My husband had the brisket philly for his entree; brisket is one of those meat cuts that is tricky to get right, as it easily gets too dry, but the cook absolutely perfected it. I had the smoked trout and greens bowl, which was no only delicious, but was also a feast for the eyes. I have never had trout prepared like this before, only salmon, and this dish was quite special.
