I've had a lot of kombucha in my day, all over the place in fact, including China! The historical origin of kombucha. But never have I ever experienced such a blend of this funky craft of fermented tea that captures the landscape from which the business is situated. Spruce? Blueberry? High bush cranberry? They find a way to make kombucha have a sense of place. The 203 team is kind, curious and represent a cultural hub in Palmer. Anthony and Bryan are the best of the Valley. The TLDR of this place I had heard around town was: hip space with OK kombucha. I'm happy to report that the space is, indeed, hip. Palmer is lucky to have such a cool hang-out spot! I am even happier to report that I thought the 'booch was more than just OK. I thought it was incredible. In fact, the flavor I got (Lemon Cayenne Ginger), may be one of the most flavorful beverages I've had...ever. The kick and the spice was high, just how I like it. I wanted more, I didn't want to leave. The acid of the lemon and the spice of the chile and ginger were all perfectly balanced against each other. It was incredible. A hip little spot to enjoy a cold kombucha or hot coffee. They host trivia nights and open mic nights frequently. They also have seasonal brews rotating in and out. The mulberry was absolutely incredible! But my favorite is a glass of rhubarb or pink lemonade and a book. read more

We came here twice during our brief stay in the Palmer area. This is such a cool place with delicious Kombucha. My personal favorite was the Pink Lemonade, while my husband's favorite the Maple Persimmon seasonal option. The staff was very friendly, and the location is great. After attending a Yelp event at the Kombucha place in Anchorage I was really excited to find this Kombucha place out in the valley! They only serve avocado toast as far as food is concerned, but there is a really amazing pizza place next door that you can walk to and bring the pizza over... definitely a win! The location is very hidden to me, not hidden like hard to find, but hidden as in I would have never known this place was here. Ample parking! They have plenty of outdoor seating, some with umbrellas and some picnic table style. They offer corn hole which you can set up on the side of the building. We sat outside, with our pizza, and all got a flight of there five kombuchas on tap. Super friendly service, a little hectic when we tried to pay at the end. This is a simple but quite active little place. The first time we came it was packed for trivia. The second time they had an open mic with an endless stream of great musicians. The staff are kind and friendly (and on the ball). The kombucha is neither too sweet not to bitter/tart with that vinegar flavor. They don't yet have nutrition facts but they said (when I asked) that each 8 ounce serving has 12 carbs/sugars (but dont quote me on that). They do have a limited food menu. I live in Anchorage so I don't usually come to 203 unless I'm out in Palmer for other reasons. But when I do make the trek, I love to stop in here! I love the earthy flavors that really set 203 apart from other Kombucha places. They ferment right up by the front so you get a good whiff right when you walk in. Super friendly and helpful people! We tried the samples at the Friday Fling in Palmer, bought a however of the beet, carrot and ginger and had to follow up with a trip to the storefront later that day. They were very generous with smokes, and even helped me make a custom blend that was perfect for my palate! There were even juices for those that prefer unfermented beverages. A friend recommended visiting Pennylane Boutique and I noticed 203 was nearby, so I stopped in first. I got five kombuchas and they were all awesome & not a one was too sweet. They varied in their colors and flavors across the rainbow and palate and were delicious. The avocado was also the perfect snack at the moment--with the surprise deliciousness of a warm swipe of tahini underneath and topped with balanced and flavorful spices. After shopping at Pennylane, I came back and bought a super cute faux cork to go cup and an oat latte which was super savory and toasty and as satisfying as the kombucha and toast. I've missed coffee shops so 203 completely hit the spot for me and scratched my millennial hipster itch. The kombuchery (is that a thing?) seems really clean, has an excellent vibe and solid customer service with happy employees. It's hard to find good kombucha on tap, but 203 Kombucha's Rooibos Rhubarb was top notch. We tried their other flavors, which were somewhat exotic, but we didn't really care for. Their sample sizes were pretty big, and we were able to try all of the flavors they had. The growlers and howlers were fairly priced, and their avocado toast is only $5.50. Talk about a great experience. As soon as you walk through the door you're greeted with a warm smile, good music, fresh coffee roasting, and an overall sense of welcoming. Staying true to the building's roots the interior decor is a mixture of garage and brewery mixed with an art gallery that is all family friendly. Been a customer for a few months and it seems every few weeks they're coming out with new and intriguing small batches, but be quick these small batches go fast. Even if you are new to kombucha the workers here take the time to let everyone know exactly what it is and what to expect from their flavors. With weekly events this new business is on the ups. 10/10 would recommend you stop in and have a pint.
