&M and speak to Chef Michael about planning a dinner. We love his way of stating with the sauce and going from there. And his passion shows as he assists you. And we'll never buy that frozen or canned "stuff" again. I don't do reviews. But this place is so good I have to say something. Been here three different times and every time I have had an absolutely delicious meal. Tonight was cheese ravioli with their red meat sauce. And a half dozen meatballs. You can't get pasta this good unless it is homemade like these guys make. And the meatballs were possibly the best I have ever had. We were in Italy this spring and had some delicious food but none better than this. And the products on the shelves are for real also. Last time I was here and I bought a small bottle of balsamic vinegar. It makes me weep everything I have a little taste. Just can't say enough about this place. read more

I adore this place, mainly because it's so close to my work, so whenever I know that I'm on my own for cooking, I always go there and try out new flavors and new kinds of pasta that I've never even thought of before the owner is super friendly and will answer any questions about what type of sauce to pair with the pasta you were gonna get and what would make it taste even better he writes how long you need to cook it for the shop is super cute and always has some nice jazz music playing.
